You have unbelievable power . . . Use your Spark!

Yesterday, a very special friend of mine celebrated a very special birthday! Her name is Susan. She shares with me and those who visit her page, the very essence of her life, her joy, and her spark just by sharing the way she does through these very vibrant SparkPages!

Susan lives a life that I strive to model. Her priorities are in order: Faith, Family and Friends! Because of our frailties, we often fall short in maintaining the richness and abundance of life that comes with a quality and abiding faith life. It is then that we learn to forgive and come back strong.

Susan is my role model today! She is one of many who have blessed my life with the gift to encourage me to be my best. Thank you for being an exemplary individual in loving so many people within the SparkCommunity Ė you bless us in ways you may never fully know. Even in person you radiate a great beauty that is beyond words.

Being the visual person I am, the amateur photographer in me would like to share with you some pictures I took while on a recent walk. Nature also has a unique way to reenergize me (including a young deer that is barely visible in the woods):







Okay, I have a confession (as if you already donít know it). Iím a world class SAP! I can watch the last five minutes of ďTouched by an AngelĒ (TV Series 1994Ė2003) and find tears of joy falling from my eyes. Iíve come to accept it as both a blessing and a curse that comes with having a creative side: We do things differently (have different cars, build very different swing sets, take very different vacations, and the list goes on and on) than those who are more social-, action-, or business-oriented. I celebrate our diversity, as this world would be all too boring if we all liked the same thing. If I werenít so introverted, I could probably lead a seminar on our wonderful differences. Ah yes, having a thirst for life-time learning, means taking a wide array of self-discovery tests like that of the Myers Briggs, or simply reading self-help books.

Today, Iíd like to remind you that you are a very powerful person! Your words, how you think, and your actions are more powerful than you can imagine! I have found that some days Iím amazed at the power these SparkPages have to education, motivate, and move us. I give thanks to your gifts and talents through your friendship, team, and moving challenges! The Spark difference is stark! Whatever you do, please do not take these pages or your personal power for granted. While sometimes your words may literally fall on deaf ears, you may never know the impact your words may have on that one person who needs a little extra encouragement today!

The power to be just that spark to get our fires going, is evident through my many SparkTeam challenges. To my many SparkFriends and teammates who challenge me beyond my personal best, I say ďThank you.Ē One of Susanís quotes featured on her page touched me today: "At times our own light goes out and is rekindled by a spark from another person. A Healthy Binge! . . . Whatís up with that?

I have a tendency eat rather light (200-300 calorie) breakfasts so as to leave enough room so that I can splurge (or even binge) on healthy foods later in the day. Iím working to find strategies where itís possible to remain within nutritional ranges without thinking about eating or my next meal during my necessary ďdownĒ time. I guess this is what one might call emotional eating Ė something I need to work on further.

It seems that due diligence continues at every level of our weight loss journey. Itís a life-long learning experience that these 5% challenges offer help in making great eating habits that will carry over beyond the 8-week challenge.

In the meantime, today was an opportunity to work in three walks. Here are some photos I took along the way. I also had an opportunity to meet people from around the world and take their family photo. What a blessing!













Tonight, I also bulk cooked a vegetable I seldom ate in the first 40 years of my life, but now enjoy immensely. When served with one or two other curries, this eggplant curry is actually light, fruity, and a bit sweet (although no sugar added). Eggplant was on sale this week for only $.97 each (and most of my eggplants were a little over a pound). This double bulk batch made 48 8-oz snack bags placed in 12 2-lb quart zip locks. I'll also share with some of my Asian student friends looking for a little taste from home.

Yum, eggplant. I used to eat it every chance I got, but then apparently developed a mild allergy to it. They look soooooo good, though! You are certainly smart to batch cook and prep it down to freeze! It now can be enjoyed in the dead of winter when a fresh eggplant will not be available!! emoticon to you!!!

Sounds like your walking will certainly help you out on your 5% challenge! emoticon

    I cooked the last eggplant from my garden just last night. I sliced it, soaked in salt water, drained and dried the excess water, arranged on a sprayed baking sheet, sprinkled with some grated parmesan cheese, baked at 375 for about 25 minutes.

    Can you share your healthy eggplant cooking techniques in a blog or something? The only way I've ever cooked eggplant is fried in butter after coating in an egg/milk wash and dreged in cracker crumbs. Not healthy at all. On another note, I love the pictures you took on your walk. Beautiful!!!!

I know without a doubt this is a life long journey that doesn't end when I meet my weight loss goal. I have lost several times before and gained it back. I am looking forward to getting to that maintenance level!

    WOW, Evelyn, you've inspired me to want to try eggplant! I've NEVER cooked it [and not even sure I've eaten it] in all my years! Thank you for such a great blog! And I wholeheartedly agree that we have to keep diving deep for 'what causes us to emotionally eat' and tweaking our program continually! Thereís Joy in reaching goals!

I thought it best today to begin with looking at my September goals:

1) Maintain my goal weight within two pounds (WooHoo!) .
2) Average an hour daily cardio and strength training
3) Track food and fitness daily
4) Eat six or more servings of freggies (fruits and veggies) daily
5) Drink at least 12 cups of water daily
6) Sleep 7-9 hours a night six days a week.
7) Satisfy 4-7 recommended levels of: calories, fat, carbohydrates, protein, fiber, calcium, and sodium daily.
8) Spend at least 15 minutes daily in the study of Godís word.
9) Do something fun at least three times a week .
10) Complete the knitting of one prayer shawl.

In the meantime, beauty is all around me. Iím not a typical white person . . . I tend to dress internationally and tend to enjoy my time with friends from around the world. Diversity is an ďactiveĒ part of my mission statement, as is my faith. Iíve always had a love to travel through my friends. My newest friend from Sri Lanka and I were treated royally when we got to see the view of traffic going under the Aerial Lift Bridge. The Vista Fleet is a tour boat that makes two-hour tours of the Twin Ports. The Joseph L. Block discharged limestone earlier in the day and was leaving to go to Two Harbors to load taconite.





Sure hope you have your goals for September in place! In fact, put them in a place where you will see them often. Have a great month!

Two beautiful walks today!

I walked back from the grocery store and carried four bags of fresh veggies, of which I hit a super sale on eggplants and bought 11 of them. Along the way, I did a little strength training while enjoying the view.









After a welcome dinner for our new international students, I enjoyed a froggy Wisconsin Point with a friend:









The Lake Superior region richly blesses my life. Sure hope youíre able to see the beauty around you, too!

    So I re-read your blog and I got this big smile on my face. I realized that most people couldn't use 11 eggplant before they spoiled unless they operated a restaurant, but you could probably finish those veggies in about three days! I EXPECT PHOTOS!
