... that someone might be looking
Tonight was another good day for low GI cooking. Me and hubby are low-carbing for a few days. I like to low-carb for 2-3 days at the beginning of each week to help jumpstart me and shake things up.
For a snack I had a Tzatziki salad. I diced tomatoes, cucumbers, green peppers, and red onion, and mixed them with a bit of lemon juice, Greek yogurt, salt, pepper, and dill. Yummy. I had a hard-boiled egg with that to round out my protein.

I substituted processed cauliflower for the rice and left out the mozzarella cheese. I also just used tomato sauce with spices, lots of fennel, I like fennel. It was great. You have to cook the "crust" part for a while to get it not soggy.
I got to use my new slaw-making tool I found on clearance at Target. It was awesome!
Ok, today has been good, so tomorrow's weigh-in better be great!

... a field that has rested gives a bountiful crop
Today I did pretty well. I did have some ice cream at our local farm stand topped with homemade raspberry sauce, but that was it. Otherwise, completely on track. We even had a vegetarian dinner tonight, black bean cakes and cheesy Mexican rice. Yum! I'm trying to throw in the occasional veggie meal to save money, bulk dry beans are super cheap!
I also did a workout both this morning and this evening, which is way better than last weekend. I'm aiming for another good day tomorrow so that my weigh-in on Monday will rock! Me and DH are also planning for a few days of low carb starting tomorrow, so that should help my weigh-in too!

... in another city
Today was a good day, which makes up for yesterday being pretty much awful. I was on track today, but decided to have a cheat dessert so that I can be good all weekend and have an awesome Monday weigh-in. At least, I can hope for that!
Anyway, I did my turbulence training workout tonight, so my ice cream treat was at the perfect time for my body to use it most effectively.
Time to go rack up more sparkpoints for my 8-Week Battle team! Go Yellow!

I am still on track this week, hooray! My labwork is not quite on track, and it left me with a slower than expected afternoon where I had to fight off some chocolate cravings. I made it, with the help of my friend and some Yerba Mate (best stuff EVER, too bad it only grows in Argentina).
I did some Mayhem Challenge work tonight, and still plan to do the homework if I can as well.
Time to get myself a post-workout snack of my frozen treat from yesterday, some real fruit, some cheese, and some nuts. It's a nice, filling, satisfying, well-balanced mix.
We are watching the Mummy tonight. Bad movie, but the leader of the protector gang is so hot, and Brendon Fraser isn't half bad himself.

Today was extremely busy at work. Typically that's somewhat good because I don't want to snack during the day. However, I always feel more hungry when I come home afterwards. Fortuntately, there is a load of fresh fruit in my fridge, so I snacked on raspberries and blackberries.
I made an excellent not-too-bad-for-me sweet treat tonight! I mixed one brick of lowfat cream cheese with one tub of Cool Whip Free and fruits: 1 cup blackberries, 1/2 cup each of raspberries and cherries. Mix with hand mixer and freeze, no added sweetener needed. I had just a about 1/4cup tonight with some fresh cherries and cheese and nuts. Perfect!
Me and hubby took a nice walk tonight as well. I'm aiming for another busy day tomorrow, should be fun.
