... I love this workout and I especially like the heavy bag section, but I don't have a heavy bag... so one day I decided to create my own... I have a tall radiator in my room and it is near the television and I thought, hmmmm, maybe I can stuff some pillows in a pillow case and sit it on top of the radiator... This is the result...

This is what I ate today...

Breakfast: 7:30: 2/3 cup McCann's Apple-Cinnamon Irish oatmeal, 1 tsp. Fiber Sure (5 grams soluble fiber) ... 1 scoop (24 grams) protein powder and water...



Snack 1: 10:00 1 cup cottage cheese topped with 1 cup: blueberries, mango, strawberries, pineapple and papaya...




12:30: Lunch - 5 ozs chicken breast, 1.5 cups string beans, roasted sweet potato salad, water...



Cafe Vienna Sugar-free International coffee, 1 tsp Fiber Sure soluble fiber (5 grams)...



3:00: Snack 2 - Dannon Light blueberry yogurt (6ozs), .5 cup blueberries, .5 scoop (12 grams) plain Designer Whey protein powder, water...



6:00 Exercise...

7:30 Dinner - 7.2 ozs oven-fried catfish. 1.5 cups mixed greens... I forgot to take a photo...

I gotta ask..you don't eat at your computer, right? Tell me that's just where your camera is. That is the Mommy in me. Gotta make meals an intentional, mindful act of fueling your beautiful body with wonderful, healthful, flavorful foods - not something you mindlessly shove in your mouth while doing something else.

    You eat 100x healthier than I do! If I could only gravitate more towards healthier?! Well, I had 1%milk with Alphabets cereal & yogurt breakfast, midmorning c. grapes & pineapple, 1 serv Red Vines. Lunch I had 4TBSP of Lasagna, 1/3c of mushroom & chicken soup. Dinner half grilled hamburger on bun, late night snack, red vines & c. of? You guessed it Alpahbits & 1%milk. I slept tight. Workout walking, push & pull weights. One day . . .

    Your food looks so good. I had about five cups of frozen fruit for breakfast which I put in the blender with protein and fat free milk. For lunch I had a grilled turkey burger. Dinner was grilled salmon. So I'm staying on point with you.

Love the picture blog. When I get it together I'll send some pictures. When I get a few more blooms I'm going to post the pictures. Promise.

I am having roasted sweet potato salad with my lunch tomorrow. I had purchased this salad awhile back from the small cafe in our building for 4.95, and I was determined to figure out what was in it so that I could make it @ home. Today, I decided to try... the roasted part wasn't hard, but getting the taste of the dressing/seasoning was the challenge! The base is olive oil, and the seasonings are: chili powder; cumin; salt; jalepeno (diced); roasted red bell pepper (diced); green onions (bulb sliced thin/tops, diced) and red pepper flakes... I also added a teaspoon of Mongolian Fire Oil.

Normally, the only time I eat yams and sweets potatoes is on the holidays, but thanks to MARVELOUS50s, they will be part of my regular meals... Unfortunately I didn't measure the ingredients, but I will be making some more this week and will make sure to do that so that I can add it to my nutritional tracker. The recipe turned out perfect and at a fraction of the cost!!!! I will share the recipe once I figure it out.

I love fried catfish, or any fried fish for that matter, however, I know it's unhealthy, so I decided to try "oven-frying" it... and it actually turned out pretty good! Since Catfish is a fattier fish the nuggets are perfect for this method of cooking.

Calories: 8ozs = 320 (... weighed frozen)
Fat: 10 grams
Protein: 30grams

Yellow corn meal: 3 tablespoons:
Cal: 90
Fat: 1
Carbs: 18
Fiber: 3
Protein: 2

Total: 410, Carbs: 18, Fiber: 3, Fat: 11, Protein: 32

Method:

Preheat oven to 425, however, since I have an electric/convection oven, I think my temperature is set to 325/350... Line a baking sheet with aluminum foil and coat thoroughly with cooking oil...

** I season the cornmeal and fish with the following: Chef Merito, Chicken seasoning (Sazonador para Pollo); coarse black pepper, onion powder, & chili powder...

- evenly coat each piece of fish with the cornmeal

- place on the greased baking sheet. Coat the tops of the nuggets with cooking spray until wet.

Bake for 15 minutes in the preheated oven, or until fish is brown on both sides and easily flaked with a fork.

  Thanks for sharing on SP. You have been a real inspiration to me today. I have just joined this team after reading some of your blogs.
My eating has been out of control and since I have diabetes that is especially harmful to my health. I think some new recipes will really help. Can't wait to try this recipe as catfish is a favorite but we usually grill it.
Also look forward to the sweet potato recipe. I don't usually eat potatoes but occasionally would like to have a sweet potato.
Am going to read more of your blogs today to hopefully find more recipes.
Again, please keep posting for folks like me.
