had my "last meal" yesterday

Wednesday, April 02, 2014

Joined Weight Watchers and started today. The quick start is not designed for someone who didn't go grocery shopping in preparation, but I made it through the day. Spent my indulgence points on bread, butter, and a glass of wine. Tomorrow will be easier, as I've put a bag of Tyson grilled chicken breasts in the fridge. I also roasted some redskins, pan roasted some brussells sprouts, and sauteed some mushrooms.

This is the heaviest I have ever been. I feel almost like deleting my old blogs and starting new with a new user name, but I feel like that would just be lying to myself about how hard this journey has been. Chin up... back at it again.

I feel the same way. I cried today after my workout because it was so hard and once upon a time, I use to be able to do it better. I know with time I will do it better!

Best Low Carb Omelet Of My Life :0)

Thursday, March 14, 2013

It'd be a crime not to share.

2 eggs
about a tablespoon of heavy cream
1 0z brie
1/8 c sauteed mushrooms
1/2 c fresh baby spinach leaves
2 thin slices deli ham

Spray a small frying pan with nonstick and allow to heat to medium heat. Meanwhile, whisk the eggs and cream together in a coffee cup. Add mushroom to egg mixture (note mine have already been cooked ahead of time for convenience). Pour mixture into heated pan. Wait to flip until almost set on top (a thin layer of uncooked egg still remains) and set around the edges. Flip then put brie on one half toward where the fold will be, cover the same half with ham and top with spinach. Fold the end without toppings over the side with the filling. Remove from pan to a plate. Microwave 30 seconds to melt cheese. Enjoy :0)

If you like brie, you will definitely make this again and again. I have kept it simple, but am also thinking that I may add onions... perhaps carmelized would be best.

yum..... will definitely try (but minus the ham as don't eat meat) - love the thought of brie in an omelette!

I am proud of myself

Monday, March 11, 2013

Despite the fact that I was laid off the day after I started my diet, I did not cheat on Atkins. My husband even asked me if I wanted to give up and go out for dinner, and my friend said he was surprised I didn't just eat an entire bag of candy. I realize that just because bad things happen, I shouldn't treat myself badly by falling off the wagon.

My hard work is paying off on the scale. I now have a lot more time to plan meals. I'm trying to be positive while I decide what I'm going to do with myself. I know that everything will work out in the long run.

I am down 8.8 lbs in the first week :0)

I'm gonna do it this time

Monday, March 04, 2013

Today I started Atkins. I just recently had my annual physical and everything was good except my triglycerides... which tipped the scale at 290. I have a follow up with the doctor and although I have the excuse that I just came back from an all inclusive vacation, I really don't want to have to use excuses for anything when it comes to my health.

I took all my measurements and took my first starting picture, which I am posting here as I begin my journey. I've always thought that Atkins was stupid. I read the book and I'm giving it a try. I think it was just all the bad publicity that it got that made me feel that way. That and thinking that depriving myself wasn't the way to go about things.

That being said, I think after reading the book, that it makes a lot of sense so I've decided to give it a go. It's sad to get on here and see that I am right back at my beginning weight when I started SparkPeople so long ago. A lot of my points have expired and my trophies are gone. This is only fair, I guess, as I have failed myself. In all fairness I lost a lot of weight... about 60 pounds before putting it all back on.

I need to remember that I'm only cheating myself. Here's to a new me. I took all of the carbohydrate based foods out of the cabinets today and delegated them to my husband to place out of sight, out of mind.

Melanie we love you and support you! You can do this not for anyone else, but for yourself! You deserve to be healthy and to feel good! Plus since you are an amazing cook, Atkins meals will be delicious at your house... hmm maybe I should come visit for a few weeks (OK don't have a heart attack), I'm kidding... maybe ;-)

I fully support the idea behind low carb eating. However, I'd say I'm much more of a proponent of the South Beach diet. It is very similar, but it's more low carb/healthy fat and a little less restrictive than Atkins. Either way, good luck!

It is so wonderful to read your motivation to get into a healthy lifestyle! The Atkins diet will do wonders to lower your triglycerides as well as keep you full with the high protein meals. Here is an interesting read on the science behind Atkins and benefits/risks of that type of diet: http://www.skepticreport.com/sr/?p=

I'm doing a happy dance!!!

Saturday, February 26, 2011

Today my scale read 200.4... I am so close to being in the 100's that I can taste it! And it tastes like victory! I'm only 6 pounds away from having lost 50 pounds, and I'm almost halfway to healthy :0)

I'm in the biggest loser competition again this year at work and I've inspired some people to lose weight. This gives me great joy.
