Reflection on July and weigh-in

This month has been a good month.
My starting weight was 146.7 and today I am at 145.4 so not a whole heap of progress but progress nontheless...
High for the month was 147.5 whcih is my starting weight for the 60 day challenge.
Low for the month was 145.2 just before our trip north.
Goals:
- get below 146 emoticon
- do yoga at least 5 times a week emoticon
- add extra exercise - started that since we got back to Colorado emoticon
- learn a spanish phrase each day - didn't really happen emoticon

Yesterday I made salmon topped with summer salsa for Sunday lunch and it turned out really nice. I LOVE salmon!!


For dinner I had a turkey taco salad


On an exciting note... we really enjoy the greek yoghurt which we cannot get in Mexico, so yesterday I ordered a yoghurt maker on Amazon and I can't wait for it to get here so I can play with it. I hope it makes good yoghurt... the stuff we find down south is very, very sweet (20+ grams of sugar per serving - yuck!)

A day's worth of meals :)

Yesterday I finally got the file cabinet and the matching hutch together. It took me about an hour and a half and it felt like quite a work out - I definitely worked up a sweat :)

I took pics of all 3 meals yesterday

Breakfast - 1/3 cup granola with greek yoghurt and strawberries


Lunch - moroccan chicken with fruited rice pilaf

Fishy Friday

We found lots of great food at the Safeway yesterday and today I'm going to pre-cook a few things as next week could be a busy one. Our main meal is lunch and it's easier to have something already fixed and only in need of heating up.

Yesterday's lunch was grilled tilapia with roasted herb potatoes and carrots (DH loves his carrots)


Dinner a salad of mixed greens with leftover (cold) salmon, avocado, tomatoes, cucumber and feta with a blasemic vinagrette

A little progress

Yesterday I started putting the lateral file cabinet together and I got about halfway - talk about a workout!! I worked up a sweat :) My desk is about put together, now for computer on it... The printer is on the low file cabinet and my little copier will go on the new lateral files. By the time we have all just so, it will be time to head south again...

Lunch was a rare pasta treat. I needed to use up some veggies and made a spaghetti sauce from scratch. I love my stick blender to make the tomatoes into a sauce.



Whole wheat spaghetti, home made sauce and italian baked cod



My fridge is pretty empty and this morning we're going over to the big Safeway in Aztec which is about an hour away from here. The closest grocery store is 40 min away in Pagosa but this one is so much better! They have the Chobani greek yoghurt DH likes for his breakfast and the selection in the produce section is amazing.
For dinner last night we had the lst of the curried turkey salad

    I ike the chaboni yoghurt's too, especially the honey one!
That salad looks like a masterpiece!

I really must start doing that again, taking pics!

Getting my office organized (again)

In the spring the shop building passed the final inspection from the building department (finally - long story) we can move the office section back to the upstairs. yesterday I unpacked my desk and shelves and between the 2 of us moved it upstairs. After lunch I started to get it all put back together again and today I'll assemble a lateral file cabinet with hutch - still in the box from 2 years ago...

This morning I woke up with the sun coming up over the hills and got up to do a yoga session watching the sun rise over the lake and making it sparkle. Very relaxing!

Edited: after posting this and doing my spark e-mails, there was one with a 10 minute pilates video. As I was still in my work out clothes, I got on the floor and did that one!!! (and enjoyed it :) )

your food looks amazing, I can't wait to have more time to spend cooking.....right now it is quickest and easiest! ( tonight tuna sandwiches for dinner before my run)

but your food looks better! I think I should come stay with you for a while and get my love for cooking back! lol
