Follow Up to Healthier Mince Pie Blog with Pictures

Yesterday I posted a blog giving a Healthier Recipe for Sunshine Fruit Mince and a recipe for low fat pastry
Today I have made and photographed the results

The pastry is from Annette Sim's Christmas Survival Guide - which has a lot of tips for a healthy Christmas as well as low fat recipes

These are the Fruit Mince Pies Before the oven - I left half open so you can see the amount of filling (I put tops on the other 6 after the photo)

And taste test - Both my DH and myself thought them really Yummy - we actuallyliked them better than the normal Fruit mince Pies we buy with the very short sweet pastry!! So basically - a great success!!

The average calories in ONE individual Fruit mince pie you buy is given as 285
The calories made the way I suggest are - 159 - and there is certainly no sacrifice in the taste!!

Heathier Fruit Mince - for Christmas Mince Pies

I worked up a recipe that can be used as a substitute for Fruit Mince that you buy in stores which is full of sugar (and not so cheap) - unfortunately there iss still the pastry - though I saw a recipe for a lower fat pastry yesterday too - I haven't tried it but I will add it to the bottom of this blog

The pastry is from Annette Sim's site - Symply too good to be true - and is in her Christmas Survival Guide that is worth looking at

Fruit Mince Pies
Makes 12

1½ cups self-raising flour
¼ cup sugar
2 tablespoons (30g) Flora Light® margarine
⅓cup skim milk
1 egg white
flour to roll out pastry
12 tablespoons fruit mince
1-2 teaspoons sugar

Preheat oven 180ºC fan forced.
In a large mixing bowl combine flour and ¼ cup sugar together. Melt margarine and add to milk; using a fork beat one egg white into milk mixture. Pour into flour and fold together. Place pastry on a lightly floured surface, knead lightly. Divide in 2; roll out first ½ until big enough to cut out 12 bases (8cm cutter). Gently place into 12 muffin tins that have been coated with cooking spray. Spoon 1 tablespoon of fruit minces mixture into centre of each pastry case. Roll out remaining pastry as for base, then place pastry circles over top of fruit mix. Lightly brush tops with a little extra egg white then sprinkle lightly with 1-2 teaspoons sugar. Bake 20-25 minutes or until pies are golden brown

    Thanks for sharing, It is nice to see ones that have been tried and liked. Although I have not tried one yet I didn't like, but have tweaked a few with some of my own favorite substitutions here and there. This one gets a big thumbs up from me!

    I'll echo Margarette's sentiments on this gorgeous work of art! It's a very fine e-zine featuring photography as appealing and delicious as the holiday delights and their recipes you've included here! I've been mired in Christmas-cookie baking lately (the very fattening, unhealthy kind) so it was so refreshing to see holiday favorites converted with healthier ingredients and cooking methods, resulting in food *we can actually eat* without gaining lots of weight - well DONE! (And the Fruity Macaroon Log looks ESPECIALLY amazing!) emoticon

Interesting Discovery!!

This morning when I had finished shopping I went to load my car and the rain was falling. When I say It was falling - I mean in sheets - we got over an inch in 45min!! The gutters were running, the roads were covered - and I got soaked loading my things into my car - it would have been worse if a really kind lady hadn't helped me though!!

When I was driving home - I automatically wear sunglasses to drive - and I had put them on - and the visibility was improved greatly!!
I suddenly thought - I'm wearing sunglasses in pouring rain - silly me - went to take them off and the visibility was reduced severely - and there was a mist - making it hard to see in front of the car!!
So the sun glasses went back on and I drove home - with reasonable visibility - but at least able to see the water on the road and the other vehicles.

Suggestion - if you get caught in a rain storm - try your sunnies- it might improve the visibility!! But I bet other people think you are mad but at least you can see them!!

A note for my friends - it appears that my internet provider has had a blow up - I have internet but no email - for heaven knows how long - so if you sent me a message - sorry - I'll answer when I can!! (or use Sparkmail!!)

    Good morning all - someone shared that tip with me and stated that the police and highway patrol put theirs on during the rain. Also in the state of Kansas if you have your windshield wipers on, you are to have your lights on as well. Thank you for the reminder - Hope everyone appreciates the day and uses it wisely.

    I have photo-gray lenses that turn automatically. I yelled, "Deer" one evening when my husband was driving in the rain, but there was nothing there. I have trouble seeing the lines at night in the rain and darkness. I try not to drive at all after dark in the rain. I will have to try to buy a cheap pair, maybe clip-ons. Thanks for the tip!

with the headlights coming at you. ... if that bothers you.

Who would have thought that Sunnies would help in the rain ? Perhaps it helps with the factions of light coming throught the rain drops.
