LAYERED SUMMER FRUITS W/CREAMY LIME DRESSING
Cater to a crowd with ease by serving this lovely and luscious
salad. Prep Time 40 min Makes about 24 servings (1/2 cup
Creamy Lime Dressing
1 pkg (8 oz) cream cheese, softened
1/2 cup frozen limeade concentrate, thawed
1/4 cup powdered sugar
1 cup whipping cream, whipped (or coolwhip)
3 cups cut-up cantaloupe
1 quart strawberries, quartered
2 ripe med mangoes, seed removed, peeled and cut up
2 cups cut up honeydew melon
2 cups blueberries
Mint leaves, if desired
1. In medium bowl, beat cream cheese, limeade concentrade, and
pd sugar with electric mixer on med-high speed about 3 minutes
until smooth. Fold in whipped cream(cool whip). Set aside.
2. In 3 quart bowl, layer cantaloupe and strawberries. Spread
half the cream cheese mixture over the strawberries. Layer
mangoes, blueberries and honeydew over cream cheese mixture.
Spread remaining cream cheese mixture on top. Garnish with
3. Serve immediately, or cover and refrigerate up to 2 hours
Try strawberry fans as a garnish. Rinse large strawberries,
leaving the stems attached. Cut each strawberry at about 1/8
inch intervals from the tip almost to the stem. Carefully spread
the slices to look like fans.
Put this in a clear glass bowl on a stem...displays beautifully.

May was a good month!! I want to thank my LORD & SAVIOUR JESUS CHRIST!!
I lost 2.2 POUNDS and won prizes at TOPS(won contest $20 & consistency charm and another charm for the most lost in May) . I was reminded to focus on the positive by a dear SP friend. Thanks Carol!!

1) LOSE 10% OF MY WEIGHT IN 18 MONTHS (JULY OF 2011)
2) REDUCE MEASUREMENTS ~ SMALLER WAIST, HIPS, BUST ~ DRESS SIZE9/10
3) MAKE MY DR. HUGHSON HAPPY ~ GOOD COUNTS FOR BP & CHOLESTEROL
