This was a great Michel Richard recipe. Relatively easy, beautiful looking, and healthy. First a pocket is created in a salmon filet and light steamed asparugs is inserted inside. ![]()

This recipe cleverly used rice paper to contain romaine leaves to make a utensil free salad. It is called Romaine on Romaine because the dressing/dipping sauce also contains romaine lettuce. And it uses the lettuce ribs chunked up to create texture. Michel Richard described it like having blue cheese chunks in the dressing but that description was a bit of a stretch for me.

It was good. It was a basic shallot/basil dressing. There was no blue cheese in it. It had chopped up romaine ribs meant to resemble blue cheese.
