Breakfast was not a pretty picture, but I did have breakfast. I had these great plans for an omlet, yada, yada, yada....This is what I actually ate...
After adding the milk-Cost=299 calories
Hmm...not really a nutritious choice, not really a filling choice, but it was fast, and easy and therefore, I did eat breakfast. Maybe I'll have that omlet tomorrow...
Lunch, well, apparently I have trouble scheduling my meals because lunch didn't really happen, what did happen was a late snack... and...
Cost of snacks=370 calories
I reused the picture from yesterday since I had crackers and cheese again. It was not creative, it was not special, but it was fast and easy. I also had the last brownie, a smaller less caloric version than last night's thanks to my kids and hubby polishing off the pan except for that one last lonely brownie.
Dinner, despite a goal to do a bit more planning for dinner, I realized, a little too late, that tonight was baseball practice and dinner had to happen FAST!! So here is dinner...
This was not too bad actually. This is Golden Grain Mission Rainbow Radiatore Pasta, Ragu Garlic Alfredo Sauce and frozen spinach I nuked in the microwave. I actually tossed a bit more spinach on there after I took the picture, once I stirred it all together it wanted more spinach. Very fast and very delicious and really not too damaging on the caloric scale. I was kind of impressed with the final result here. There are supposedly some lower carb alfredo sauces out there I will have to keep an eye out because overall this is something I would definately make again. I picked up the alfredo sauce on a whim since it was like 98 cents on sale and I like to keep spaghetti sauces on hand for just such a situation as tonight. The spinach was a great touch and while I added the spinach to only my plate (kids weren't interested) I will probably stir it into the sauce in the future, there was only a slight spinach taste once stirred in and the kids would probably eat it if they didn't see it go in (sometimes we moms have to be sneaky that way).

So, I need to go find a snack and use up a few more calories, didn't really use enough today. I might have a few more crackers or an Odwalla bar. Sounds good....

The challenge (for bonus points) this week is to keep a food blog Monday through Friday.
Monday did not get off to such a great start when I missed breakfast (gasp, shock, dismay). I know, I know, most important meal of the day, helps you eat better the rest of the day, blah, blah, blah. I KNOW!! That didn't change the fact that at breakfast time this morning I just did not feel like eating. So, no breakfast=no breakfast picture.
Next up, snack. I did have a snack. Here it is...
A cheese stick with 7 triscuit crackers. Filling with whole grain and protein for sustained fullness and energy. Yum!! Cost=200 calories.
Then lunch. I haven't had time to shop for my regular groceries and had to go off what was in the house to create my lunch. Here we go...
Tuna fish with 1 tablespoon mayo, green onion and walnuts on toasted (a little too toasted) whole wheat sourdough bread. Another cheese stick (just sounded good) and a fruit cup I "borrowed" from the kids. That sourdough is some of my favorite stuff on the planet but it comes with a big caloric price tag so I limit myself to a couple slices a week (usually a sandwich) and keep the loaf in the freezer. I toast it to defrost it and got a little carried away today so it got a little dark around the edges. Still delicious. Usually I add tomato and lettuce to my tuna fish, but used the last tomato over the weekend and my salad turned a corner over the weekend (ewww) so I added walnuts for flavor. Not an ingredient I usually put in my tuna, but was very yummy anyways! The fruit cup was only okay. I probably won't "borrow" those anymore and might not buy them period. Just wasn't that good. I can do better for myself and my kids. I was thankful to have it today since our "real" fruit was still at the grocery store-lol!
Lunch was "expensive"-cost=654 calories.
Next, dinner. No afternoon snack today. Lunch and dinner were close enough together that I just wasn't hungry. Dinner-
Homemade Pizza. This has been on the menu for a bit and kept getting shoved off due to busy days so the kids were glad to finally get their pizza. I tested a new crust recipe today so I used all white flour where I usually use wheat. The recipe was delish so next time I make it I will substitute half the flour with wheat flour and up the ratio each time until I find a good balance of wheat flour that my kids will still eat. The pepperoni is Turkey pepperoni which I have discovered I prefer to regular pepperoni. It is drier, not as fatty and has a flavor that I actually prefer. One slice comes in at 205 calories. The other is Canadian Bacon, Cashew and Pineapple. This is a family favorite. We live in California if that helps explain why we would ever put pineapple or cashews on pizza. Trust me, it is DELISH!! I make my sauce too so we save some sodium there. The canadian bacon pizza comes in at 295 calories a slice (my slices are 1/6th of the pizza-good sized slices). I calculated out the calories based on all the nutritional info provided from the recipes for the sauce and crust and the packages of the other ingredients. I weighed and measured EVERYTHING. We also had some fresh, chilled watermelon. I had a slice of each pizza and with the watermelon dinner cost=524 calories. That is pretty good for two big slices of pizza and watermelon.
Well here comes desert...
My husband made brownies, shame on him!! Thanks to not having breakfast I had some calories to waste and waste them I did to the tune of 340 calories according to the mix's package. Skipping breakfast to have a brownie for desert is not something I recommend doing. However, I was prepared to skip the brownies and let hubby and kids enjoy the ooey gooey choclatey goodness. But, lucky me had extra calories!!
So, how did I do for today?
Allotted calorie range=1,590-1940
Calories used= 1,718
Lookit' that...I could have another smallish brownie!! Bad idea 'cause even though I am in calorie range I went over in carbs AND protein. All that tuna, plus the cheese sticks, plus the meat on the pizzas...and did you notice that LACK of vegis and fruit on my plate today? I still haven't made it to the market but I do have more watermelon and I've got some frozen vegis. Maybe I'll add some watermelon for an evening snack and tomorrow I will have to plan my meals from beginning to end a little bit better. I kind of just went with what sounded good today and while I was still able to keep the calories in range I didn't exactly have the most nutritious day.
I did take a walk for exercise though!! It was such a beautiful day I decided to ditch the videos and just go for a walk to pick son up from school. Getting back into the swing of things....

Had a rough morning. Not enough sleep or cough syrup hangover, either way I felt shaky and dizzy all morning. Therefore, skipped aerobics class this a.m., sparked instead. So, exercise will come later today when I am on more solid ground (from experience know the dizzy, shaky stuff will go away). So, I've got a decision to make....Jillian, Tae Bo, Power Yoga, or Kathy Smith? Decisions, decisions. It's been so long since I've done any of them that I really don't have a preference....Hmmm. Maybe I'll flip a coin or something! Time to get busy. Weekends are always hard on my house-LOL!! Back later with a food blog for the SIS Challenge...

It has been kind of a rough road to recovery after this last illness. I felt better on Monday and intended to work out more often this week, but ended up doing nothing that resembled exercise. I justified my lack of fitness activities with "I'm still recovering" and to some extent that was true. There were a couple things that threw me off this week.
First, my cough syrup. This is wicked strong stuff. I don't think I've ever taken a med that has thrown me off like this stuff. It is to be taken at night only, it totally knocks me out. I get the best sleep I've gotten in a long time so that is good, I'm really enjoying that part. The bad part is that waking up in the morning is darn difficult. It also makes me a little dizzy so waking up and getting moving in the a.m. is hard. It takes a couple hours of being awake before I feel awake, even then there have been a couple of times when I've caught myself needing a short nap in the morning before I truly feel awake. I'm not a coffee drinker so no assistance there-lol! I didn't go on my regular morning runs this week because of that.
Second, I've been sick so long that my house has truly suffered the consequences. Hubby is okay at helping out around the house and the kids can clean up after themselves to a point. But, once there are so many toys on the floor that you can't see the carpet they say it is too much and they can't do it and mom has to get it back in shape. Well, basically, for two weeks I didn't even look in their rooms and when I got to feeling better and took a peek it was obvious I would be spending a lot of time fixing the disasters that had happened. Even my room was a disaster of laundry waiting to be washed or folded or put away. Eeek!! Dishes were taking over my kitchen despite the fact that I really hadn't done much cooking for a week. My kids were in easy to cook and not necessarily healthy food heaven for two whole weeks. Every day it was get the kids off to school and then come home and start the project for the day. One day the girls' room, then the son's and then mine and then the living/dining room, etc. I kept thinking I should go to aerobics, but the job of putting my house back together seemed the more important thing to do. Now my house is resembling a home more than a garbage heap again so that excuse has been resolved too. I even cooked REAL food for dinner last night. Wontons and egg rolls baked in the oven instead of fried. Son LOVES cream cheese wontons so a half batch of those to limit the number that could be eaten (filling is the 1/3 less fat cream cheese, green onion and garlic). Egg rolls filled with cooked ground turkey, cabbage, bean sprouts and carrot, drizzled with oyster sauce. Spray everything with PAM and stick it in the oven at 450 for about 15-20 minutes. Yummy!! Some broccoli with cashews and garlic sauce and we are good to go.
So, anyhow, obviously today it was time to get back on track. Today was supposed to be a long run-6 miles, we decided that would be a bad idea, so we switched the schedule around a bit and ran the 5K scheduled for next week today. Unfortunately, I couldn't remember the 5K route-lol!! I made it up as I went along and am estimating that I ran the first 2.5 (stopped to stretch twice-feeling a little tight today for some reason-hehe). Then I walked the rest of the route and probably hit the 3 mile with the last bit of walking. All together I am very happy with that. It felt really good to get running again. It felt really good to get the body moving and the lungs working and it even felt good to sweat again, and not from fever ;p!! Next week back to the regular schedule again back to aerobics (though I'll probably take it easy there and focus more energy on the running for a couple of weeks) and back to running and back to strength training. It's good to be back!!
