Yesterday it was cooler and overcast and I felt like comfort food for lunch. We hadn't had curry for a while so I made a sauce with onions, garlic, bell peppers, tomatoes, potatoes, carrots and chick peas and added half a jar of store bought Korma sauce.
Served over curried rice pilaf this would make a wonderful vegetarian dish... however, we like chicken or shrimp - yesterday's choice was chicken. I cooked it on the side so the leftover sauce is frozen on its own for future use.
