I just found out I'll be teaching one gym class next year!

I was really traumatized by gym as a child, and I'm really looking forward to making gym a really safe, comfortable place. I may not know how to play basketball or rugby, but I know how to make kids smile (and how to download PE lesson plans)! Effort marks for everyone!

I'm making some healthy food before I go back to work tomorrow!

Quiche - Red Pepper, Leeks and Goat Cheese
Baked Potato - Peas and Spinach
Muffins - Whole-wheat flour, oats, dried fruit, dried cranberries, pumpkin puree, applesauce, pecans
Salad - Whole grain blend, roasted vegetables, Puy lentils, feta cheese, balsamic vinegar, lemon juice

No more worrying about cooking this week!

Whoa... Vacation Overload!

I went on a little vacation last week- just for four days. I really struggled to eat properly and made some poor choices. Luckily it was only for four days; I think it will be really easy to get back on track this week!

Worst Vacation Offender: Chipnuts! We went to this little family-run peanut shop where they had a product called Chipnuts- fresh peanuts enveloped in a shell made from dehydrated potato flakes (like what Pringles are made from). Crunchy... salty... yummy... SO UNHEALTHY. Luckily I only bought one package, ate it all in one day (1000+ calories!) and will never have access to Chipnuts again!

If We Took a Holiday...

Well, it's not really a holiday but I'm heading off for a mini family reunion tomorrow. I called the hotel and confirmed that they've got cardio equipment; I've packed three days' worth of workout clothes. I also confirmed with the restaurants that they will have vegetarian choices for me on the menu. Fingers crossed!
