Amigo Chicken Tortilla Soup serves 4
3 Tsp. olive Oil
3/4 Cup chopped onion
1 lb Chicken, chopped into bite size pieces
3/4 Tsp Cumin
3/4 Tsp Chili powder
2 (16oz size) can black beans or cook and use dried
1/2 cup apple juice
12 oz tomato sauce
3 TBSP lime juice
1 1/2 cups chicken broth
1 1/2 cups salsa
Heat oil in large Dutch oven or soup pot over medium high heat. Add onion and saute until translucent. Add chopped chicken and cook about 4 minutes or until browned on all sides. Stir in cumin and chili powder. Add remaining ingredients, cover and heat thoroughly.
Sour cream, baked tortilla chips, shredded Monterey Jack or cheddar cheese or mexican blend cheese, sliced black olives, sliced green onions . . . .
