Chicken a La King

Today was my first cooking class. I made chicken a la king and put it on top of spaghetti squash. Mmm mmm good. DH actually had 2 servings.

I had fun shopping for the ingredients - cumin, 4 peppercorn pepper in its own grinder, green onions, red bell peppers and lo salt lo fat cream of chicken soup. I already had the spaghetti squash which we just put spaghetti sauce on usually. My calorie count came out to 415 for the meal, 1303 for the day and my best carb, protein fat breakdown ever. (carb - 48.8 , protein - 20.6 , fat - 30.6)

    Sounds Yummy....Was that a Sparks recipe? Love Spaghetti Squash, but we didn't grow any this year, had to by it at the Farmers Market. Much prefer it picked fresh from the garden....But it's still so good for you....Never thought of putting Chicken A La King on it...just may have to try that.

    And delicious! Can you come cook for me? You can hop on your bike and just pedal on over. Or, up and over. Wow - I'm tired just thinking about it, it's probably 800 miles. But just think of the calories you'd burn! (Okay, enough silliness. I'm off to work now.)

First Bike Errand!

I'm 63 and I feel like a kid this morning. I just bought panniers for my bike on a kind of a whim. Well, now that I'm out of work I decided to use them. I rode 3 1/2 miles to the library and got some books. I just started riding a few months ago and have never biked on the road. I always use sidewalks or bike paths. Well, I went to the Rec Center and got a city bike map. I figured out how to get to the library on my bike and set off. I used the greenway for the first half of the trip then had to get on city streets. There were bicycle lanes on most of the streets and I didn't have any problem. I was nervous going but happy and pleased on the way back. Next trip to the grocery store! or the Rec Center or....

    We live in the country and I have been looking at a bike we have just sitting there. My dh a few yrs ago bought a couple of bikes and of course both are men's bikes. I think I am going to take the plunge! Maybe get a bigger seat though! :) I will be 56 in Nov. Kinda have this fear of falling........ Thanks for showing us that it is possible to do what ever we set our minds to!

    That is SO COOL! Panniers are near, if not at the top of my "most wanted" list...too cheap to spring for 'em yet...want to be sure I put enough $$ into them to get ones that go the distance for me.

With a little vigilance, city streets can be pretty navigable without TOO much headache...

And the feeling of FREEDOM...to know that your own legs are UP TO THE TASK! Nothing can beat it!

I wish I could get a bumper sticker for my bike: "I get better mileage than your Prius!" :-)

    Love it! I started playing tennis 4 years ago and am now a league player, A level. It is so great to love your exercise! What a fun motivating thing to do. If you keep a biking journal with the minutes biked and all the places you go on your bike, I am sure your passion will grow. If you look under sports activitys on the teams or msg boards I am sure you will find some women who will share your new passion with you. I wish there was a tennis sparksteam!...     Isn't it such a great feeling to accomplish a new task. The library would be My first adventure as I spend so much time w/them. But I applaud you for setting out, not knowing what would happen, how the traffic would be and on the "roads" for the first time. You have a big positive to celebrate.     Wow! I'm excited for you! I wish I could ride my bike on errands, but I can not handle getting back up the hill we live on or the narrow roads without bike lanes. I sometimes load my bike on the rack and take it down to the valley floor and ride from there just for fun and exercise, but not on errands. We're heading out on a 10-day road trip on Thursday and we're taking our bikes along.

I'm heading out to my seniors bowling league in a minute ... at 66, I'm one of the youngest on the league (and one of the worst bowlers). Love it though! emoticon emoticon

Fall in the Mountains

The trees which just had a tinge of yellow last weekend have golden tops this weekend. The smell of smoke from fireplaces is in the air. We need to change our summer comforter for our winter one. The porch thermometer read 30 degrees when we went out for our morning coffee on the porch. I had to wear a jacket on my early morning hike. The hummingbirds have definitely disappeared. Ah sweet Fall!

    We've got the same things going on here except the hummingbirds are still hanging around. I keep filling the feeders thinking surely this will be the last time this season. Hubby and I are heading out on our fall trip this week. This year we're heading to northern Idaho and into Canada. Sure hope the fall weather holds until we return ... stay away for a while snow!

    I'm NOT ready!!! Although I love to live in Missouri and like you experience the season's changes, it just seems like such a change from summer to fall or wintr. New Work Day

I spent most of the day online looking at job postings and applying for the requisite 5 jobs a week. I applied for 5 positions because I had to but only 2 of them really appealed to me -- one as a clinical nurse specialist the other as a staff development coordinator. I'm exhausted.

I also had to go to the dentist because somehow I chipped a tooth and it needed to be repaired.

The day was beautiful so I did a little shopping and met a friend who wondered why I wasn't at work on a Thursday morning. I was ok telling her and actually am beginning to feel more comfortable with my new status.

I didn't get as much exercise in as I should last week so I was happy to swim this morning. Tomorrow I want to ride my bike.

I finally hit 189 this morning after a full month at 190. My calories have been good the whole time since I was laid off so I am proud of myself.

Onward and upward (oops, downward I mean!) emoticon

    Last night, I watched FIT TV.
They had a six month training of four co-workers. 3 women & 1 man.
The women did not lose significant weight, but they lost a lot of inches and body fat. It encouraged me that when the scale doesn't move, my body is probably still improving.

Busy Day

Got back from the cabin last night because I had appointments today. Went to the gym for a short treadmill workout and strength Training on the equipment this morning. Thank goodness the Rec Center is open...last week it was closed for yearly maintenance. DH and I went for Eye appointments this morning since our Vision Insurance runs out on 9/15/10. I needed new glasses and he needs cataract surgery... so I'm glad we went. After lunch I went and registered with Unemployment and signed up for benefits. Then we went to our Financial Adviser to see how much impact the layoff would have on our plans. Not too much, thank goodness. Lastly we had to go to the Car Repair because my trusty CRV sounded really funny coming back from the mountains last night. Turned out an engine block was cracked. Tomorrow we go to get new tires.

I have to say that so far I haven't been bored being out of work! emoticon

My son, who is being laid off because his company is sending the accounting jobs to INDIA, just visited with the Labor Dept yesterday and found out he can get some help to finish his degree (because his job was lost due to out-sourcing). He was very pleased to have the unexpected turn of events, and I am so happy for him to finally get his degree completed. He is 27.

I know that doesn't have anything to do with you, except being laid off. But I just had to share emoticon
