There is something about wedding cakes...

That I just love. It's like they are this piece of dessert which is delicious (most of the time lol) and it's also this piece of art that was so delicately made. Maybe it's just me cuz' I make them, but I find them so, beautiful! I love that show Ace of cakes, but most of the time I don't like their cakes. If it's a tiered cake, love it. If its a monkey playing a piano while roller blading...I don't. It's like for me a wedding cake is round or square and looks like a cake. Just weird me. I guess I am more traditional. ANyway... here is the picture of the wedding cake I did this weekend.

I am proud. The lady in charge of decorating the hall (beautifully I must add) commented on how beautiful the cake was. So that made me happy, I"m sure she sees lots of cakes every weekend.
Here it is!

IT was a 4 tier Red Velvet & Lemon cakes covered in buttercream and fresh red roses. Really pretty! I think lol. I have one similar to this one this weekend also!!!!

Good news! ((and a bit of a vent))

GOod news is...I am right on schedule with my wedding cake due tomorrow. Last even I did was crazy (the 15th bday one) I had TONS of things to do and bake and I hardly slept for 2 days. Anyways... I planned better this time. No sleepless nights for this wedding..

Anyway...The bigger good news is that I got a call for a job interview!!!!!!! YEAHHHHHH~~~~ emoticon emoticon emoticon emoticon emoticon emoticon

So it's not a job,(YET) but at least I am getting an interview! I mean I've put in so many applications with no response! well, I did get like 3 letters stating they went with someone else, lol but no interviews! This job is awesome, too. It's in the city I live, it's actually like 5 mins away from my house, and it's as state job! so great benefits and good pay! much better than here. It's a job service agency from the Dept. of econimic security! I am thrilled and nervous but I will do my best. I believe I am qualified for the position so I am praying!!!

Interview is next wednesday (21st) @ 11 am. They want me to arrive early to filll out some paperwork, which I thought was weird because, what type of paperwork should I be fillign out at a job interview? that has never happened before...hmm... my dad said "maybe it's the new hire paperwork"?!?!?!....I wish! I'll keep you all updated on how it goes :D

Alsooo!! a little vent. I went grocery shopping yesterday. And I have been using reusable cloth bags for my groceriers for months now. It's not only green but also so much easier for me. They hold a ton of stuff and they are stronger so I can carry them easier. I just love them. Anyways...when I go shopping here where a live (its a small town...very small town) the cashiers always tell me "you are the only one who uses these, people buy the bags but don't use them". And it's true. I've never seen anyone else.

So last night Im there with my groceries (alot since it was for like the whole week or more). And this lady behind me seems upset. Of course since the cashier is not used to bagging in these kind of bags well, she takes longer. That's fine with me. Anyway...the lady behind me was almost like rolling her eyes, all impatient. You know I felt so bad, not for me but for her. How sad is it that some people don't want to "wait" for anything in life. It's pretty sad if you ask me. I waited in line like anyone else, now it was my turn to check out....I don't care if you use plastic, paper, or cloth.... but let me do what I want to do, which is cloth...sorry...i's a vent. but it bothered me. I am just glad that the cashier was really nice and helpful and actually did pack my bags pretty good! I've had bananas trown in with cans before ! And I love bananas so that broke my heart once lol.

OK oK...sorry...enough of a vent. I am glad its friday! I get to do a wedding cake and hopefully sleep in tomorrow. That is my plan. To have almost everthing ready tonight for the wedding and just do the finishing touches tomorrow !

I wont be able to post picture sprobably until Monday.

Have a great weekend everybody! ((The weather is still a bit hot in this area...we are expecting 100 degrees this weekend!! crazy....)) I want to use my scarves already!!! I miss them!!!

    ahahaha I feel bad here in scottsdale for actually being the ONLY ONE NOT using reusable bags! Everyone here uses them it's insane. I think I should invest in some! LOL

I was my son's bday last friday! The day we closed on the house! Since we were all so busy and stuff we couldn't throw a bday party for him, but my MIL made some delicious carne asada and we had dinner at her house to celebrate my son's 3rd bday and of course the new house. I made a small cake for him, here are the pics!

This pic was my son's idea! We took like 4 of these because that's how he wanted them LOL I love hiM!

He's into Thomas the engine tank

Cake was: 6 thins layer of yellow butter cake, chocolate pudding filling, thin layer of chocolate buttercream, covered in chocolate ganache. Like an easy version of a "Doberge" cake.

My hubby tends to love funny pics... he gave my son a butcher knife to cut his small 8 in cake!

And I have a funny man #2 in the house! lol, I swear he turned 3, I know he looks so big!

Love this next pics. 4 generations! My hubby's grandma, his mom, my hubby and son!

BTW: Same thing happened to me when I was a kid. My birthday was also on the day my parents closed on their house... there was too much going on for them to do birthday as well, or who knows, maybe they forgot too!...but to me it was like the house was extra special for me because it was my birthday... we slept in our new rooms even though we didn't have furniture or anything moved yet... we grabbed blankets and pillows and camped out on the floors. To me it is still a stand out birthday!

A much needed update!

Times have been crazy around here! I can't believe it's almost 2 months since my last blog!

But anyway here is the huge update!

I'm still at my current job....(bummer) but I keep applying EVERYWHERE lol, so hopefully I get a call soon. The latest update on my father... We went to see the specialist and they didn't not order surgery. He prescribed my father 1 shot of cortisone each week for 3 weeks to help with the swelling so the body can heal itself. Turns out his disk did not slip, a bit of it broke off, so those little fragments are actually pressing his nerve which goes all the way down to his left leg. That is why he doesn't have much strength on his left side. When we went to the specialist they measured his legs and his left side was one inch thinner than his right! Anyway....those shots have to be given by an anesthesiologist, it's like an epidural when you are having a baby, but instead of anesthetics they are putting in cortisone. BUT, the thing is the anesthesiologist is on vacation!!! my dad was given an appointment for the 21 st of this month, but this is just an appointment with the anesthesiologist to check his case, after that they will give him an appointment for the shots! I seriously HATE our medical care system in the US. I love my country but we do need a HUGE reform in this aspect. It is ridiculous how much time my dad's life has been put on hold and drugged with morphine for 3 shots! 3 shots that could have been given to him a looong time ago. He's been out of work and at home on this medication for 3 1/2 months. I just find it ridiculous.

Sorry... little vent there.

About the house....well, there was a turn of events. A house that was being built right next to where we were going to build, was suddenly up for sale. The loan didn't go through or something happened to the previous buyers so they couldn't take it. So they offered it to us. This house is huge. It's like 500sq bigger than the one we had chosen. So after much deliberating, price adjustments, sleepless nights, working our own numbers out, we took that house! It's a 1700sq foot home with 3 bedrooms, 2 bathrooms (1 has a jaccuzi!!!!), and with a fireplace, and formal dinning room. Which we wont use since I am totally 100% NOT formal lol, so that will be an extra room for TV and stuff. sot I guess it's like a 4 bedroom. with garage and a nice porch outside.

We just closed on it last friday. TOday we are moving. My apartment is a complete mess. And I have no dinning set! The thing is, we put on hold this beautiful dinning set that was on sale. So my parents took my smaller dinning set for their house and sold theirs. Now, we're we got this dinning set, well turns out they had so many orders that they can't fill the orders in time. So.... I am stuck without a dinning set. So I told hubby, let's buy some stools for the breakfast bar (I am tired of eating on the floor or sofa), we went and the ones we totally love are out of stock too! WTF!??! lol I guess we'll have to wait.

As you can imagien I have not been working out. I have to stablish my routine again, and that will only happened once I've moved into the new home. I have been really bad with the eating, lots of fast food. Since I don't have a place to sit and enjoy food, well I kind of been VERY lazy with cooking, so we end up eating out.

I made sweet 15th bday cake and cookies and cupcakes on the 19 of sept!! they were a total hit! next weekend (17th) I have a wedding! I can't wait! And the 24th I have another wedding to do! YES!!! This wedding is so awesome! It's for a friend/photographer! She took our pictures when hubby and I were dating and did our wedding pics too. So this time around she is teh one gettting married and since I've never taken family pictures ( I know..bad) we kind of barter our services. She gave us a photo session I am giving her the cake! The coolest thing is that she gave me the basic design of the cake and since she couldn't make up her mind, she let me do whatever I thought would look best! I am thrilled!!!!

BAPTISM CAKE- I got a request for a baby shower cake for tomorrow from this cake! but I had to refuse it!!! :*( with the move and alL!

100 cookies personalized and 10 dz cake balls for the sweet 15! AND 50 cupcakes I almost forgot... My hand hurt for 2 days after!

This is a cake I did for my brother in law's wife's baby taht was a mouth full...or type full...whatever..Anyways! I love her! She is due on the 4 of Nov! And I did her cake as a gift but that day the humidity was terrible so it gave a lot of problems but she loved the cake and it was really good which was the point I guess :D

I hope since I am moving life will go back to normal and I will log on daily! or semi daily! I'll post pics of the home once I got things set up!

well I'm still alive!

Ok. So I was at home a couple of weeks ago and I realized how much I hate my job. Seriously! It's not what I want. Now or ever. I am thankful for the opportunity to work here for almost 4 years, but I think my time has come up. So, I started job searching. Then, I realized, if I quit my job, I won't have a place to live (I get free apartment & utilities with my job).

Hubby has been talking about getting a house. I always said no because I really didn't think through the idea. I thought we could never make it (moneywise). But you know what? We totally can. So, we are buying a house.

So we were torn between a used home or having a new home built. So we went to see a couple of used homes and we also contacted a contractor which is really good friends with my Mother in law. And apparently we qualify and we can buy a new home!!!! We are so thrilled!!! This is a dream come true. So we have picked out the color of the cabinets, granite and tile. Today we go with to the bank and start all the singing!!! It's an amazing feeling. we have dreamed about getting our own home for a long time!And we still can't believe it!
So as you can imagine I've been really busy. I'm waiting for my call for the new job (full time, benefits, much much better pay), taking 2 online courses (1 math!! argghh), and planning our new home stuff.

Last week I did miss a couple of workouts but I have been wokring out this week. And I've lost 2 more lbs! I think I was doing too much strength training and not enough cardio! So now I am doing lots of cardio. and I love it actually.

My dad got a call from the neurosurgeon. He has his appointment on sept 15! can you believe that?!?! It's really frustrating but at least we have a date now. We are just waiting.

So that is a brief update on my last 2 weeks! I have to go, I have to clean up the apartment before we head out to the bank.

Sorry, I haven't been on as much. I promise as soon as we are less busy I'll be here!!

    Thank you eveyrone! As you can imagine, my life has been a rollercoaster for a few days now! We were going to bank on Wednesday, but the guy cancelled, :*( So we are signing all the paperwork this afternoon. We are so excited! The house should be done by early to mid november at the latest!! I can't wait! I'll keep you posted with pics and everything!
