Tasty Zucchini Blossoms

I love zucchini blossoms and so I decided to grow some zucchini and get 2 for one. Although, I fried the blossoms and they are not a low calorie dish, I will indulge whenever possible because those tender blooms are not available that often. Next time I will tried them stuffed with cheese.

A Lesson Learned. Read Labels Carefully Before Cooking.

Yesterday I planned a delicious dinner from a recipe I saw prepared on the cook show The Chew. It is a Daphne Oz's (Dr. Oz's daughter) recipe. Its was a chicken, eggplant & lentil dish. Ok ,so I cooked it according to the recipe or so I thought, except that I removed the skin from the chicken and used yellow lentils instead of brown. I waited and waited for the lentils to cook but they were not getting tender enough after 1 1/2 hr. I was so hungry that I ate it the way it was. It was delicious but the lentils didn't seam right to me. To hard.

I double checked the cooking instruction on the package and no mention on how long it will cook. Just cook until tender. Red the label again and it turns out that I used yellow split peas instead of lentils which need to be soaked before cooking. I thought they were yellow lentils. I continued to cook the leftover portion for 2 hrs and still the same.

In the garbage it goes. Too bad for it really tasted good. I will do over again soon but next time I will make sure I have brown lentils instead. I am pretty sure this mistake I will not repeat again.

    MISSCUS, that is a funny coincidence. Same mistake with opposite legumes. We definitely learned our lesson. I redid the recipe a couple of days later and it came out great. I enjoyed it.

    that's funny, I cooked lentils and thought I was cooking split peas, they turned to mush real fast. After an hour of cooking them, but I still was able to eat them!!

I See a Rainbow at the End of Tunnel

These last 5 weeks have been a stressful time in my life. My stepfather suffered a head injury and has not been able to get up from bed. I suppose it could have been worse and I thank God for small miracles. I find myself taking care of him as well as my Mom who suffered a stroke 6 years ago. Stress has taken a toll on me and this past weekend I came down with what I believe is the flu. I had a rough weekend with aches, pains and high fever. Now I am feeling much better even though I know it will be awhile before I am myself again.

Because of the above mentioned I neglected to do any time of exercise and therefore missed a 10K race that I had already been registered to.



It has not been easy, but I will not give up for I know the sun will shine tomorrow I’ll see a rainbow at the end of the tunnel.

A Very Stressful and Emotional Week

A week ago today, my stepfather had a very bad fall from a stair case and suffered a brain contusion. In less than 5 days he was transferred between three hospitals. He his finally home, but needs constant care. My mother who suffered a stroke a couple of years ago cannot care for him. I have been my mother’s care taker since then and now my stepfather. My sister flew in from New York City Friday night and is helping out. I don’t know how long she can stay but I am very grateful.

Because of this tragic incident I have not been able to eat, sleep or exercise properly. I am hopeful that things will return to normal little by little.

I thank God for all the wonderful people that cross my path and have offered me and my family their help and support.

    I am sorry to hear that you are going through such a challenging time, and am in awe of you for your strength to rise to the occasion. It is so important to look after yourself, for, without your ongoing health, you cannot help others. Is there someone in your community who can help you? I am in Australia, and we have carers and respite through our government social services and also through our churches. I have found it is better to ask for help at the beginning, and not wait until you are exhausted.

    I have been going through something similar to you, and like you, I tend to lose my appetite when under stress. I guess I just get used to it, and it becomes the "new normal". I'm sorry you are having to go through this.

    Boy, do I agree with Cyclingsandy. My sister became the caretaker for both my parents before they died and it is a lot of stress to deal with. They were blessed to have some wonderful people who came to Dad's house to help care for them during the day while my sister was at work. They fixed meals, bathed and took Mom and Dad to appointments. I am hoping you have some unexpected help and many blessings along the way. May God also give you an abundance of peace and strength.
