I don't like Thanksgiving...

...Ok, don't get me wrong...I love being thankful and thinking of everything I have to be thankful for. Honestly, I hate the food. I'm a vegetarian with a family full of meat-eaters (I sound like a teenager, I know LOL). So, every year for Thanksgiving, we eat lunch with my family & drive the hour and a half up to Northern VA for dinner with my husband's family. Every year, at both places, I eat rolls, asparagus, and maybe some mac & cheese...that's it. That's my Thanksgiving. Everything else is full of meat! The turkey, stuffing, Mom puts bacon in the corn and green beans, the mashed potatoes have gravy all in them, and I kinda can't win...so I grab another roll and remember that I should be thankful to have food in the first place. Just needed to vent for a sec...I feel a little better! :)

    Is there any way you can make a dish or two to bring with you to these dinners? My family tradition is (pretty unhealthy, but it IS a food holiday) a mushroom-swiss pie with phyllo. Even non-vegetarians love it!

I'd also make a request that some of the veggies be made without meat - that's never too hard for most people.

    My sister is a Strict Vegatarian and I always make a few special items just for her to enjoy.

8K, I did it!

So I ran the 8K on Saturday & had a great run! It was easier than I remembered and the weather was perfect for running...cool and crisp. Then, yesterday I went on a 2 mile hike up Crabtree Falls here in VA (gorgeous hike by the way). Needless to say, I'm a little so but I feel awesome! There's a little 5K this weekend that I'm thinking about doing and a co-worker just told me about a Saturday morning running group that I can join. I'm excited about that because I can keep up my running once a week and do my DVD's the rest of the time.

So, next is the 5K and the 10K is in March...stay tuned for the blogs on training for the 10K! :)

Training for 8K

So, now I'm just conditioning through workout DVD's this week. The race is this weekend and I hope I'll be OK! I figure as long as I'm still working out & keeping my lung capacity and heart rate going up, I'll be OK to run. We'll find out! :)

I started this morning with Jillian's 30 day shred, level 2. In the mornings, I'm limited to short workouts, so I plan to do another Cardio DVD tonight as well. Tomorrow, I'll do a cardio DVD in the morning, and Wednesday I'll do Jillian's shred level 3...then another cardio Wednesday night. :)

OK, so now I can't run after work! The 8K is in 2 weeks and it gets dark by the time I get home. I think I'm going to switch to cardio DVD's during the week and keep with my long run on Saturday mornings. Then, I can keep my workout routine after the 8K as well! :)

I ran 3 miles yesterday & it felt so good after missing 2 runs from my cold. I plan on running 4 miles tomorrow and feel like I'm picking right back up! Yippee!!
