I am at the stage to where I need to write about a goal that I either have not met or am having trouble meeting. Mine, of course, is vegetables.
I am alright on the fruit for most days, love the fruit, but I am having a hard time with the vegetables.
I am not a big fan of lettuce, I try to eat a salad every now and then, but not too often because I usually end up throwing the salad mix away and my husband doesn't like lettuce, so buying a head of it would just waste as well. I love peas and I love corn but having them at every meal to me sounds gross and too repetative. I don't really like carrots, and I am too scared to try any of the other veggies as I am afraid that it will all just go to waste. Today I ate corn with my dinner-two chicken tacos, I had some apple sauce with it too so that I could make my goal of vegies and fruits together, but other than that, I truly have no desire to eat vegies. I am going to have to find a way to encorporate them into my diet more, or eat more of them at one setting so that I have enough for the day. I am into cold tomatoes but I really don't like them hot. The only way I do is in my chili or spaghetti, which I am not a big fan of spaghetti, even though it would thrill my husband to death to eat it for every meal!
I am going to try to cut back on some of the hundred calorie packs as well. Here I was only thinking of the calories when it never accured to me to look at the sodium or anything like that. I will have to find out what a good intake for sodium in a day is and try to watch for it. I didn't know that it would affect my diet!
