Dice half a small onion and put into saucepan over medium heat.
Add a pinch or two of salt.
Mince one clove of garlic and add to pan, or add 1 teaspoon garlic powder.
Add 1 teaspoon of cumin
Add 1/2 teaspoon of chili powder
Add 1/2 teaspoon black pepper
Add 1/2 teaspoon cayenne pepper
(I vary the spices I use, sometimes adding chipotle seasoning or paprika or red pepper flakes),
Open can of Rotel tomatoes and green chili, drain and add to pan
Open can of black beans, drain some, but not all the liquid and add to pan
(You can also add corn for more sweetness)
Let come to boil, then simmer for about 10 minutes.
At this point, you can pour everything into a blender and make a wonderful dip or, once it has cooled, use it as a very flavorful, filling and protein-rich salad topping.
