Today just felt difficult, like everything required more effort than it should. Still, it's the weekend now and I have a delicious smelling dinner waiting for me: red potatoes boiled with lemon zest and thyme, beet salad dressed with balsamic and olive oil and a slice of ezekiel bread topped with cottage cheese infused with olive oil, thyme and lemon zest and an oz of smoked salmon. Total calories for such a filling and diverse dish is only 450 Calories. This meal is from the Jamie Olive meals in minutes, which I didn't love at first but the dishes I have tried have turned out great!
Afterwards I am going to enjoy a glass of wine and a cup of herbal tea with a handful of grapes for dessert.
I have started having fruit for dessert - mostly grapes or an asian pear. I am really enjoying it much more than I expected. Particularly, it is sweet so I feel like I had a "dessert" and it's more satisfying than chocolate, where you just want more.
I am also maintaining my 80oz of water every day. It is the end of week four and this feels like its becoming more of a habit and choice than a conscious effort. I am really glad!
