Yesterday I posted a blog giving a Healthier Recipe for Sunshine Fruit Mince and a recipe for low fat pastry
Today I have made and photographed the results

These are the Fruit Mince Pies Before the oven - I left half open so you can see the amount of filling (I put tops on the other 6 after the photo)

And taste test - Both my DH and myself thought them really Yummy - we actuallyliked them better than the normal Fruit mince Pies we buy with the very short sweet pastry!! So basically - a great success!!

Edit
The average calories in ONE individual Fruit mince pie you buy is given as 285
The calories made the way I suggest are - 159 - and there is certainly no sacrifice in the taste!!

I worked up a recipe that can be used as a substitute for Fruit Mince that you buy in stores which is full of sugar (and not so cheap) - unfortunately there iss still the pastry - though I saw a recipe for a lower fat pastry yesterday too - I haven't tried it but I will add it to the bottom of this blog

Fruit Mince Pies
Makes 12
RECIPE FROM SYMPLY TOO GOOD TO BE TRUE BOOK 2

1½ cups self-raising flour
¼ cup sugar
2 tablespoons (30g) Flora Light® margarine
⅓cup skim milk
1 egg white
flour to roll out pastry
12 tablespoons fruit mince
1-2 teaspoons sugar


Preheat oven 180ºC fan forced.
In a large mixing bowl combine flour and ¼ cup sugar together. Melt margarine and add to milk; using a fork beat one egg white into milk mixture. Pour into flour and fold together. Place pastry on a lightly floured surface, knead lightly. Divide in 2; roll out first ½ until big enough to cut out 12 bases (8cm cutter). Gently place into 12 muffin tins that have been coated with cooking spray. Spoon 1 tablespoon of fruit minces mixture into centre of each pastry case. Roll out remaining pastry as for base, then place pastry circles over top of fruit mix. Lightly brush tops with a little extra egg white then sprinkle lightly with 1-2 teaspoons sugar. Bake 20-25 minutes or until pies are golden brown

Interesting Discovery!!

This morning when I had finished shopping I went to load my car and the rain was falling. When I say It was falling - I mean in sheets - we got over an inch in 45min!! The gutters were running, the roads were covered - and I got soaked loading my things into my car - it would have been worse if a really kind lady hadn't helped me though!!

When I was driving home - I automatically wear sunglasses to drive - and I had put them on - and the visibility was improved greatly!!
I suddenly thought - I'm wearing sunglasses in pouring rain - silly me - went to take them off and the visibility was reduced severely - and there was a mist - making it hard to see in front of the car!!
So the sun glasses went back on and I drove home - with reasonable visibility - but at least able to see the water on the road and the other vehicles.

Suggestion - if you get caught in a rain storm - try your sunnies- it might improve the visibility!! But I bet other people think you are mad but at least you can see them!!

A note for my friends - it appears that my internet provider has had a blow up - I have internet but no email - for heaven knows how long - so if you sent me a message - sorry - I'll answer when I can!! (or use Sparkmail!!)
