Happy Valentines Day Everyone! And a beautiful Valentines Day it is. Actually it is just a lovely day all around. I love Sundays - as a rule I try to never work on Sunday (at least at work work), so I generally have Sundaya to refocus myself on what is REALLY important in life. I'm finding that easier to do today, as I am re--evaluating my life and goals and getting a better balance on things. That's not saying I have a handle on this...at all...I'm definately still a work in progress, but making progress I am.
Pre-planning and a little extra work earlier in the week really took a load off the day. I'm a bit behind in fitness for week two of the challenge, oh well, got caught up a little bit today, but now it's time to clean up and make dinner and get over to Feed My Starving Children where I'm volunteering with some friends from church tonight. The big progress is in my attitude to falling short on fitness minutes. Normally at this point, I would say "My life is just to busy to allow me to keep up and compete at this challenge thing," and I would quit. But, something just short of miraculous is happening to my attitude. I'm looking at where I came up short (and how important that is in the grand sceme of things) and what I can do to do better in that area. We'll try again next week....wait, was that ME saying that?
So, for now, time to clean up - make dinner (/remember the fajitas and black beans?) and get over to FMSC. Tomorrow is another day - and a day off to get ahead for the next week. The end of the week schedule is going to be BRUTAL and this week's goal is to "be prepared!"

So I planned all these cooking projects to get ahead for yesterday, and got them done, which was great when I got home to day all I had to do was cook veggies. I boiled the potatos, carrots, cabbage and onions for the corned beef, but also added turnips and radishes. The pot was FILLED so there are plenty for several meals. I also roasted a large pan of assorted veggies and potatos.
Dinner was awesome, but let me caution everyone who is looking forward to St. Patty's, make sure you plan it out ahead of time, it will take a bit bite out of your planner. I had mine planned and even had enough left over for a 1 ounce piece of maple walnut fudge (my Valentines present). That fudge is gonna be around for a looonnngg time!
So anyway, I also made a big batch of chicken fajitas with lots of peppers and onions yesterday, and as fate would have it, a friend called and invited me out with a group of people I know to see a local play....and dinner....at a mexican restaurant! So, there are alot of fajitas and black beans left for later in the week.
I have to admit, I was pretty scared. I LOVE mexican food, and it is definately not the healthiest cuisine. I knew though that with disciple, I could manage, even though I had planned on making my own and saving a ton of fat and calories (which I probably would've enjoyed more). I resisted the chips - which was hard, not that I love the chips so much, but I could drink salsa...I even use it instead of salad dressing. I didn't totally abstain, but I only had two, and like I said, mostly for the pico de gallo. Then I ordered two enchiladas-chicken with NO cheese, I thought the waitress was going to loose it, ("no even on top!") and a side order of rice, which can sometimes be huge, but in this case was not and I split it with another friend who has decided that she needs to loose some weight since she has seen the success that I am having. Well, to cut this long story short, when I got home from the theater and logged in my food, I still needed some carbs and protien, sooo, an open face turkey sandwich for a midnight snack.
Today was work, and more work so I'm glad I took the time to do all the prep work. I still feeling it from my mega workout session yesterday. Did my farthest (and fastest run/walk) yet. Did one mile slow at 17min but with weights and got quite the upper body workout. Then did 3 more at 16 mins ea and one at 18 mins for a total of 5 (yes, FIVE) miles.
I have to admit, I do feel it today, every muscle hurts, from my neck to my toes....but it hurts sooooo goood! Taking tonight off to catch up on the computer and hoping the kinks work out for another great workout tomorrow!

I'm not sure what is so different about today, but "I'm feelin it" and I don't want this feeling to go away. It is not yet 8am...the animals are have all been out and fed, the humidifier filled, e-mails caught up, morning devotional done, dressed, combing hair now while blogging and then will grab some breakfast and off the the grocery store (before they are too crowded). Then, when I get home, start slow cooking the corned beef...will let it sit overnight and have tomorrow after skimming all the fat to minimize, well, the fat. Going to have to slow cook it on top of the stove because I'm adding about 1/2 ton of veggies so that they will be the main course with the corned beef for flavor. Tonight is chicken fajitas and black beans (possibly spanish rice). That will make a couple of meals and with the abundance of veggies, we should get about 4 meals from the corned beef. Yeah! I love having food prepared for later in the week.
While all that is cooking I have extra time to get on the bike and treadmill and do some additional strength training. It's going to be a busy weekend with work, church, and serving at Feed My Starving Children, so I'm definately taking advantage of the day....

Aaaahhhh...a day off. Taking this day slow. Getting things done, but not killing myself. You can teach this old dog new tricks! Need to plan dinner, still have no idea for tonight, but tomorrow will be corned beef and you know, the works. I'm not under any misconception about corned beef being a low fat or healthy meal, by any stretch of the imagination, but I think if I make it with a lot of vegetables, and make them the center of the meal and the corned beef more for flavor, we won't do too much damage. If any of you have any suggestions....I'm open.
Did a couple of short workouts so far, some stretching, some strength training and still want to get in a longer than usual cardio. I was hitting in pretty hard last week and the week before, and probably not eating as much as I should have (even though I was within range) on my tracker. It did caution me to look at the calorie range based on the number of calories burned, but I was liking the weight loss, so did I listen? Noooooo!
I am accepting now, however, that I did not put this weight on over night, nor will I lose it that way, so I may have to make some adjustments and just deal with a slower rate of loss. I can deal with that as long as I have the energy and motivation to keep up with and increase my fitness as I can.
At least today, I feel like I've got life a little more in control. Getting things done and catching up with friends. That's what life is about, at least for me. The love of family and friends is what makes life worth living...and that's inspiration enough to keep trying to improve myself and be all that I can be.

Well, I got called in early today - ot to wrok at 8:15 till 5:45, instead of 5-10pm. I ceratinly like the earlier hours, and the extra time was great, but now, I'm exhausted....and beside tracking food, and drinking water and fitness, blogging is one of my streaks I haven't broken. So, now, I still haven't and I'll blog at you tomorrow... Good Night All!!!
