Trying to overcome

I am gradually overcoming the craziness of my life. Here and there I am finding time to cook food that I can freeze and have available when I need meals in a hurry. I have also found some recipes that can be made in a dash and some crockpot recipes. While I will not be eating like I want I will definately be eating better than I am now. And hopefully the food will taste much better than fast food. At least now my family is getting somewhat healthy meals when I have a chance to cook then I freeze the rest. Maybe eventually I will get my family in better health. God knows we all need it. And he knows I am trying.

    Sounds like you're making progress. I will often "hide" veggies in my dinners for the family. When I make anything with ground meat, I add a bunch of mushrooms (that I've run through my food processor). My kids don't even know. My 12 year who says she hates mushrooms love my half meat, half mushroom burgers. emoticon

I have not had any Coca-Cola since July. I have formed a habit of exercising. I have even reached the point that I realize my body feels better and I sleep better as a result of exercising. What I would give to tell you about all the awesome, healthy meals I have been fixing my family. But to be totally honest I rarely have time to cook. While my mother-in-law was in the hospital and now rehab I have been trying to accomplish the things I had not got accomplish while having to help talk care of her and taking care of Taser (my son).

Hopefully with Taser now going to school full time I will be able to remain caught up on everything. I would love time to get physically healthy, as well as, spiritually and relationally.
Not only is Taser going to school full time. But he also attends an after school program until 5 o'clock. Then he has speech 5:30 to 6:00. And on Wednesday church. Other than church everything that Taser is in his school has recommended that he be in.

But even though I want to do what the school feels is best for Taser. His schedule is making eating healthy really difficult. I am trying to use what little free time I have to prepare healthy meals ahead. Or to try to find ideas for cooking healthy food in the Crockpot. I got a FoodSaver so at least I can freeze my leftovers. So hopefully eating healthy will get easier as time goes by and as I find new ways of making healthy food in a jiffy.

I have not had a Coca-Cola since July. With my son in school I am finding more time to exercise. I have even started craving healthy foods. I just hope that when my mother-in-law gets back from the hospital and rehab that she does not make cooking discouraging. Before she left she expected me to cook a meal based on her nutritional needs as well as her likes. Then she would refuse to eat my cooking. So I would have to either cook her something else or she would just eat ice cream for her meals. I am kind of disappointed she had hired another lady to do her cooking for her but the lady brought her a meal to the hospital. Now I have been informed that she will be eating with my family when she gets home that my cooking is far better than the other ladies.

    Hmmm, talk about a you-can't-win situation with Gramma Picky. I hope you won't take it personally and won't cater to her whims.

Maybe you could stock up on a few healthy frozen meals and soups that she likes. Let her know what you plan on making and then she can decide if she wants that or wants to microwave something else for herself...(My guess is that option will get old for her rather quickly.)

If she's trying to be agreeable, maybe you could involve her in some of the menu planning or meal prep.

You might look online and see if there are any of the tricks for picky children that you could adapt.

I have not had a coke in over a month. While it is still a constant struggle to remain coke free so far I have managed. Now I a trying to spend a few minutes per day exercising. Up until now it has been hard to find time to exercise. But the way my body is starting to feel I don't know if I have time not to exercise.

Probably 90% of my daily intake is Coca-Cola. I need to figure out how to get off coke. Today my doctor told me to try drinking two glasses of water before I allowed myself a coke. I instantly knew that his idea was not going to work for me. So I set out trying to solve the problem of how to get water in my diet without actually having to drink water. I decided to try shaved ice. I could not get enough shaved ice. And the ice was far more satisfying than a coke.
