Stretching: the TRUTH

MOVE #9


Stand with your feet hip-width apart and your arms at your sides. Step forward with your left leg and lift your right leg, bending your knee and raising your right foot toward your left hip with your inner ankle turned toward the ceiling. Holding the top of your right foot with your left hand and your right knee with your right hand, gently pull your entire right leg up toward your chest. Release the right leg and step it forward. Repeat with the other leg. That's one rep. Do five.

French Onion-Pork Chop Skillet

PREP TIME:
10 MIN
TOTAL TIME:
35 MIN

6 boneless pork chops (1-1/2 lb.), 1/2 inch thick
2 onions, thinly sliced
2 Tbsp. Worcestershire sauce
1 pkg. (6 oz. ) STOVE TOP Stuffing Mix for Chicken
1-1/2 cups hot water
1 cup KRAFT Shredded Part-Skim Mozzarella Cheese



HEAT large nonstick skillet sprayed with cooking spray on medium-high heat. Add chops and onions, cook 10 min. or until chops are cooked through (160°F), stirring onions occasionally and turning chops over after 5 min. Transfer chops to plate; keep warm. Continue cooking onions 5 min. or until golden brown, stirring occasionally.

ADD Worcestershire sauce to skillet; mix well. Reduce heat to low. Return chops to skillet, spoon onion mixture over chops.

MIX stuffing mix and hot water. Spoon stuffing mixture around edge of skillet, sprinkle with cheese. Cover. Cook 5 min. or until cheese is melted.

    There is some lady on PBS who only cooks in the microwave! I think it's great. I think the crockpot and oven are the second best cooking inventions, especially at this time of year!

Stretching: the TRUTH

MOVE #8

If you play softball, basketball, or tennis, you really need to stretch your torso, hips, and obliques
So add these…

Stand with your feet hip-width apart, arms at your sides. Take a giant step back with your left foot and sink into a lunge until your right thigh is parallel to the floor (A). Lift your left arm straight up, then lean your torso to the right (B). Lower your left arm back down to your side as you step forward with your left foot. Repeat on the other side. That's one rep. Do four to five.


SETS 1 per side

Lightened-Up Lemony Chinese Chicken


3 c. PANKO (Japanese bread crumbs)
grated zest of 2 lemons
1 tbsp. ground ginger
2 tbsp. sesame seeds, a couple palmfuls
salt and ground black pepper
2 lbs. chicken tenders
1/4 c. soy sauce
juice of 1 lemon
2 tbsp. honey
3 tbsp. chopped fresh chives


1. Preheat oven to 400F.

2. Mix the panko, lemon zest, ginger, and sesame seeds in a 1 gallon plastic bag and mix well. Season with salt and pepper. Add the chicken, a couple pieces at a time, and give them a good shake to coat. Arrange the coated pieces on a baking sheet. Repeat until all the chicken has been coated, then bake for 20-25 minutes.

3. In a small bowl whisk together the soy sauce, lemon juice and honey with a little splash of water. Arrange chicken on a plate, garnish with chopped chives, and serve with the honey-soy-lemon dipping sauce on the side.
