French Toast Casserole



Ingredients (for two servings):



•4 slices of crusty whole wheat bread (crustier, the better)
•4 eggs
•1 tablespoon vanilla extract
•1/2 cup almond milk (or your milk of choice)
•1/2 tablespoon cinnamon
•1 ripe banana
•Toppings: Maple syrup and almonds


Directions:



•Preheat oven to 375.
•Chop bread into 1 – 2 inch strips. Place in small greased casserole dish (mine was an 8-inch round).


•In a bowl, combine eggs, milk, cinnamon, and vanilla.
•Pour egg mix over bread and slice in a banana.
•Stir and let stand for a minute. Stir again, thoroughly coating all the bread with the egg mix. Pat down with spoon.


•Bake at 375 for 20 minutes. Remove, let stand for one minute, and slice (makes two servings).
•Top with nuts and maple syrup.

Roasted Butternut Squash With Spinach Recipe

Servings: 4


Brighten up your winter with the combination of colors and tastes in this seasonal dish. The vibrant orange and yellow color of butternut squash and its sweet, nutty taste are a perfect complement to spinach. Plus, butternut squash is a great source of vitamin A and C.

Ingredients:
1 Butternut squash (about 4 cups)
1 tbsp olive oil
1/4 tsp sea salt
1 tsp rosemary
1 Tbsp olive oil
1 Cup red onion thinly sliced
2 Cups spinach
1 Tbsp. balsamic vinaigrette
1/2 cup pecans

Instructions:
1. Pre-heat oven to 400 degrees.

2. Peal and cut butternut squash into 1/2-inch cubes. In a large bowl toss with olive oil, sea salt and rosemary.

3. Transfer to a roasting pan and cook for about 30 minutes or until softened.

4. Sauté red onions in olive oil over medium heat. When soft, add spinach and balsamic vinaigrette and cook until spinach is wilted.

5. Top spinach with butternut squash and pecans.

Nutrition:
188 calories, 17g fat (2g saturated, 10g monounsaturated, 4g polyunsaturated), 0g cholesterol, 51mg calcium, 199mg sodium, 10g carbohydrates, 3g fiber, 2g protein, 3g fiber, 1g iron

Looking for a job again...

As I had anticipated, I was let go Friday. I feel guilty for not feeling upset...but I'm too relieved. It was the worst supervisor I've ever had and that's saying alot!

    DH always say ... "You were looking for a job when you found that on!" You'll find another one and maybe it will be the best one you ever had!

I always liked looking for a job because I got to met interesting people and learned that there are a lot of different kinds of jobs out there. Tailor your resume to fit the job you are going to interview for. Best wishes!
