Using my bounty

Today I made an apple pie for DH with my Granny Smith apples from the bountiful baskets. I also used Leeks for the first time in a potato soup. It was very good.

I'm looking forward to next weeks veggies and fruits.

    Soup sounds good. I love potato soup. I am not a big fan of pies so I make apple cake instead. Made one a couple weeks ago, we ate a piece and I sent the rest to the pool room guys!

    Potato leek soup is one of my favorites. Unfortunately it is a bit higher calorie than broth based soups but it is delicious!

Bountiful Baskets

Well I had a nice surprise tonight. I picked up my first “Bountiful Baskets”. It was all of $15 + $3 handling fee. I didn’t know what to expect of the food. I couldn’t believe how much food there was.

I got 8 bananas, 8 oranges, 16 oz of strawberries, 8 oz of blackberries, 2 grapefruit, a bag and a half of Granny Smith apples, two leeks, 4 zucchini, 3 bunches of romaine lettuce, 3 cucumbers, asparagus and broccoli! The bad thing is now I will have to cook! You never know what you will get. Everyone tells me they love it and it makes them cook things they don’t normally buy. Bob is suggesting an apple pie already!

    Great fixings for salads and soups. I find green bags keep my lettuce fresh looking for over a week.

    Lots that can be cut up and put in the freezer. I love adding fruit to my oatmeal. It's a great way to try new things and find new recipes.

I have taken my eye off the ball

Yep. I had it right for several months. I went on a two week vacation back in Sept and did well the first week and then my eye started to wander. I never focused again and here it is January.

I did prove several things to myself though.

1) That I need to make it my priority to get it done
2) That even on vacation (week 1) I was able to stay on track
3) That my husband was supportive
4) I felt better.

So it is a new year and a new attitude for me. I need to go back to what I was doing right.

    I put a list on my fridge that says "I Matter" and listed all the things I do that make me feel better. Not a "should" list. These are just choices I can make when I have gone astray... and some really great days I do them all. Everything from exercise ten minutes to go outside and breath some fresh air or take my meds on time. emoticon emoticon

Green tomatoes with pictures

This year we had a hard time getting our tomatoes started but somehow with advice from local farmers about "beating them and not watering so much" we had a crop. But, it was a late crop. DH loves to play with the garden but somehow I get stuck with the work of doing something with the garden. I don't mind adding a tomato to salad or frying some squash but when he came home with tons of green tomatoes and wanted me to do something with them I thought I would show him!

So to the internet I went.

The first "adventure" was a tomato pie! I figured he would not like that at all and surely I would not have to do this again next year. So, my pie....

I figured it would be a one bite pie. But, he has managed to eat 3/4 of the pie.



So a few days later I made a cake. It was a recipe I found on the internet and when my son arrived while I was making it he said it sounded "gross". The funny thing is by the time it was through baking it smelled so good we ALL had a piece. There is now one slice left!








Of course I did do the traditional Fried Green Tomatoes



and Salsa Verde






I am not sure I managed to get out of harvesting the green tomatoes next year since even my son had 3 pieces of the cake and took a slice home to his wife. And DH seems to be eating everything.

I guess it wasn't as bad as I thought. I had fun looking for recipes and found out I'm a better cook than I expected! LOL

    It's amazing how many different recipes you found for green tomatoes. All of them sounded yummy. I might try the tomatoes cake some time. The frosting on top looked scrumptious. I love how you present food in your pictures. They should be in a food magazine. Happy Thanksgiving to you. Hope it was a good one. Ours turned out pretty good from what I could tell from the silence at our table. My dd said it was the best turkey ever. emoticon emoticon

    Wish I was closer so I could help you out-we love fried green tomatoes!!! I buy 2 or 3 occasionally to make some since they are so expensive as an appetizer.

I am from the Midwest and never heard of eating green tomato anything. But now I am a happy southerner and I have fried batches of green tomatoes... YUM!

Kids are off to Cozumel

Well, I'm in Dallas for the next 10 days watching 4 year old granddaughter Calleigh.

She didn't have a nap today since we took her parents to the airport. So about 7 pm she had a meltdown! I cuddled up with her and we watched Sleeping Beauty for the hundredth time. I watched it earlier with bunny ears on! We do what we have to!

Tomorrow she has T-ball and we will go watch her cousin play later in the day. A no nap day again because of timing so she will likely have another meltdown. Then there is the time change. Oh my....testing grandma!

Well, I think we will actually have a great time once we get in our groove!

    Actually...depending on the level of activity she's had, a 7:00 pm bedtime isn't odd. She'll probably sleep through the night! At least 7:00 pm is a good time to begin all of the preliminary bedtime rituals: bath, snack, bedtime story, cuddles, etc.

    You certainly will...I took my granddaughter in for a few months. She is 4 years old and I have a 4 & 2 year old sons, quite the house full...though my daughter will be coming tomorrow afternoon to visit for an overnight. I also have to take them all shopping tomorrow for a few things...you should see the looks I get...pretty funny.
