Spark Cookbook and the Spark Book

I finally got a Spark Cookbook and the book The Spark. I have already started reading the cookbook and look forward to learning how to make better, healthy food, in more variety. I really want to learn to make my own chicken and veggie stock for soups and stews. The cookbook is very interesting so far. They explain how it came to be and taste tests, etc.

I haven't had time to start reading the Spark book yet, but I will soon. I was reading to my husband in the cookbook already and making lists of things I will need. When I finally do make some stuff, I will let you all know how it turned out.

My daughter uses the spark website to find recipes too. I found that YouTube is a great place to learn a few things too. After my fiasco with the mango, I checked out YouTube to learn how to cut a mango. I had never tried mango before....so when I got one....well....it was like a comedy show...."How not to cut a mango"...LOL. I made the mistake of peeling it first, and, well, if any of you have had mango.....you know what a mistake that was! HAHAHA

It was slipping all over the place....I was trying to get the fruit off from around the pit...and....oh well...I managed to get some of it. HAHAHA Now, I know not to peel it first! I could have my own comedy cooking show. I haven't ever been what I would call great in the kitchen. I prefer one pan meals (ya know?). Just throw everything in a pan and stick it in the oven. But I am determined to use my new cookbook and learn some new dishes.

Well, I hope everyone is having a great day. They finally opened our pool at the apartment....so that is my plan for when hubby gets home from work. We are gonna take a swim before dinner.

    I am like you. One pan meals make it easy and less stress.

I come from a long line of fantastic cooks and bakers. If I ask for a recipe, it's always, "until it looks right". I have NO idea what that means. After 21 years of being married, I am trying new things. So far, only a few flops.

I hope you are able to find some good ones that you and your hubby enjoy.

    I remember my first mango. My Mom had opened it (I was at her home) but assumed I knew what I was doing. first attempt sent the mango flying across the tile floors! NOW I know how to open them myself. I love Mango but it was best picked fresh off the trees when we lived in the islands.

check it out! its great just like the cook book except you get to see the author/chef actually cooking some of her recipies and showing you tips and techniques too! plus the data base is really convienient, easy to use and you can log in recipies from SPARKRECIPIES.COM directly to SPARKPEOPLE.COM! Using sparkpeople.com and not using sparkrecipies.com is like having a salad with out its veggies or fruit! LOL

Its great that you are trying new things. I wish I could too, but don't have the budgt right now. Had about 40$ last week to feed 5 people [plus I let Brook and Britney spend some nights over here so actually it was 7 people!] LOL

    Great books. In your SP book, highlight the things that really jump out at you so you can go back for pointers.

    Reading about your mango experience made me chuckle. Friday, my daughter decided to make a coconut cream pie for a sister very dear to us. Coconut cream pie is a favourite of hers.

We found a lovely young Thai coconut at our local store. We have only ever opened the brown, dried coconuts. My daughter proceeded to try to open it up by herself - she wanted to make the pie entirely on her own! After some time, a great deal of frustration and a huge mess, she decided to ask me how to open it. I had no idea! Like you we looked on YouTube. The video made the whole thing look so simple. So, with misplaced confidence, I marched upstairs to assist. What I had to work with was a mangled mess! After several attempts to hold the butchered cocount still we finally opened it up. Next time we have a new food item to prepare, we're starting the process by looking it up on YouTube! LOL

Pita pockets

Yes, pita pockets. I discovered recently how much I love them. I take a serving of meat (turkey, ham, chicken, etc) melt on a serving of cheese (colby, montery jack, swiss, etc) stuff it in and throw in a mixed table spoon or two of peppers (red, green, yellow, orange...all chopped in together...very pretty) and one teaspoon of Kraft Mayo made with olive oil...and you have the best tasting sandwich in the world! LOL! Add a generous helping of cucumber and cherry tomatoes on the side and you have a delicious meal for under 300 calories! That was my breakfast this am. Oh, and of coarse a cup of herbal tea!

What are some of your favorite meals? I would like to know. Maybe it can become one of my favorite meals too. :)

Well, I hope everyone is having a wonderful day. I need to go clean up my kitchen now and prep some veggies for the week. It is "wash the lettuce day" lol.

    I love to take a yam, sweet potato, onion, mushrooms, cauliflower, broccoli, carrots and cook them in a small amount of olive oil. When its done, put in a can of progresso chicken or beef barley soup. Divide it up and you have a great tasty meal low in calories high in veggies.

    I have a yummy soup that I copied the recipe from Olive Garden. It's the Tuscana soup. I would be happy to share the recipe with you. I make it for 5 (three of those are BIG boys). You will have to either freeze it or can it if you make as much as I do. It only takes about 45 minutes to make it. Only 300 calories per serving too.

    You can do similar things with a tortilla...just lay it out and roll or fold. I have been trying to add 1/4 cup spinach to every sandwich it will work with. Wish we could all get together for sandwiches ...be they pitas or tortillas or anything else. Wouldn't that be FUN! emoticon

Up Early

Well, we are up early. Got up at 6:15 or so. Wanted to workout and have breakfast before my bath for service. We have to leave in about an hour and it takes me that long to get ready. LOL I am drinking my after breakfast tea while I catch up on my logging and blog.

We went to a movie yesterday and took our own snacks. A bottle of tea and some pretzels and a skinny cow candy bar. 400 calories total. I counted it as a meal and didn't do any damage to my calorie count. Yeah!

I read an article about how coconut oil can help energize your thyroid so I am trying it. I started with my dinner last night. I am going to add one to my vitamans each meal and then wait a week, then start taking two with each meal. I hope it solves the problem I am having with my weight loss. I have been working out EVERY morning for a month and logging 99% of my food, but still not seeing the loss I would expect. I had a thyroid test about a year and 1/2 ago and the doc said it wasn't quite normal. I am glad I read the article so I could try the coconut oil. I'd rather not take meds if I dont have too. We are going to give it a little time to work before re-testing. Since your thyroid controls metabolism, it could be the reason I am having so much trouble seeing any good losses. It has taken me since September, 2011 just to lose 25 pounds. (Granted, I had a few setbacks with the fall last winter, and the flu in January and February) I hope I start seeing more progress.

    I have never even seen coconut oil anywhere here. Interesting to see if it will stimulate your thyroid. If it is all that, it will probably be an ingredient in the OTC medications. Take a peek next time you're in a pharmacy.

    I hope the coconut oil helps :) its so encouraging to me to see you trying so hard! you deserve to see wonderful results and I know you will. dont give up no matter what. i read before that even a person who is over weight can be healthy BEFORE they actually lose the weight by making the right changes. so dont ever feel like your waisting you time and effort on exercising and eating right, because you're not! Your body knows the difference even if the scale doesn't!

    The trainer at the gym suggested that I drink whey protein after a workout with weights. When I started drinking it (it is very nasty to me) I lost about 12 pounds in 3 weeks without changing my eating habits. I keep forgetting when I get home to drink it. I really don't like the taste of it, but the results were incredible.
The trainer suggested not to mix it in milk. I have tried it in apple juice, water, yogurt, applesauce....Nothing can make it better. I will have to try a different flavor when I run out of this one.
I would definitely ask your doctor to make sure it's ok with them before starting anything like that. (If you want to, you don't have to ! lol)

I bought a "muscle milk" chocolate flavor from the gym today. It had the same nasty after taste, but it wasn't as hard to get it down.

I hope you get the results you want soon.

    I use coconut oil alot. I dont detect any kind of taste one way or the other. I just know it is good for me :)

    I use coconut oil also. My daughter REALLY has gotten proficient and cooking and baking with it. My husband says he doesn't like it, but I notice he eats many things w/coconut oil without fussing. Some things really do need olive or vegetable oil. Sure hope you aren't having thyroid problems. That is one area to be very careful so I am told.

26 Years today

Today is our 26th anniversary. DH and I are going to study and go to meeting. That is our plan. Tomorrow is play day.

I wanted to thank everyone who reads my blogs and encourages me. And thanks to the friends who told me happy anniversary.

I am getting ready to do my workout so I can eat a very late breakfast. LOL We slept in today, was up too late last night goofing around and watching a tv show we like on netflix. ha haha Dont get to do much of that anymore.

Busy Days

Hi everyone, the last few days have been very busy. My hubby is off work this week so we are taking advantage of it. Monday we went shopping and to a movie and dinner since our anniversary is Thursday and we will be at the meeting. Yesterday we cleaned the whole apartment, cleaned curtains, washed rugs, cleaned windows, yes the whole nine yards. And today it was physicals, blood tests, mammogram, and I got a shot. Just got home a little while ago to eat a very late lunch 4:30 pm. We had breakfast around noon. Now we are gonna relax and just enjoy eachothers company. Tomorrow is study and meeting day. Friday we have decided will be a play day lol.

Things are busy here too. Also .... we lost a brother at a our Hall... I'll tell you about it later. It wasn't anyone you knew though. Besides that it was going good. A little depressing right at the moment however. But we are all keeping our chin up remembering Jehovah's promises. I been work work working, lol. So going to lay down now. I been up since 4:45am! Had to open at the story today. Ready for my beauty sleep, hahaha.
