MY VIRGIN FOOD LOG

THIS MONTH AUGUST 26TH WILL BE MY 60TH BIRTHDAY.
I WILL CHALLENGE MYSELF

I WILL START OFF EVERY DAY WITH A CLEAN UNTOUCHED FOOD LOG AND IT'S UP TO ME ON WHAT I PUT IN IT.
WE ALL HAVE A VIRGIN LOG AND IT OUR DECISIONS ON WHAT WE EAT FOR THE DAY.
THIS IS MY CHANCE TO MAKE AUGUST MY MONTH TO SHINE .
LET'S ALL WORK ON OUR VIRGIN LOG'S THIS MONTH..

    August is my birthday month so I am definitely more focused on being healthy and meeting my goals. I love that you look at each day as a new start and the chance to do better than yesterday. I am going to adopt that attitude and work really hard to make this month the best yet. Thanks for your encouragement!

WATERMELON FOR HEALTH

One generous slice of watermelon (about 1/16th of a melon) contains large amounts of vitamin C and beta-carotene which may help protect against various forms of cancer due to their antioxidant properties. Watermelon is also high in potassium which helps regulate heart functions and normalize blood pressure. It is a good source of fiber which helps maintain bowel regularity and works to prevent colon and rectal cancer.

Watermelon seeds contain cucurbocitrin to aid in lowering blood pressure and improve kidney function. The sweet watermelon surprisingly has only half the sugar content (5 percent) of an equivalent-sized apple. It tastes sweeter because the sugar is its main taste-producing agent. Two cups of watermelon has only 80 calories, no fat, and no cholesterol.

    My favorite fruit!! I found the secret is to cut it up as soon as I get it home, so it is handy to eat. Otherwise it sits in the frig because I always seem to be rushed.

Nothing tastes as good as watermelon, can't not get enough!

HUNGRY GIRL'S TACO'S

'Tons of Yum!
This new starter is totally cute, amazingly delicious, and a calorie bargain, considering it has a fraction of the cals found in the original. HG's Sassy Wonton Tacos: Make 'em, crunch 'em, love 'em...

Ingredients:
8 small square wonton wrappers (often stocked near the tofu in the fridge section of the market)
4 oz. cooked skinless lean chicken breast, shredded
2 tbsp. BBQ sauce with about 45 calories per 2-tbsp. serving
3/4 cup dry coleslaw mix
2 tbsp. Newman's Own Lighten Up! Low Fat Sesame Ginger dressing (or another sesame ginger dressing with about 35 calories per 2-tbsp. serving)
2 tbsp. chopped cilantro

Directions:
Preheat oven to 400 degrees.

To make the wonton shells, spray the inside and outside walls of a deep square or rectangular baking pan with nonstick spray. Evenly drape wonton wrappers over the pan's walls on a diagonal, making triangle-shaped "shells." (Use two pans, if needed, to keep wontons from overlapping.) Bake for 3 - 4 minutes, until just crispy enough to hold their shape. Remove pan from the oven and set aside to cool.

Combine chicken with BBQ sauce in a bowl and mix well. Set aside.

In a microwave-safe bowl, combine coleslaw mix, dressing, and cilantro. Mix well. Microwave for 45 seconds, until slightly softened. Set aside.

Spray a baking sheet with nonstick spray. One at a time, carefully remove wonton shells from the pan and fill each with a heaping tablespoon of BBQ chicken and a heaping teaspoon of cilantro slaw. Lay filled wontons gently on their sides on the baking sheet.

Spray the upward-facing sides of the wonton shells lightly with nonstick spray (for added crispiness) and bake for about 5 minutes, until warm and crunchy. Let cool slightly and serve!

MAKES 2 SERVINGS

Fat: 2g
Sodium: 605mg
Carbs: 25g
Fiber: 1g
Sugars: 7.5g
Protein: 17g

HG's Not-So-Secret BBQ Sauce
PER SERVING (half of recipe, about 3 tbsp.): 37 calories, 0g fat, 347mg sodium, 9g carbs, 0.5g fiber, 8g sugars, 1g protein -- POINTSŪ value 1*

Ingredients:
1/4 cup canned tomato sauce
2 tbsp. ketchup
2 tsp. brown sugar (not packed)
2 tsp. cider vinegar
1/2 tsp. garlic powder

Directions:
Mix well. (That's it!)

MAKES 2 SERVINGS
