Vegan Chili-Mac bake

I left out the oil, butter, cayenne and cheese. I added spinach, mushrooms and nutritional yeast. It's in the oven now :)

For dessert I made these Blondie bites.

Instead of bites though I put the mix in a 9x13 pan.

I used canellini beans. Instead of the sugar I used about 1 cup of agave and about 3/4 cup of vegan choc chips (all that I had)

Also tonight I will be making this Cranberry Orange Lentil Quinoa Loaf-

I will be leaving the salsa out. I was not able to find unsweetened cranberries so I am thinking about using cherries. We shall see.

Yummy Vegan Recipes

Since being on my SP break I have made lots of recipes and look forward to making many more!

I am super excited about this one! So many options! I could not find chickpea flour so I used whole wheat flour. Used basil instead of thyme and Herbamare instead of salt. Also left out the paprika. Delish.

I used this seitan for the following recipe (Seitan salad sandwich)

1 loaf of seitan chopped
1 stalk of celery diced
Red onion
Dill
2 T Vegenaise

Mix above ingredients in bowl and serve on toasted whole wheat bread with avocado and pickles. Yummo.

Also made the following. Left out the olive oil, didn't have kale so I used collard greens and used 1/4 cup rice milk instead of a cup of soy milk.

100,000 SP points and a SP break

Today I have over 100,000 SP points. Crazy!

One of my goals has been to take a little SP break once I reached 100,000 points.

I will still be sparking just will not be as involved with commenting on blogs, team participation and such.
