Accept New Challenges

My daughter is living with me while work is being done (largely by her) on her house. And now a good friend of hers has come to stay with us too. To be around young, active people is a new challenge for me. I plan to not complain about my own aches and pains, but just be pleasant and try to hold up my end of keeping the house neat. (Actually, most of the housework falls to me, but they are very good at "being my legs," doing things like taking out the compost, bringing onions in from the garden, filling up the birdbath.) Today they will be at my daughter's house working so I am going to cook a nice lunch in case they want to share it with me when they take a break. I am going to make "Chana Masaledar," a Middle Eastern chickpea dish and rice with raisens which a Persian friend made for me years ago. I found this recipe - of all places! - in an appendix in The Essential Rumi, translations by Coleman Barks. I have been reading Rumi for several days now. I copy out little snippets that I like, for instance, "Last year, I gazed at the fire. This year I'm burnt kabob."

If I eat as I have planned today, I will have eaten 1470 calories which is within my range, though at the high end. Still, I will be pleased. My daughter is planning to eat dinner (we call it supper here in Oklahoma) with me. One thing I am trying to do is to eat more meals with others, just be more with others generally. If I do that, I will be less lonely and also I will be expending more energy because nothing exhausts me like being with people, even talking on the phone for any length of time is difficult for me. I love to putter around my house and yard and to read -- these are my favorite things to do.

Too much butter and cheese!

Total calories for today were 1621, over my goal, but not too bad and I'll try again tomorrow. I've boiled some eggs to be a start on tomorrow's meals. Too many calories came from butter, cheese, and mayonnaise. Planning to work the next few hours on housework and outside work and then reward myself by reading awhile before I go to sleep.

    Hi there - I used to love butter and mayonnaise. Have you tried using the 'lighter than light' varieties of mayo? I find that there are hardly any calories in a tablespoon and you still get some of the taste. I have avoided using any butter since being on my diet - philadelphia light cream cheese is good on calories for 30g - so you could perhaps use that instead of butter. Hope these tips help - it might make the difference on those extra calories. ;o)

Today I took my time and made a delicious breakfast for myself that was just 308 calories, if I remember correctly. On my cutting board I cut up one corn tortilla, three green onions, 5 slices of zucchini, and added a handful of spinach. While this cooked in 1 Tbsp of olive oil, I scrambled up one egg (bought from a neighbor who has chickens) to which I added 1 Tbsp of cheddar cheese. When the vegetables were ready, I added the eggs and cheese and scrambled it all together. Delicious with a tall glass of unsweetened ice tea. I had already had a tall glass of water when I first got up. My blood sugar this morning when I got up was 149. I think it will be better tomorrow. I overate yesterday but I am not going to today.

I'm still keeping track. Plan to keep on keeping on. Hoping for rain for the garden, the woods, the ponds, trees, everything. It is forecast for tomorrow. Did OK today want to do even better tomorrow. I had two delicious salads 222 each. I've been drinking lots more water.
