Snack: (random munching) 1 leftover rice ball - 42 cal


Lunch: Burrito - flatout wrap, 1/2 cup uncle bens santa fe ready rice, 2 tbls salsa, 1 tbls chopped fresh cilantro, 1/2 sliced jalapeno, 1/2 slice cheddar cheese...... 1/2 cup baby carrots, 1 tbls wishbone regular ranch dressing..... 3 quarterd and sauteed mushrooms - 353 cal


Snack: vlasic pickle strip - 5 calories


Snack: random munching - tbls strawberry nerds (no pic) - 60 cal

snack: 1/2 pushpop (kids really went to town on the other half) - 45


Dinner: 1 serving california pizza kitchen thin crust BBQ chicken pizza, 1 serving steam fresh garlic cauliflower, 3.5 stalks fresh asparagus with ragu double cheddar cheese sauce - 423 calories


Snack: one square hersheys special dark chocolate with pomagranet - 59 cal


(went to the movies after the kids went to bed last night and did not eat any of hubbys popcorn.... I usually have a handfull but resisted last night :-) .... I was holding out for a mcdonalds ice cream cone but when we went through the drive through there credit card machines were all down :-( so no ice cream for me..... I came home and had 1/2 a sandwich because I was really famished and wouldent have been able to sleep being so hungry.)

Snack: 1/2 sandwich thin with turkey and honey mustard..... 1/3 serving pringles - 203 cal

Total calories for the day ~ 1363 calories - hmm ... under my calories for the day... dident feel like it. Breakfast arfed me over because it was only 170 calories.

    I do use the ragu cheese sauce alot, its great over veggies, pasta or baked potatoes... The calories really are not that bad if you use the correct serving size. I mainly get it for the kids. I use to feed them boxed macaroni and cheese but felt guilty because it really was not very good for them. Now I take whole wheat pasta and put the ragu cheese sauce on top of it, so they are getting whole wheat and there is alot less extra crap in the ragu then there is in the powdered cheese mix.

PS. you know the first ingredient on kraft boxed mac and cheese is "enriched macaroni product" .... MMMM that sounds like something you want to give your kids huh. I prefer "whole wheat flour".

    Thanks :-) ... Im usually good with just a handful of the popcorn but last night I really wanted to stay on track. After I eat just a handfull I feel bad because I have no clue how many calories are in that handful... hubby puts alot of that oil butter stuff on it.... The smell did really get to me a few times though but I just kept telling myself that it was greasy and too salty. Yuck.... even though it prob tasted good the thought of it being too salty was enought to keep me out of it. lol

You are such a friggin inspiration...AND you have little ones! You make a consistent effort to prepare such AWESOME looking meals - (that wrap looked so good, I almost licked my screen - hahaha)! Not only that, you resisted the SMELL and taste of movie popcorn!!! ( I am sooo bowing down to your awesomeness!) Imagine, you were able to eat healthy all day, and still ended up UNDER you cal intake with snacks and all...YOU ROCK, SISTA!!

    the food journals absolutly make me think twice about what I eat. I can scan through the pictures I have already taken for the day and say "wow I havent eaten enough veggies" so I will add more to my next meal... or when Im making my plate for dinner I go "that portion of pasta looks way too big" so I take a little off so I can even out my picture.

I do try to balance my pictures out and make them look nice and in the act of doing that I end up eating a whole lot more balanced and healthier where before I might have not cared so much about my pasta portion looking a little out of control.

I also find myself maybe eating a snack that includes fruit or vegetables so I dont look like all I have snacked on all day is ice cream and chips lol...

You guys reading my blogs really keeps me on track. Thanks!

Breakfast: Left over pancakes from mothers day.... strawberry sauce.... 2 tbls tripple berry preserves - 186 cal


Lunch: Turkey Tomato sandwich thin w/ 1 tbls kens light sweet onion dressing.... 1/2 baked potato, 2 sauteed mushrooms, 2 tbls salsa, 1 tbls light sour cream - 357 cal


Snack: 1 serving baked tostitos scoops.... 1 can sardines in hotsauce (actually mackrill not sardines but tasted about the same) - 290 cal


Dinner: 6 Asian dumpling, Rice balls, asian vegetable medley, 2 tbls kens light sesame ginger dressing - 556 cal

(dumplings are my own recipe, made from turkey sausage, napa cabbage, spices and wonton wraps.... they take quite a bit of time to make between stuffing the dumplings and cooking them, but they are really really tastey. Hubby loves when I make these because I dont do it very often and they are so good. I have attached a link to spark recipes where you can find my recipe in case you want to try it out... more pics on the recipe page)

Ingredients

Japanese sticky sushi rice for rice balls... rice vinagar which gets mixed in with the rice with a little sugar. very tastey!

Finished Meal.... Yum!


Snack- Pure Heaven! - 301 cal

(1 chocolate cup cake, strawberries, splenda & 1/2 cup 1% milk)

Total calories for the day - 1690 calories

BR>There are not that many I have just started using spark recipes but I add new ones weekly so keep checking back. I will post the link on my spark page as well if anyone needs it later on. :-)

The recipes I make mostly are made up by me... I dont normaly follow recipes when I cook because I like making things with minimal ingredients I already have on hand and most recipes call for alot of stuff. Usually I get my inspiration from watching food shows and then put my own spin on the dish I see made by trying to make it healthier and something my whole family will eat.

    when I pan fry the dumplings I just use olive oil cooking spray... you dont need much, just enough to coat the bottom of a non-stick pan.

    Ok here is a surprise, my pancakes are just regular old hungry jack light and fluffy pancakes... 1 serving of mix which makes 3 - 4inch pancakes is just 150 calories. The key here is to make sure that you stick to portion sizes.

I make strawberry sauce to go over top and that is only 26 calories!!! Its really tastey too, I dont even miss maple syrup which adds alot more calories.

Rant ~ Youth Sizes & band Tshirts

Im shopping on the internet and find that every single band I like only carry youth sizes for thier T-shirts! WTF.... Who the hell can fit youth sizes, they are tiny. To fit a youth large (which is the largest size they carry) Im gonna have to be at my goal weight. I have a few youth size Large T-shirts and they are tight as crap on me :-( .... it really sucks that these bands only cater to people that are 12 - 16 years old and have no boobs or hips when most of the dudes in the bands are my age or older in the first place.... you would think they would know that other people listen to them besides teenagers. Even the mens sizes are in youth! My little brother who is 19 and at a healthy weight would have problems fitting into youth sizes.

Im a 28 year old mother of 2 with a big cheast and big hips and no matter how much weight I lose thats not gonna change. I geuss I am stuck shopping in the granny section of the store where band tshirts dont exsist.

grrr. It annoys me.

    Don't know about "band" shirts, but I do know that all sizes are NOT the same! LOL! I have recently bought some more Nebraska t's to replace the ones I am outgrowing. Unfortunately, they will have to wait a little longer or I need to go get some more cuz the sizes I bought, the next size down, are tight, too. Yet, I have others that are the "same size" on the tag and they fit just fine. Different countries making the products I figure....oh well, I figure it's another incentive to try to drop more weight! Disappointing for sure tho. Hope you can find something in your size!!

    I already bought a MAE t-shirt in the largest size I could find youth large... and its tight. It was a major goal of mine to be able to buy and fit into a MAE shirt though because they are my favorite band. I could never buy or fit one before because I was waaaaay too big, I wouldent even have been able to pull it over myself. It was sad.

Today I was looking at Anberlin tshirts and most of them ended up being youth medium or large.

    i know how you feel. i will like something and it never seems to fit right and then there are the ones that say they are your size you try them on and they are actually 3 sizes too small. then you feel even more crappy then you did before.

    My 12 year old son, who is at a normal weight for his height, but is a giant for a 12 year old wears adult large sizes for his shirts. He outgrew youth sizes 2 years ago.

    Even at concerts, I find that they have 1 girlie shirt and it comes in youth small. Otherwise, I'm stuck with a very masculine looking tshirt in adult male size XXL. Not working out for us ladies.

(by this time I felt pretty bad about my snack choices because it felt a whole lot like I was heading twards a munching session. I desided to add alot more veggies to the rest of my day)

Lunch: 1/2 baked potato, 1/2 cup steamed broccoli, 1/4 cup ragu cheddar cheese sauce, 1 slice tomato diced, 1 tbls bacon bit, 1 tbls light sour cream.......... 3 sliced and sauteed mushrooms - 274 cal


Dinner: TACO SALAD - 2 cups lettuce, diced tomato, 1/4 diced avocado, 1/8 cup shredded 2% cheddar cheese, 1/2 cup uncle bens santa fe ready rice, 1/8 lb lean ground beef sauteed with 1/8 cup diced onions & 1/8 cup kidney beans, 2 tbls salsa, 1 tbls light sour cream, 1 serving baked scoops tostidos chips, fresh cilantro - 537 cal


Snack: 1 medium orange.... 3 slices tomato, 1 slice fresh mozzarella, 2 fresh basil leaves shredded, salt & pepper - 179


Total Calories for the day: 1561

NOTE: I got in 40 minutes of weights & kickboxing while I was watching Man VS. Food tonight. That show makes me so hungry though lol. emoticon

    I always add beans to my ground beef.... It does wonders to stretch the meat so you can use a small amount while adding fiber and not taking away from the flavor. Usually when I make tacos or taco salad I add kidney beans and black beans though. I had a little bit of kidney beans chillin in a ziploc bag in the fridge already and dident feel like opening a new can of black beans. lol.

As I was making the oranges and tomatoe slices I thought to myself... hmmm this seems a bit odd. But as I was eating them it wasent bad... I actually got a little bit of basil on one of my orange slices and the taste was really interesting. Im not gonna say good yet because Im not completely sure... but it wasent bad . lol.

One thing is for sure, the colors worked great together... the plate is very eye appealing.

Photo Food Journal - Mothers Day ~~~@

This morning hubby was very sweet and made me breakfast. :-) He got annoyed at me because I kept throwing my two cents in while he cooked but everything turned out awesome and we had a great morning.

Breakfast: 2 eggs over easy, 2 light & fluffy pancakes, strawberry sauce, 1 jimmy dean fully cooked turkey sausage
(I decorated this shot with my mothers day cards :-) )


After breakfast we went to kholes because I had a 5 dollar off and 15% off coupon. I got a few new workout tops that were on sale and ended up only paying like 4 dollars for them after the coupon. Hubby also bought me a sports watch for my mothers day present. It wasent a surprise but I got to pick the one with the features I wanted... a daily alarm so I dont forget to take my vitamins and other pills, intraval timers so I can time my walking/jogging intraval workouts, stop watch and of course the time and date. Its a really nice watch although I wish it had of come in pink.


We came home and had lunch
Lunch: light all beef hot dog w/ wheat bun, onions, mustard, ketcup & relish.... 1 1/2 servings of sweet potato fries..... 1/2 apple


Hubby was really great and watched the kids while I did my workout. I did my 30 minutes of walk/jogging. Doing 2 minutes of jogging and then 1 minute of walking. Then when I was cooling down from doing that I was having such a good time I desided to just power walk for another 30 minutes. It was beautiful outside and I borrowed my sisters Ipod so I was really just enjoying being out there in my own little world.

When I got in I had this...
Snack: 2 wasa wheat crackers & spinach dip


Later I got ready to go out to dinner. Hubby desided to take me out for mothers day... I have really been craving sea food so we went to this place close to us that we had never tried before. I dressed up and noticed that the dress I wore for valentines day fits me much better now :-) and when I was trying on jewelry I came accross a bracelet that I bought when I weighed 310lbs (my heaveist) Its amazing to see how it fits now because when I bought it, it was tight on my wrist... If you can beleive that. wow!!!

crazy huh?

Dinner was great... We split everything and did not eat the baked potatoes but I still ended up eating like 800 and something calories... because I did eat a few things that were fried. Mostly everything was broiled or steamed though. A really good dinner. Im super full though... not use to eating so much and that was alot of crab legs.... again I did not eat all of this, it was split lol. I also had maybe a drop of the butter, not much.



By the end of dinner I was wishing I had worn something a little less dressy because eating crab legs in a dress that you dont want to get all arfed up is not easy.

I had a great mothers day... although a little high in calories. I will make it up durring the week though, with great eating and a butt load of exercise.

Total Calories Eaten: 2061 (about 300 over my range)

    Chances are that even with eating 2000+ calories you didn't eat more than you burned that day. Eating half was a really good way to cut back on calories & cost--and it's not something you do everyday.

    after running out of pancake syrup 2 months ago the strawberry sauce is all I use. Its really easy to make, you just fill a small sauce pan up with frozen strawberries... add about a TBLS of splenda or sugar and about a TBLS of water to it. Bring to a boil and then simmer untill strawberrys are tender. Once tender mash half of the berries up with the back of a fork and then let the mixture cool for about 3 or 4 minutes and it gets a little thicker. Its really tastey and much better than pancake syrup because your getting in some fruit :-)

Looks like a great food day even if it was a little high in calories. I think there's nothing wrong with an an occasional higher calorie day, especially if you can do it without beating yourself up and you know that it won't derail you. What a great hubby you have to take you out for seafood!
