Food Blog: Steak with Chimichurri sauce, Yukon Potato, and Tomatoe and Okra

Since we're counting calories, we chose a very lean cut of steak (top round). The original recipe called for Flank Steak. You can really use any cut you like. Next time I'm going to use less oil as well in the sauce. Recipe serves 4.

Chimichurri Sauce:

In a bowl, mix together:
1 Tbsp olive oil
1 Tbsp white wine vinegar
1 Tbsp fresh lemon juice
3 Tbsp parsley, fresh, Italian, minced
2 Tbsp scallion(s), green parts only, minced
1 medium garlic clove(s), minced
Salt and pepper to taste


1 pound steak
1 garlic clove, peeled and smashed with side of a knife
salt and pepper to taste

Rub both sides of steak with smashed garlic clove; discard garlic.
Season steak with salt and pepper.
Grill or Broil steak for 4 minutes (less if using thin-cut)
Flip and broil on second side 3 minutes more

Thinly slice steak against grain and serve with sauce on the side.

Yukon Gold Potato: poke holes in potato and microwave for about 4 minutes (for small potato), 5-6 min for a larger potato. Yukons have a delicious flavor!

Okra with Tomatoes: Found in the frozen food section! A low-calorie filler! Just heat up and season with salt and pepper. It was tasty and UBER low on calories!

    Noms. I love okra. I am going to try Yukons. Regular russet baking potatoes are usually so big.

    Looks yummy! Not so sure about the okra...I like mine breaded and fried.

Have you tried the canned zucchini and Italian tomatoes? They are super yummy.

We made this the other night. The whole meal (with rice included) was only 450 calories which made us happy. It was very filling as well.

A shout out to my favorite spice store "Penzey's" for always providing awesome spice blends. I used their "Bangkok Blend" to braise the chicken. It was delightful!

Also, I discovered "Chiquita Pineapple bites". They have a variety that has pineapple with cocunut. It was delicious! And I only needed a small amount of pineapple, so the single serving packet was much appreciated!

Last night, we had leftover spicy honey chicken from the night before. I was thinking "What side items should we have with said leftovers?" So I jumped on spark and searched through the recipes.

Stuffed Baby Zucchini for Two jumped out at me. Am I glad it did. I'm not a huge squash/zucchini lover. This recipe was so delightful! I'm so glad we made it! It was really good, for squash :)

    The reason I LIKE zucchini is because it is like a blank canvas.... you can make that stuff DANCE with the right spices. Tofu, eggplant, zucchini- all pretty blank canvasses with which to create great art.

Food blog: Green with Envy

Last night I made an awesome dinner of chicken kebabs with creamy basil pesto sauce (compliments of Cooking Light magazine). I rounded out the meal with spinach tortellini and spinach salad. Kristi and I ate in silence because it was pure taste bud delight!

One thing I'm sad I forgot was to put some sweet pepper relish on the spinach salad. Oh well. Next time. For there will be MANY next times with this recipe!

Turning Monday Around

Dinner last night.

My partner and I both had tough Mondays. It's not a good combo when both of us have rough means we likely wind up on the couch, not exercising, and have the temptation to eat The Panda Wok which resides across the street and down 2 houses from us. It's a dangerous temptation.

I got home first. It was kickboxing night. I thought "I'm going to go!" Off to class I went where I totally rocked it out. It felt great. Before leaving for class, I started the prep work on a new recipe we wanted to try that was also pretty healthy.

When I got home, my partner greeted me at the back door. I was happy and surprised to find her in her running clothes. She unloaded a 5 minute tirade about her day and said "I'm off to run", kissed me, and thanked me for starting dinner.

I finished prepping dinner, got it in the oven and thought "I want to do more for us". We decided the other day that all food would now be eaten only in the dining room, even snacks. It's supposed to help you focus on better eating habits. So I thought, let's start tonight! And, I thought to launch us into our habit, I'd set the table with the fancy china, light some candles, and put on some meditative mood music.

By the time my partner returned from her run, dinner was nearly ready. The house smelled fabulous. Her exultation when she walked in the door was thanks enough. We both showered and dressed for dinner (lol, in tshirts and boxers) and we decided to pop open a bottle of a new wine we bought. It was an incredibly romantic and delicious dinner. Both our moods had changed considerably and we felt like we were on a secret vacation getaway on this otherwise drab Monday. The rest of the night was magic.

I was proud of us both for exercising despite crappy days. I was proud of us both for releasing our woes into the universe and focusing on the other's happiness. I was proud of us for eating a healthy but tasty dinner! Rainy days and Mondays may have gotten Karen Carpenter down, but even she would have succumbed to the transformational magic that happened in our abode last night!
