I have been looking on the internet for cake recipes today. I'm making one for father's day and when I asked what kind I was told to surprise him ^_^ I make cakes all the time so I wanted to find something different. I've decided to make red velvet cake. I'm very excited because I've never had red velvet before and I've never made it either. It'll be a good surprise too because it'll be covered in white icing of course and I won't say anything so I should get a good reaction when they cut it and see the color ^_^ I'm anxious to taste it too. I'll post a pic after I make it.

I'm also a little annoyed with my group for class tomorrow. We have a presentation to do and I haven't gotten a response form them so I think I'll be doing the whole thing myself. I may have put this in yesterday's blog too lol. I can't remember. I'm still hoping to hear from them still today but I'm not going to wait for them. If I do end up doing it all myself I'll just let the teacher know and be done with it. I'm annoyed but I want the mark enough to do it. I'm not going to let them make me fail.

If I get the presentation done in time I'm going to go for a swim tonight but it doesn't look good. I'll probably be waiting until Sunday now because tomorrow I won't have time. I have class in the morning, then my exam, then I'm going out tomorrow night. I am glad though that tomorrow is my last saturday class ^_^

    I start Sat. classes in the fall and go the Fall semester, the Spring semester of 2011 and the summer too for an accelerated MBA program. The classes will be from 8 am until 4 or 5!!! I'm a bit nervous, but will make it some how. :) I hope you have a great weekend!!!

    From a veteran red velvet cake baker/devour-er I will tell you the three most important ingredients

1 - Real Buttermilk: This makes the cake. Any alteration to this ingredient really makes it something other than red velvet cake.
2 - Cream Cheese Frosting: Nothing else pairs with the cake nearly as nice
3 - Pecans: This makes it a southern favorite. You've got to have the crushed pecans on the side and a few garnishing the top.

It is really the best cake I've ever had. Chocolaty and delicious, and utterly red velvet.

I hope you have a blast making it and have fun presenting it to your Dad!

Well I'm doing pretty good so far with eating at home more often. I pack lunch every day for work now, and I'm eating breakfast and dinner at home more often though still not all the time. I think I'll be good by the end of the month though when I start trying to improve WHAT I'm eating. It has already gotten better by not eating out but not by enough.

I've been meaning to start swimming too. I have read many things online, it's good for weight loss, or it's not good for weight loss but is for general fitness. So I decided even if it's only good for general fitness that will help with the other stuff I'm doing. It's also a lot of fun and I find it relaxing. I do have pretty bad technique though lol, I haven't done much to practice my technique since I stopped swimming lessons at around 12. I will be doing some adult swimming lessons to work on this so I can get better and hopefully do more. I'm going to start going in about a month when my Monday nights are free. For now, I'll just go ahead without being good at it lol.

Work has been going well, I'm doing more and seem to be a bit more busy lately. I am still having a problem with my neck, it's been really sore. After getting a massage it was good for a few weeks so I'm going to go again and then again shortly after. It really causes me problems when the pain in my neck gives me a migraine.

Dance lessons are going well too, they reworked my program to inlcude the viennese waltz. Oh it's so hard lol. I have problems with just the basic step lol. It's all turns though, and really fast. So even the basic steps are not so basic lol. My teacher also knows I'm uncomfortable getting really close to people, so yesterday she showed me a little bit about the body contact, but only a little and we didn't actually dance like that. It was very awkward for me but good that I'm starting to get into it even only a tiny bit. The problem is mainly that in a proper hold our stomachs would be touching, I'm ok with just our hands now, though even that was uncomfortable in the beginning. I'm gettin there ^_^

    You have made some pretty amazing changes in such a short period of time. Best of all you are feeling more confident and comfortable with yourself...that is HUGE!! CONGRATS on all of those changes for they are the foundation for long term lifestyle change...YOU ROCK!!

Swim badly, Swim well...Just swim and have fun no matter how you swim...lol

    You amaze me and I wish I had the confidence you have! I'm too embarrassed to take any classes and you are here showing me what fun I could be having if I would just lose my body image problems.
I'm proud of you for how well you have been doing on taking your lunch. It's those little steps that add up to make such a big difference.

It takes a really strong person to see where they need to improve and actually follow though with it, so I think it is awesome that you are able to make all these seemingly small (and not so small!) changes that are going to add up to a great new improved you!

New Plan!

Ok so you all know I've been struggling with eating out lately but making improvements. I have decided on something I believe will really help me stop eating out. I have been doing much better but not good enough! So I have decided if I decide to eat out or really want to, or have a craving to or whatever, more than just a passing thought of course. If I change my mind or resist the temptation then I will put half of the money I would have spent into my savnigs account and use it to buy more dance lessons. Unfortunately, tonight I do have to eat out because I won't be going home until about 9:30 so I will start this tomorrow ^_^ I'm hoping the desire to dance more will be enough to really kick the fast food habit.

    great idea! I found that if you stay away from the fast food for awhile you lose your taste for it.

    Awesome Idea! Maybe a change to try out some new Recipes at home? Stuff you can take along with you. Especially when you know you won't be home til late?

Really Good Day!

Ok so nothing super great happened today, but all the same, I really had a good day!

I had to work this morning for my weekend job as a cashier. For some reason i don't know, I was in a really good mood, I just couldn't stop talking lol. I know it wasn't the weather cus it was cloudy and grey all day. Then I came home and had a late lunch, had a shower and got ready to go dancing.

On the way I stopped and bought myself a new scale and a nice surprise tonight when I got home. You see my scale was reading about 330 for months and months and when I went to the gym a few days ago, their scale said 350. So I got new batteries for mine and then it was saying 355 mostly but it wouldn't always work and when it did it was always different. So tonight, when I got my new scale out, it said 348.4. This time too no fluctuations, I tried it several times and it was exactly the same every time. It's got some cool functions too. It does body fat and water percentages and a bone density reading. The body water doesn't want to work though, it says it might not work if I have hard or dry skin on my feet where they touch the sensors and i have calluses all over the ball of my foot from my dancing lol. They just don't want to go away. Anyway so it's good news, my old scale was messed up and I'm lighter than i though I was this morning ^_^ Still heavier than I thought i was last week, but still, I gotta celebrate every little bit lol.

Ok so back on track here, after I picked up the scale I went dancing, we had dinner first of course and I was good and only a very small piece of chicken and took the skin off, which I never do, and a big helping of salad. The veggies were undercooked though, I can't stand hard carrots. Then we had the dancing, and i danced more than usual. There was also a new guy there tonight. He's one of the girls instructors and I think he came to try and get new students lol. He was a very good dancer and he did 3 dances with me, a rumba, a salsa and a quickstep. My first time dancing a quickstep outside of class ^_^ and even though all I did was the basic step it was very exciting. I'm only upset he didn't ask me to a waltz lol, it's my favorite and it's my best dance. I made sure to dance more tonight because I'm really trying to work on my cardio again. I want to be able to dance longer lol.

Even though it wasn't an overly exciting day, it was very enjoyable. I think the dancing was so much fun because I haven't really been doing as much the last couple months and I actually missed the last couple Sunday dances. I'm so glad i found something I still enjoy so much after almost a year. Usually my interest would have waned by now. I'm actually thinking of doing some lessons with this new guy, he was very good but I don't feel i did very well with him. For the rumba he was doing international and I'm learning american right now. Then for the quickstep and the salsa I just haven't learned much yet lol. and of course it's also not always very easy to follow someone until you've danced with them a couple times and you get to know a little bit how they lead and how they dance. I just always feel self conscious so I wanted to do well and so I think I messed up even more by trying so hard to do well lol.

Anyway, I'm going to go ice my knee now, it's a bit sore from dancing so much ^_^ and go to bed because I have to work in the morning.

Update on June Goals

Just an update on how I'm doing with this month's goals!

1. Organise my kitchen so I have one less excuse to eat out

I'm still working on it, but it is looking better

2. Eat out less often - I have set some goals on the other goals page so I can track when I eat at home.

I have been eating out less but I still need to improve

3. Take lunch to work every day

So far I have done this well

4. Track EVERYTHING I eat no matter how bad a day I have

Most days I have tracked, and tracked honestly ^_^

5. Start eating breakfast at home

Still working on this one

6. Keep my gym bag packed and in my car

It's there!

7. Exercise 240 minutes per week

Doing great!

8. Start getting up early to go swimming at least 1 time per week

Have not but plan to start on Monday ^_^

9. Blog/Vlog at least 2 times per week

I've done more than 2x per week

10. Keep my team goals tracked and up to date.
