Holidays suck in one way....all the goodies that are made and passed around. They are difficult to pass up however I see one allergy in my life as a blessing in disguise. I'm intolerant to wheat. That takes out at least 75% of the foods and almost all the desserts at a potluck that I might be able to eat. The only problem with that is....if I choose to eat from the "buffet" and the maker of the dish can't remember if they put any flour in it, I get to either chance it or pass it. If I chance it, I may end up sick the next day so most times I choose to pass.
There is one exception. If my co-worker makes something that is okay for me to eat, I'll gladly eat it. Today my lovely co worker brought in stuff for pulled chicken tacos. Her pulled chicken taco meat is absolutely yummy and totally wheat/gluten free! I can make a bowl of pulled chicken with all the toppings I want like cheese, sour cream, onions, salsa, guacamole, cilantro, etc and actually eat it. That's kinda nice. :) Gotta stay away from the dessert table though....waaaaaay too much wheat there.
In other news, I'm so freakin tired from all the running around and baking for Christmas! I'm ready for it to be over but my 6 year old obviously doesn't want the same. LOL. Tomorrow morning I'll get up, watch my son open his presents, bake some red velvet cupcakes for a friend (maybe) and then get ready to go to work. Yes...I have to work on Christmas Day. After that though, I have THREE lovely luxurious days off to sleep! Good thing too, I need it.
Oh....and my coworkers LOVED the cookies I made them. They said they looked so pretty they didn't want to eat them. LOL.....they are all gone anyway.

I'm retaining water today evidenced by the fact that the scale was up 3 lbs and I've been to the bathroom nonstop today, lol. Otherwise phase 1 is going great. Tomorrow, however, is our annual "Cookie Fest". My sister and I get together every year and bake tons of cookies and other goodies for our coworkers. The list this year is gigantic - vanilla sugar cookies, gingerbread cookies, cake pops, white chocolate cranberry oatmeal cookies, monster cookies, coconut macaroons, chocolate fudge, peanut butter fudge, peppermint bark, key lime bark and then....just to help keep me away from all of that while still having a treat for myself I'm going to make Paleo Banana bread and Paleo Pumpkin bread. Sounds like a diabetic's nightmare right? I'll keep reminding myself of this while I'm baking. I'm not diabetic but it does run in my family.
I don't know that I'll have any energy to eat any of it by the time we are done and that's probably a good thing but I have planned a cheat day for this. It's straight back to Phase 1 after tomorrow for me. I'll be on Phase 1 for at least a month due to the amount of weight I need to lose but even after that, I've done SBD before and I know that my body will only tolerate a slight increase in foods....mostly berries, sweet potatoes, small amounts of brown rice, small amounts of oatmeal, SF jello pudding, etc. So the majority of my days, I think, will remain phase 1.
A few weeks ago, I was diagnosed with asthma by my allergy and immunology dr....along with many allergies. Mostly the asthma doesn't bother me except when I get sick. I've had a cough since the last time I was sick and the inhaler that was prescribed to me has all but gotten rid of it. I'm hoping that I'll be able to add in exercise soon. I'm also supposed to start allergy shots here shortly. Hopefully that will be VERY soon. I'm ready to not have so many sinus infections.
All in all, I feel much healthier on the South Beach Diet then when I am not on it. I hope I remember this exact statement when I hit a plateau!

So far so good! I'm eating what I should be eating, not eating what I shouldn't be eating. I had a migraine on Friday though I think it was from allergies...not SBD. My mom is doing this with me so I do have a buddy, lol.
