I have anxiety this afternoon, although I don't know why. I had a productive day but I have this sickening feeling that I'm running out of time, but I don't know for what. I cleaned my bathrooms, went for a walk with my hubby, planned-shopped for and cooked meals for this week. All I have left is my strength training and maybe a bath?!
However dinner was delicious. Beer can chicken with roasted root vegetables, sauteed mushrooms and an onion-garlic-beer based gravy. For an $8 chicken, we'll get at least 8 meals out of it (4 dinners for two: Sunday through Wednesday this week. Two of the chicken and veg and then adding the shredded chicken bits to Chef Meg's Pad Thai, instead of tofu). I scheduled the recipe to post on my blog for this week: food.brookeandsteve.ca/
