Did some batch baking today

Hi since it's kind of cool and drizzley here I decided to do a bit of baking, Hubby has a sweet tooth, so do I, so I have some secret plans to keep treats to a limit.

I like to make a cke in a cookie sheet pan, then cut into 4 big pieces and freeze 3 of them, then I can pull one out occassionally for hubby's treat/dessert..I may have a small piece too, but it's way better thn having that whole cake staring at you from the cupboard!!''

Today;s cake was an idea I saw somewhere to add pumpkin to a carrot cake cake mix, I added the other ingreidents from on the box and amped up the cinnamon. Yummy and safely tucked into the freezer.

My next project was to deal with bananas that didn't ripen right..I hate buying green ones since you never know if they'll ripen nice and this bunch didn't. So I made 2 loaves, cut them in half and froze 3 packages. :) So I've stocked some healthy treats when we get busy bale hauling!

I really love to cook and like to stock the freezer. I've been searching around for ideas to add to the ones I already use. I found some neat ones..like freezing batch lasagnas in ice cream pails then pop out and store in freezer bags. When you're ready to cook . put it into the crock pot..cool hey! There was another similar that was mexican with layered tortillas and beef and cheese, yummmm!

My favorites are batch cook meatballs, baked on a cookie sheet, then freeze in portion sise bags (it's what we're having for supper tonight with homemade freeze tomato sauce and pasta) I also take the ground beef mixture and make up patties and or meatloaves. I have been known to assembly line make homemade pizza's to freeze. I love to cook a couple roasts and slice paper thin with my electric meat slicer and package into small packs.

One member mentioned BBQing a lot of chicken breasts, then freezing them, great idea! Then there's the old stand bys like chili, soups, stews, cabbage rolls etc.
I also love to fry up a lot of ground beef, drain off all fat and freeze in little packages for quick meals like chili, sloppy joes etc.

If any of you have any batch cooking ideas I'd love to hear them :)

Better run..hubby is putting out bales and I need to take off twine.

    to Gleoria..I just bake a regular 2 layer cake mix in a large cookie sheet with sides..it takes between 10 to 15 minutes aprox. to bake. Then I usually frost with canned frosting

i Donna,

I have this cookbook and often make one of the recipes that makes 4 meals. Everything gets frozen flat in freezer bags so it defrosts quickly. Most of it can cook in a crockpot.

I have this recipe book and use it a fair bit. I never organize a formal "big cook" with friends, but I will buy the ingredients for 1-2 recipes and then make the recipe for 4 meals. Everything gets frozen flat in freezer bags. Many things can be cooked in the crockpot.

    That is a great way to have meals when you are pressed for time. How do you bake a cake in a cookie sheet? How many sheets can you get from one cake mix or two layer scratch cake?

    Mmmmm, makes me hungry! You're way ahead of me with ideas, but I just read a recipe for barbecued chicken done in the crock pot with cranberries added. Sounded great.

I like the idea for freezing in tubs then popping them in the crockpot to heat -- nifty! Since there's usually just me here, I freeze the whole cake when I bake, after cutting it into little pieces and putting them in ziplock bags. I can pull out one piece at a time, and it takes so long to thaw out, I'm not tempted to have another! As long as it's chocolate, I'm happy. emoticon

Calves off to market!!!

Hi..you'll all be tired of me talking about my calves..the four legged kind and my injured leg calf!! Boy is it sore today..been trying to rest it since out 4 pm. but it's still throbbing!!!

We got the calves all sorted from the cow, then sorted from each other..ones to keep /sell and then loaded into the semi. It was about 2 to 3 hours of leg work :(

Drove behind the semi to watch them weigh and track their weights, etc. Then had a quick lunch (I treated myself to a tiger tiger ice cream cone..small) and treated myself to some magazines, too.

Checked another herd of cattle at our far away pasture on our way home..then hauled some bales.

While hubby hauled more bales, I put my leg up..finally. Phoned my sister to set up our Christmas present/spa weekend..then made reservations..we're going the last weekend before Christmas!! Our idea is to be all ready by then and just relax, or at least have the shopping finished so we don't spend a bunch of money :)

I made a quick supper..my favorite for Sunday supper..cover a pan with tin foil, put chicken pieces and a sweet potato cut in half, cut side down on pan..sprinkle with spices..I used dollar store chicken grinders, then bake for about one hour..hubby had left over beets with his, I had a spinach salad with mine...dessert was a fresh apple.

It's raining out here and snow is forecast for tonight, tomorrow and Tuesday..but not to stay I hope!!!! We wanted to haul more bales tomorrow so hope we don't get too much moisture!

The calves sell on Tuesday so we're off to Assiniboia again!!

Going to take it easy, rest my leg for the next few hours till bedtime!!

We got the cattle moved into the corrals today and fed them..I cut twine and removed it from 10 round bales. We need to start around 6 am sorting them so they are all ready for the semi tomorrow at 9 am..them we'll drive to Assiniboia to watch them weigh..we'll be selling around 90 of our 140 calves, the sale is on Tuesday. Wish us luck for a good price at the auction!!

My leg has been sore since I was on it alot today..tomorrow will be worse since sorting is hard work and lots of running!

Hubby got finished baling Woo Hoo..now we have to haul them all home!!

Today was my favorite sister's birthday..we talked on the phone, she just lives in Regina. We made plans to give each other a trip to Moose Jaw Spa together for a Christmas gift :).I'm looking forward to that!! I love Temple Gardens Mineral Spa :)

Well I should get to bed cuz 6 am comes early!!!

Yay for the MJ Spa! We loved going to the pool when we lived in MJ! I'm thinking we should do a SK Team SP Retreat sometime and do it there! That would be so much fun!

    I hope there are a lot of motivated buyers bidding on your calves and the prices are HIGH!!! I do love the cattle auctions, although when we are selling I am always nervous until it is over! Good luck!

Not a big fan of markets, always seem to remind me of slave auctions .... yeah I know it makes no sense, but that's just the way they strike me.

Finally finished the garden!!

I finally got in the last of my carrots, beets and turnips. My turnips weren't very great this year..only a couple meals. I used lots of carrots through the the summer and fall, but I washed up 2 large bags and 10 ziplock sandwich bags of mini carrots for snacks. I scrubbed up all the beets and cooked and peeled them all. Then I sliced and ice cream pailful and made fridge beet pickles, then I froze 7 bags of sliced beets and 4 bags of diced and we had beets for supper.

My sister told me a hint for washing carrots..using the washing machine :) use gentle and rinse first if they're really dirty, don't fill too full , then bag up and store in fridge.

I had to go to town again today to mail stuff for hubby's job, then brought hubby coffee in the field.

I did some laundry and did some organizing in the bedroom, sorting clothes , changing out some new lamps. It looks better already, I do want to paint it soon!

Well I should get to bed and be ready for our big, busy weekend..keep on sparkin'

Stay turned for mid-week when I'll do a recap of October's goals..I may have to snoop on other's blogs for some inspiration for November :) I know my November theme will be "Hospitality"

My recumbent bike is in Weyburn for me to pick up Wednesday so I'll be including alot of biking to keep holiday weight gain away...

Helped with a flu clinic

Hi..I helped my cousin's wife, the health nurse with a flu clinic in town today. I got a flu shot too. It was from 9:30 to 4:30 so I was gone most of the day..we gave about 130 people flu shots :) so it was a busy day..I did the paper work.

When I got home I tried to phone hubby out baling to see if he needed me to pick him up but he was out of cell service range..hardly ever works here in the sticks :(..so I drove to the neighbors to look for him. He wanted to bale until 8 pm so I went back home and made a late supper, did some chores..feed the dog and our zillion barn cats (one day I should post a picture of them!!) Then went back to the neighbors to pick him up.

Leg is still very bruised and sore. Wasn't off it as much as I had hoped to be today. It was really throbbing when I went to bed last night!! Hope it's better by Sunday when we have to round up, sort and load a sei with our calves to take them to market. It's a pre-sort sale so they need to be there two days brefore. The sale is on Tuesday and we'll go watch the auction..most of our year's pay will come on Tuesday..hope the prices are good :)

Well better be off to bed..hope everyone keeps on sparkin'
