Cheddar-Jalapeño Quesadilla Salad with Cilantro-Lime Vinaigrette
This fresh take on the traditional taco salad works well as a vegetarian main course.
1/4 cup Dijon-Lemon Vinaigrette
2 tablespoons minced fresh cilantro
1 tablespoon lime juice
1 (15-ounce) can black beans
8 (6-inch) corn tortillas
1 cup (4 ounces) shredded reduced-fat sharp cheddar cheese
3 to 4 tablespoons chopped pickled jalapeño peppers
6 cups chopped iceberg lettuce
2 cups chopped tomato
1 cup bottled salsa
1/2 cup chopped onion
1/4 cup low-fat sour cream
To prepare vinaigrette, combine first 3 ingredients; stir with a whisk. Set aside.
To prepare the quesadillas, drain beans through a sieve over a bowl, reserving 1 tablespoon bean liquid; discard remaining liquid. Combine 1/2 cup beans and 1 tablespoon reserved bean liquid in a small bowl; mash with a fork. Reserve remaining beans. Spread bean mixture evenly over 4 tortillas. Sprinkle each with 1/4 cup cheese and about 1 tablespoon jalapeño; top with remaining tortillas.
Heat a large nonstick skillet coated with cooking spray over medium heat. Cook quesadillas for 4 minutes on each side or until golden brown. Remove the quesadillas from the pan, and cut each into 4 wedges. Combine vinaigrette with lettuce, and toss well. Arrange 1 1/2 cups lettuce mixture on each of 4 plates. For each serving, spoon 3 tablespoons reserved beans over lettuce mixture, and place 1/2 cup tomato over the beans. Top each serving with 1/4 cup salsa, 2 tablespoons chopped onion, and 1 tablespoon sour cream. Serve each with 4 quesadilla wedges.

This is the base for our other vinaigrettes, but it also tastes great on its own. Refrigerated, the vinaigrette keeps for about a week.
3 tablespoons vegetable broth or water
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons minced garlic
2 teaspoons Worcestershire sauce
1/2 teaspoon black pepper
1/4 teaspoon salt
Combine all ingredients in a jar; cover tightly, and shake vigorously. Store in refrigerator.
Yield: 2/3 cup (serving size: 1 tablespoon)

Ok so I switched things up a bit on this recipe…For one thing I honestly don’t think it needs the vinaigrette. It’s full of flavor on it’s on with the salsa. I could do without it. I didn’t add sour cream to mine. I also didn’t use corn tortilla’s, I used a whole wheat pita and cut it in half to make the quesadilla. It actually cut back on calories making the entire thing only around 280 calories or so. I plan on making this again, it was delicious, full of flavor and so filling!

I had a migraine yesterday! No fun, so I slept all day. Back in action today though! Woohoo!
Did my workouts!! An hour and a half! Went to the OBGYN, everything is cool with my coochie. LMAO. Too much info, I know.
Came home, ate a South Beach Diet Santa Fe Salad. I know I know. I never eat anything processed. Quick and simple, and delicious!! Didn't eat the jello that came with. Ew. I hate jello! YUCK!! LoL. Then I made a Jalepeno Cheddar Quesadilla Salad for dinner. It looks amazing! Going to have that, and a bowl of mixed fruit. YUM! And super healthy of course.
I didn't mention it but I'm getting like 25 new workouts from MDB! Can't wait! I wish they were already here. I'm so impatient. Oh well, I'll be back later for more blogging!

Easter was pretty good...Didn't do much of anything over the weekend, but enjoyed the relaxation! I did really good with eating Easter dinner. I stuck with corn, green beans and a few slices of ham with all visible fat removed. I had a very small piece of cake too. Finally I have made plans to go see Geno. I'm going to drive to New Jersey myself. This is a HUGE deal for me. I've never been an hour away from home, by myself let alone to a completely different state! I plan on renting a car, since mine is so unreliable. It really won't cost that much. I'm so excited though, I could do cartwheels! Of course, he is thrilled as well.
He's getting a new kitty this weekend. He is adorable. We've been discussing names. I think he's for sure going with something with an O on the end. He lives Nico, Cisco and Loco. I like Loco. LoL. Suitable for him. :P
This morning was awesome! High energy. It's day #2 of the colon cleanse, I feel wonderful. No tummy ache from it as of yet. That's really good. Today was upper body day for me, I did PKJ, 3T and spent some time on the elliptical. Feel great!
For dinner I'm making Tropical Shrimp Skewers (thanks Rosa!) Can't wait to try them. :) I'm also having a chickpea salad, tomato salad and broccoli. YUM!
