Meal Planning for the Week! (with pictures)

I planned my meals yesterday, went grocery shopping, and cooked for 3 hours!

Breakfasts: Homemade Granola Bars and Yogurt or Quinoa w/ apples and cinnamon

Lunches: Superfood Salad

Dinners: Homemade sauce/meatballs, steak quesadillas, Italian Chicken in the Crockpot

The superfood salad took a while to make but I tasted it and it is delish!

No excuses this week!

Tired and Losing Steam, but not Giving UP

Negativity is creeping in.....but I will not give up! I've been having upper back pain wake me up at night and I didn't sleep well at all, so I am sure that is part of it. I will probably have some downtime after work so I am going to squeeze a little nap in there I think.

I need to plan my weekend food (at least what's for dinner) because I know if I don't it'll be chaos.

Any quick/easy/healthy recipe suggestions out there for me to make for dinner tonight?? I have some, but looking for new ideas.

    My favorite healthy, easy meal that takes 10 min to prep and 20 min to cook and is a fabulous complete dinner.

Parchment-Baked Fish and Tomatoes
Aluminum foil can be subbed for parchment to make the packets.
Serves :4

1 pkg precooked brown rice
1 (8-oz.) package haricots verts
1 red bell pepper, thinly sliced
1/2 red onion, thinly sliced
2 tomatoes, chopped
2 Tbsp. capers, drained
8 green olives, quartered
4 (4- to 5-oz.) white fish fillets, cod, bass etc.
1 tsp. salt
1/2 tsp. pepper
2 Tbsp. olive oil
1 lemon, wedged
1/4 cup fresh basil

Preheat oven to 400°.
Divide first 6 ingredients among 4 (17-inch) squares of parchment paper. Top each with 1 fish fillet.
Sprinkle fish with salt and pepper; drizzle with olive oil.
Squeeze juice from lemon over fish; place 1 lemon wedge on each fillet. Bring parchment paper sides up over mixture; double fold top and sides to seal air tight, making packets.
Place packets on a baking sheet.
Bake at 400° for 20 minutes or until a thermometer registers 140° to 145° when inserted through paper into fish.
Place each packet on a plate, and cut open.
Sprinkle fish with basil.

The juices from the packet are heavenly. Less than 400 calories.

    Sorry about the back pain!
We keep rice paper around. On days when no one wants to cook (kids are old enough to help), we make a variant on spring rolls. Usually we have shredded cabbage, but other veggies work, too. Usually raw, but sautéed works, too. I like tofu, daughter likes hardboiled eggs--both are generally available. DH likes to add meat if we have any (lots of vegetarians in the house, so he often goes for tofu). Just soy sauce (maybe with wasabi) works, but sometimes I'll make a peanut/coconut sauce. And that works, too. :-)

We put it out like a salad bar, so no one complains about having too much green onion or not enough tofu.

It's basically just a fun way to serve whatever's already on hand. And if you get pre-chopped veggies, preparation is really easy.

Guess what we're having for dinner?

Your Mind is Your Instrument....

Good message for today:

It truly is mind over matter. I feel so good this week, I know there will be "bad" days coming, but I can get through them.

Yoga last night was fantastic. I took Bailey for a 3 mile walk and my back was killing me by the end. I went to yoga and after the first few poses I felt better. Some great messages from last night's Yogi Amy:

Black and White

Hmmm, just read a Sparkpage where the person said that she was very black and white in her thinking. It resonated with me, because what she said is true. That's why she sticks with things then falls off the cliff when she gets tired. Sounds like my behavior.

I'm trying to end the cycle of yo yoing, so I am examining why I tend to fall off. Positive thinking helps. I'm either "all in" or "all out". Finding balance and living in the moment are part of it.

Love My Workout Buddy

So far this week I've been planning my day for calories and exercise up front. I enter my breakfast then put in what I brought for lunch and calculate what's for dinner. It helps me know what I can have for snacks.

Yesterday I asked my hubby if he wanted to go to PF last night, knowing he wouldn't let me back out. Sure enough, I didn't feel like going, but he didn't let me out of it. So glad I went. I managed 20 mins on the elliptical and 10 -15 mins of strength training.
