I wanted something different so I browned some chicken parts, added chicken broth, covered and simmered that down. Then I added lots of coarse ground black pepper, minced garlic, oregano, fresh chopped onions, green peppers, and celery.
I cooked this about 15 minutes more.
Then I added a small can of sliced mushrooms, and a regular can of diced tomatoes in juice. I thought about adding thyme and ginger, but changed my mind. (everything doesn't have to have an island flavor!)
So that's my protein and vegetables! Does anyone know what this is?
PS. Who needs rice?
