Lately I've been feeling bloated and congested. I noticed I've been eating more red meat and think that might be doing it. I'm going to try vegan meals for the next 30 days and see if I feel better. DH already said he's not giving up meat and that's ok, I'll just make my dinners along with the lunches I already make for the week and eat that. I store the meals in containers in the frig and when I leave for work just grab one for lunch. He can have his meat/ fish/ chicken and I'll have my prepared go-to dinner in the frig.
I already have a soup that I love to eat, I'll just have to substitute chicken broth for veggie broth. I'm also going to start up again my veggie juicing in the morning. DH always loved that when I'd make it for breakfast before he leaves for work. The trick is to get the veggies prepared at night, stick them in the frig in a container so it's easy and fast to make in the morning. If you have to peel, wash and chop in the morning it takes forever.
I just can't seem to get rid of this inflammation in my head and actually all over. It got worse when I had 4 straight days of meat: baby pork ribs, ribeye steak, hamburger, and smoked ham (that was to die for and not salty at ALL). DH will be supportive, but it's going to be tricking going out to eat with my girl friends. Which I did last night and my head feels terrible along with my gut.
I guess I'll start sending out mails to my friends saying I need to try this for a month and see. Thank God Madison has a bunch of vegan restaurants, we'll just have to go to those. Ok, off to HyVee I go to get my goodies.
