Just another day in paradise...

This time of year I am very glad I live where I do. Our weather has been absolutely gorgeous!! Computer says it is 81 degrees outside. Remember the days when you would check a thermometer to see how hot is was, now we check out computers-LOL!! The sun is shining, the birds are singing, there are occasional cool breezes carrying the smell of roses in bloom as well as jasmine from next door, we walked past some wisteria in bloom and daffodils are everywhere. My daughter suggested we walk to pick up son from school today and we all thought it was a great idea, we even took the dog along.

We didn't realize how warm it was though and didn't take water with us. We were all a tad wilted by the time we got home, but glasses of ice water perked everybody up. Even the dog was wilted and for a beagle that is rare!! He got a bowl of water with a bunch of ice cubes thrown in and seemed to appreciated it. The nice thing is I already got in my outside workout for the Done Girls Spring into Summer challenge this week. That was an EASY 20 points!!! I would have gotten in an outdoor workout later in the week with my run in any case, but the walk was very nice. That on top of the aerobics class I went to this morning and then the strength training I did when I got home-I am racking up the fitness minutes today!! I might have to walk everyday to pick up the kids. I might have to alternate between picking up daughter walking and picking up son walking though. If son had to walk EVERY day he might have a fit. It really isn't fair to him. I have a stroller that will hold both girls so they don't have to walk, but if I kick out one girl so he can ride then I can't push the stroller, he is just getting too big!!

Now I am getting tired, time for a nap? Nah, it is not quite 4 pm and I have dinner to make (Mexican Turkey Burgers-yum yum and Spinach with a twist-brand new have to see how it goes) Mexican Turkey Burgers are a favorite-ground turkey mixed with some taco seasoning and some salsa and shaped and baked like a burger, served with additional salsa and lettuce on a tortilla! Spinach with a twist is spinach-lightly cooked with sauteed onion and diced tomatos sprinkled with Roquefort cheese, which I don't have so Asiago, Cheddar, Feta or Parmesan will have to do. Look at that four kinds of cheese in the house and I don't have the right one!! I was going to make a tomato dish tonight, but my Mom is eating with us so I switched to the spinach because I know she will help me eat it if everyone else turns up their noses!! The tomato dish I can alter easier and make just enough for me because I already know nobody else will eat it-I am the only tomato lover in my house. Lucky me!!

Okay, time to move along. Hope everyone has a great week and hope at least most of you get enough nice weather to do something outside this week!!

    Oh my word it sounds like beautiful weather near you and what was spring has turned to winter again (weatherman said snow sometine this week- damn).
School walks are rare over here the kids are too lazy and take the bus.
Not like in my day.....I feel old all of a sudden emoticon

Well, here is the good ol' So. Cal. (Southern California) it is already summertime. While parts of the country and our northern neighbors (Canada) are still struggling with cold weather and in some cases snow, we are already basking in the glow of summer-80 degrees and up with beautiful cooling breezes every afternoon and evening. This must be what it is like in Paradise, maybe a little less pollen and smog, but hey, what more can you ask. So, what is wrong with this picture???? Everybody and their dogs are grilling. What are they grilling? Steak and Brats are what I keep smelling.

Last year we stopped buying red meat, for the most part. My husband is a confirmed meat and potatoes man and I can keep him happy with chicken most of the time, but on special occasions, like his birthday, my birthday, our anniversary, and our biannual date night, only a steak will do. And we do save our red meat indulgence to pretty much those special occasions, a steak 4-5 times a year is certainly within reasonable bounds. Especially when it is an actual serving of steak and not something you get from Outback Steakhouse. Unfortunately, the smell of steak can still make me drool. Yep, drool!! Hmmm steak sounds so good. But, our oven baked fried chicken was also delicious and a new recipe for Broccoli with Garlic and Cashew sauce-oh my goodness!! So yummy. Does have soy sauce, but I used the low sodium variety to cut some of that and cut the amount a little short. Mmmm good stuff.

I made my enchiladas last night. They were yummy. Very mild. I might put more chili powder in next time. Basically it is potatoes diced and tossed with cumin, chili powder and ketchup then roasted in the oven until tender (I cooked them until barely tender because they go in the oven again and I like my potatoes with some firmness). After cooking mix those together with canned pinto beans ( I rinsed mine-also my sis suggested black beans and those would probably be delish too), cilantro and queso fresco. Wrap the mixture in corn tortillas (which are supposed to be lightly fried in oil, I put mine in the oven instead). Sprinkle the top with more queso fresco and then pour over the top a sauce made from tomatillos, cilantro and onion boiled for a few minutes and then pureed. Put the whole thing in the oven and here it is

The white is the queso fresco, I should have broken it in smaller pieces, but I left it chunky so there would be spots with and without cheese in case the kids decided they wanted one or the other!! My kids are very reluctant to try new things, but hubby and I liked this. Next time I will probably try black beans and I might add a little green chili to the filling. For my tastes it was too mild, but most people would probably find it just right. Fun to make too. Took a lot of time to finish, so I was wise to set it aside on my busy Friday, but it makes a great weekend meal. Big dish of enchiladas too so hubby and I had more for lunch today. A serving of two filled tortillas was under 300 calories and would be even less than the recipe said since I did not fry my tortillas in oil. Know what would be really good in those enchiladas, some steak!! emoticon

I got the recipe out of a cookbook called Easy Everyday Favorites. It was produced by Allrecipes.com-my favorite cooking website. I love to use the search feature where I can put in ingredients I want to use and it gives me a selection of recipes meeting my criteria. Comes in very handy when I want to try produce I've never used before and don't know what to do with it!!

    You're a great cook Heather and keep the ole man away from red meat- something DH refuses to exchange for chicken and fish like me so I need to cook twice LOL.
Not that I mind but I wish he'd try more fish......would make life so much easier!
I can't abide steak now or sausages; Saturday DH made himself a sausage sandwich for lunch. When I came home and kisses him hello it was like EEEEEEEEWWWWWWWW emoticon

Commited vs. interested...What are you committed to?

Another quote of the day blog plus yesterday was my Sparkversary and I was too busy to realize it until much later in the day!! emoticon

Today's quote of the day is awesome!! "There's a difference between interest and commitment. When you're interested in doing something, you do it only when it's convenient. When you're committed to something, you accept no excuses; only results." Kenneth Blanchard.

WOW!! What a great quote for today. Am I interested in Sparkpeople or committed. I would like to declare that I am COMMITTED to Sparkpeople!! I have been active on the site for a year now. I have overcome obstacles that would keep me from participating (like a dead computer) . I have come on days when I really would rather not, I've learned a lot, kept myself active and had a wonderful year here on Spark!! Take a look at my page, look at the date for when I became a Sparker. I think it says something like 2005. It took me 4 years to become committed, but I did it!! I made a committment, kept the committment and here I am a year later still committed!! Are you committed?? If you are just post a yes at the bottom of the page!! :) ;) :-)...

I am committed to running!! This morning I woke up and didn't really feel like getting up. It's been a long week, I had a lot to do, the kids had short days at school all week (parent-teacher conferences) which messed with my schedule, I stayed up too late last night watching Twilight and New Moon back to back (it was actually very nice because husband was out and I had sleeping kids and peace and quiet). I wanted to sleep this morning. Running was the last thing I wanted to do. But, I hauled my tushie out of my nice cozy bed, got dressed and went running. It was a great run too. No record times today, but still a good run. I didn't push too hard, just hard enough and had a great time. It felt like my tush and thighs were made out of lead, they did not want to participate, but when I was done and had gone the distance it felt GOOD!! I am committed to running!!

I am interested in eating right. Oops, yep against the criteria of the quote of the day I am merely interested in eating right. Year two is the year to commit to healthy eating. I did not make my enchiladas last night, too busy, we are having them tonight instead. I decided the tomatillos could wait one more day. Instead of running out for fast food or ordering a pizza I just changed the menu a bit and opted for tuna sandwiches instead. The kids love them (except the 3 year old-this is the only time I make an exception to you eat what I fix, she asks for peanut butter instead of tuna and since it is still a sandwich I concede) and I make mine and husband's on whole grain sandwich thins (yummy). Why don't I make the kids on the same bread?? Well I have several reasons, among them the kids are convinced they don't like wheat bread and second I feel bad wasting the "expensive" bread when they won't eat it and they will eat the .88 cent a loaf bread. If I am committed to living a healthy lifestyle I need to find a way to convince my family that the way I want to eat is the right way at least most of the time. I can make healthy choices when we eat out and the kids need chances to make choices for themselves so that they can learn how eating right works and so they can learn what "special treat" means (not an everyday indulgence, but something you can have occasionaly if you make proper choices the rest of the time). So 2010 is the year to commit to eating right!!

I am also merely interested in strength training. Which is sad because I know the difference it can make. 2010 is also the year to commit to strength training!!

It has been a great year. Looking back there is so much that has happened personally and related to Spark. I ran my first 5K, I ran on Thanksgiving day instead being lazy, I am training for my first 10K and I am looking at signing up for my first half-marathon. I've lost a few pounds and am fitting into clothes I hadn't worn for a long time. I have bought a couple pieces in smaller sizes than I've worn in years. I am eating healthier a lot of the time and I am healthier than I was last year. What a great year it has been and what a great year it will be!!

    I feel you! I loved this blog -- it's such truth! I hate when people have lost 5 pounds and cannot get motivated to do more work to continue losing, but cannot figure out why they are not losing. Between all I do in a day, I really can't believe excuses. There are times when I literally cannot find time to do workouts because if I lose sleep, I can't function the next day.. BUT usually when I'm that busy, I eat less because I have no time haha.. so it works out ok. However, I HAVE to make myself go to workouts.. it'd be so easy not to, but it's worth it. Anyway, I just love your blog!

Help!! My life is running out of control and I can't find the emergency brake!! I am only blogging today to maintain my sanity!! My status went kablooie right after I typed it. I left the house to go take the kids to school and stupid mommy mobile wouldn't start-AAACKK!!! Fortunately we live close enough to walk to school, unfortunately I didn't leave enough time for that contingency!! So we walked VERY, VERY fast to school AND still made it in time!! Wheew, that was close, almost blew the perfect attendance with a tardy today, my son would never forgive me!! At least I got in some cardio-LOL!! So, car is hooked to charger which means no aerobics class, which means a video, because I am not missing out on bonus points in the SIS Challenge because I did not get 300 activity minutes this week!! That means daughter is just going to have to find something to do while I workout. Maybe I can dress her in "messy clothes" and let her paint. Which is brings about the rest of my day!! I still have to finish painting the banner for son's baseball team. I've got most of the color down but still have to finish my marlin (Son's team is the Marlin's) and most of the outlining-which takes the longest anyways-need to keep a steady hand-no slapping down paint on that part. I also still have to sew on the binding, which is okay because I have to get out the sewing machine anyways because hubby needs a pair of pants hemmed before 5:00 tonight. I have to go get the kids one in an hour and a half and the other an hour after that-hate short days-really screws up my schedule!! Don't forget about lunch and dinner prep. I am making potato and bean enchiladas tonight because, get this, I have more time to prep dinner on Friday nights-HAHAHAHAHAHAHAHA!! What was I thinking? I could switch with something from another night, but I have a pound of tomatillos I am afraid will go bad if I wait too long. Anyone know how long you can leave a tomatillo on the counter before it dies? The sauce is almost entirely cooked and pureed tomatillos. I am also really excited about this recipe. I've never tried it before and it looks yummy. You are supposed to fry the corn tortillas a bit before wrapping the filling in them, I am going to spread them on a cookie sheet and bake them until lightly toasted (not crunchy) and skip the oil from frying. I'll take a pic and let you know if yummy or yucky!! I'll post a pic of my banner too. Lucky me the kids don't get homework on Friday. I also have a several piles of laundry waiting to be addressed. One smallish pile waiting to be washed, one large pile waiting for folding and putting away and another smallish pile for ironing!! Wanted to go into the weekend with that done. Starting to feeling jittery from everything I have to do, oh wait maybe that's because it is now 10:00 and I haven't eaten anything. Dang, gotta stop that!! Okay gotta go!! Your dinner sounds really good! I would imagine tomatillos were very similar to tomatoes in how long they last. Usually no longer than a week?

    Wow! You are a busy woman!!!! If you where a neighbor I would definetly help you out! I'm usually shuffling the little one to soccer or boy scout's or piano! Then laundry, cleaning house, working, and working out b.c I too am not going to let these challenges slip away!!! Good luck! Oh before I forget, I'm sure that walk counts toward your 300 minutes of cardio! emoticon

    Yikes. But good news, tomatillos can wait quite a while. You have a week or so unless they were sitting at the store for a while to start with. I am considering buying two washers and two dryers. One for clean one for dirty. Forget putting it all away, just turn it on for a minute and get the wrinkles out. ;o)
