The Scoop on Yogurt

Wednesday, May 11, 2011

Remember when you had to make only one decision: fruit on the bottom or mixed in? Today, there are entire aisles dedictated to the stuff. What to look for:

Between 90-180 calories. That's per 6-to-8-ounce serving. A parfair can have over 300 calories - that's like dessert!

Less than 3-5 grams of fat. Some whole-milk yogurts have more fat than a doughnut. Choose non-fat, 2 percent or soy varieties.

At least 6 grams of protein. It's what keeps you full. Greek yogurt has the most protein per serving: up to 20 grams (that's more than a burger!).

Probiotics! Look for "live active cultures" on the label. They're the healthy bacteria that can help your digestive system and may even curb colds.

You can make your own Greek Yogurt by putting a coffee filter into a colander then pour regular yogurt into it and let it drain into a bowl beneath in the refrigerator for several hours. You would be surprised how much clear liquid comes out and you get the creamy consistency of Greek yogurt. You can used flavored or plain yogurt and it comes out fine.

Because I use so much yogurt (replace Sour Cream, on cereal, top of soup, smoothies) I make my own. SO easy.

Buy a good quality greek yogurt (small amount)which will be your starter. Put two tablespoons of yogurt in each large container (quart size) and fill up with skim milk (or whatever you are drinking now) Place in cooler filled with hot hot water from tap (up to brim of these containers) shut lid and let it "cook" on counter for a day. Not thick enough? Leave it another 5-8 hours. From here make yogurt cheese for sour cream and dips.
Use your homemade yogurt as your starter for several batches. When it seems to be getting too strong or not working buy more starter.

Have been meaning to try Greek yogurt
but hesitant. Am picky about yogurts.
What brand(s) do you recommend?
