For some reason I can't get these 2 things on the same page. My mind says stop eating and start moving and my body says I'm too tired and who cares if you eat another bowl of ice-cream lol

I started this journey (again) at the end of january, vowing it to be the last "start" (again) and so far I haven't actually stopped. Pausing slightly but not stopping and for that I hang on to a little pride that keeps me going. In the first 3 months I lost about 30lbs.

I started picking up the exercise after that and see a personal trainer twice a week ever since. It seems like once I started with the exercise though I just stopped losing and after a month or so of not losing I slowly start slipping into old habits because I can't help but feel like why am I doing this if its not working anyway. & of course while I struggle losing I have absolutely no problem gaining so in the last month I've put on about 8 of the 30 lbs I've lost. It's been about 3 months of no weight loss now but I still go to the gym and work with my personal trainer twice a week. I skipped my last weigh in though because I didn't want feel like an idiot for gaining,

So now here I am, feeling pretty disappointed in myself, & the worst part is I know its a direct result of eating crap. I've been eating sweets and ice-cream like everyday & every time I try to pick up and start tracking again I just tell myself theres no point and I give in to another craving.

I just wish I knew how to get my mind and body on the same level. I don't know why eating healthy is such an epic battle for me.

Made a new dish last night that I've never tried before. Chicken, spinach & artichoke pasta! It turned out really good, & while it does have cheese & pasta it was loaded with fresh veggies! Soo delicious, I will definitely be making this dish again sometime. I'm still surprised at myself on how good of a cook I am lol and that I'm enjoying vegetables because that was soo not like me, I used to avoid veggies at all cost. Now I love trying new ones and putting them into new recipes. Today marks 3 weeks straight of cooking all homemade fresh meals for breakfast, lunch & dinner. No boxed dinners or takeout here anymore! I'm so proud of myself and I feel really good lately! Here's a pic of my latest dinner creation =] ...

Homemade chicken & dumplings, just like Nana taught me =] (well maybe a little healthier ;] ) Soo good though, perfect way to end a wonderful weekend with the family & a relaxing Sunday!

Sorry for all the food blogs lately lol I've just been having so much learning how to make all these new recipes & making them healthier. I'm not usually much of a cook but I didn't know what I was missing! I've made all homemade dinners for 2 weeks & they were soo good. & fun to make & see what I came out with! I've made homemade spinach stuffed shells with fresh spinach, skim ricotta & other low fat cheeses. I've also made white chicken enchiladas, 1st time I've ever had them & they were soo delicious & last night I made homemade Chinese food (baked sesame chicken w/ no breading & white rice! Tonight was Salisbury steak! Yum!

Lunch time

Lunch time was quick & delicious!! Made a turkey bacon BLT on a wrap with romaine, spinach, light mayo, tomato & pepper.. Went really good with a tossed salad. I'm really having fun coming up with new creations & eating healthy (didn't think I'd hear myself say that one! lol) but really a little bit of prep work goes a long way.. I always said it was too hard to eat healthy & I was too busy. How am I supposed to chop a salad with a 7 month old in my arms? Easy answer. Don't. I cut and chopped all my lettuce, spinach, cucumbers, fruits you name in it when I got home from the grocery store and put it all in little containers in the fridge so now breakfast & lunch are soo easy! & for dinner I've gathered a bunch of crock-pot recipes that I put together the night before. I am actually able to eat more & it's healthy & less work. Love when things are easier in my busy schedule.. Definitely makes for a happier momma =]
