"Fried" Crispy Chicken

“Fried” Crispy Chicken

Serves: 8
• 4 cup(s) rice cereal (such as Rice Krispies), lightly crushed
• 3/4 cup(s) grated Parmesan (3 oz)
• 2 tablespoon(s) olive oil
• 1 tablespoon(s) paprika
• 1 teaspoon(s) ground cumin
• Kosher salt and pepper
• 1 cup(s) low fat plain yogurt
• 8 (6-oz each) boneless skinless chicken breasts
• Sautéed spinach, for serving
1. Heat oven to 350°F. Line a rimmed baking sheet with parchment paper or foil.
2. In a shallow bowl or pie plate, combine the rice cereal, Parmesan, oil, paprika, cumin, 1/2 tsp salt and 1/4 tsp pepper.
3. Brush both sides of the chicken with the yogurt and coat with the cereal mixture, pressing gently to help it adhere; place on the prepared baking sheet. Bake until golden brown and cooked through, 25 to 30 minutes. Serve with the spinach, if desired.

Who Inspires Me?

I needed to write a blog for a challenge telling who inspires me! I didn't even have to think twice about it - my Sparks' friends inspire me every day that I interact with them. They cheer me on when I'm doing well and they push me when I'm struggling. They share their successes and failures - they show me what persistence and hard work can achieve. They listen to me when I'm down and boost me up! They are always there for me. Especially my Navy Ninja team on the team BLC26 (Biggest Loser Challenge). They are my rock!

BLC26 Expectations

My expectation for this round is to have a loss every week - hopefully one pound. I realize that I need to focus more on my Nutrition.

So my plan is to:

-stay in my range
-eat a minimum of 6 Freggies a day
-eat planned snacks only
-track every bite

Of course I need to keep doing the things that have become habits - exercise and water! But I also will focus on ST and make sure I work out three days each week.

Biggest Loser Challenge - The Best

BLC25 may not have been the best round for me in the way of weight loss, but if I had not been participating, I would be dealing with a big gain! I have been doing the BLC for several years now and I have lost weight every round - not always huge amounts or quickly but I'm learning what I need to do to make living a healthy lifestyle a habit.

Because of the variety of challenges in the BLC, I no longer consider exercise a chore! I love competition and the challenges push me to do more - for myself and my team. I don't have a problem finding time for exercise any more.

The challenges have also made me realize that my biggest problem is staying in my calorie range. My team has helped me recognize that the quality of what I eat is just as important as the quantity! There's a big difference between 200 calories worth of sugar and 200 calories worth of protein! Yes, a calorie is a calorie but...???

Traveling during most of this round has caused me to struggle with my weight loss. But I know that if I hadn't been doing the BLC - I would be showing a gain by now with the temptations of eating out and touring. I used to gain 10 pounds for every trip we took - now at least, I'm holding my own and I still have a loss showing from the beginning.

Finding the BLC Team those many rounds ago was the best thing that Sparks has provided for me!

    Gracie I totally agree with you, if it wasn't for the challenges and having to keep accountable to someone, I am sure like you the scale would be going up and up and up. I thank you for introducing me to the biggest loser here on sparks.

    Even though you didn't show the loss you'd have liked this round, you are still an inspiration to me just in the fact that you DO get exercise in every day and you DO so much for the team. It is quite an accomplishment not gaining weight while traveling!
