500 calories and I'm stuffed!

I decided to track my food for a few days to see how many calories I was getting, just out of curiosity. I ate 500 calories today and I feel stuffed! Seriously, I am so full. Here is my menu. Keep in mind, I only ate lunch and dinner today because I work the night shift. This means I sleep until 3 PM then wake up, eat lunch at 5, then eat dinner at work at 11 pm. I usually am just not hungry the rest of the night.

Lunch: 1 cup black beans mixed with sweet peppers and onion.
2 cups of lettuce, 1/2 tomato, 1/2 cucumber with ETL ranch cashew dressing.

Dinner: 1 cup black refried beans, 2 cups lettuce with 1/2 cucumber, ETL ranch dressing, 1tbsp of ground flaxseed. 1/2 cup grapes, few pieces of cantalope.

It is amazing that even though I ate 500 calories, I am full because I am getting the nutrients my body needs to feel full. That is the beauty of ETL.

On a side note, this week is my last week of night shift!!!! I am starting day shift on Sunday!! I am curious to see if I will lose weight now that I will not be eating at night. I can't wait!

  


Motivation

During the last week, I have had friends and co-workers comment on how much weight I have lost. I must say it feels great, especially since I have been on a plataeu for a few weeks. Everyone also asks me what I am doing and I explain to them what Eat to Live is. The response that I get is, "Ooohhh, I can't give up meat." I explain how much energy I have, how much my skin as improved, and how good beans really are!! Not eating meat can seem negative but the long term effects of no meat, is worth it!

Now, more than ever, I am motivated by these compliements to keep eating this way and to get to my body's target weight loss.

ETL Friendly Salsa

My husband and I have been on a Mexican food kick. A good friend gave me this recipe for salsa and it is AMAZING. We ate almost a whole jar in one day. I mixed it into my refried beans and used it as salad dressing.

Salsa

Ingredients:
1 28oz can whole peeled tomatoes (I used salt free).
2 jalopenos or pepper of choice
2 small cans of original Rotel
1 bunch of cilantro
1/2 yellow onion
2 cloves of garlic, minced
1 tsp salt (I omitted this)
1 tsp cumin
1 tsp sugar
1 tsp crushed red peppers (optional)
juice of one lime

Blend, tomatoes, onions, cilantro, garlic and jalopeno in blender or food processor for desired consistency. Add spices. Simmer on stove over medium low heat for 15 minutes. Take off stove.
Add juice of one lime and stir. Let cool.

Heidi's Note: After blending ingredients, you don't have to cook everything. I do that because my husband likes the onion to be soft. I also find it blends the flavors together. If you don't cook the salsa, skip that step and add spices and lime.

    Roasting the veggies is a great idea! I also realized after I made the salsa, that Rotel is not that ETL friendly because it does contain salt.

    I like roasting the veggies before I make salsa. They get a nice smoky carmalized taste.

Refried Beans without the Refry

I found this recipe while googling "refried beans." I made it ETL friendly and it is my husband's and my new favorite way to eat beans. I made this with pinto beans and my husband has already requested a second batch made with black beans. I also made half the recipe because I wasn't sure it would turn out...but from now on will make the whole recipe.

Refried Beans

Ingredients:
1/2 onion
3 cups dry pinto beans (or other preferred bean)
1/2 fresh jalopeno, seeded and chopped
2 tablespoons minced garlic
5 teaspoons salt (I omitted this)
1/8 tsp cumin
1 3/4 tsp pepper
9 cups water

Place onion, rinsed beans, jalopeno, garlic, salt, and cumin in slow cooker. Cook on high for 8 hours, adding more water if needed.

Once the beans have cooked, strain them and reserve liquid. Mash beans with a potato masher using reserve liquid as needed for desired consistance.

Note: The onion is supposed to fall apart and dissolve during the 8 hours of cook time. My potato masher did not work well so I threw everything in a blender and blended it until I got the desired consistance. Because I did not add salt, I added the juice of one lime. This helps preserve the beans and adds a little saltiness.

Note: I ate this on a tortilla one night. Another night I just heated up the beans and put it over lettuce.

ETL for 6 Weeks

Since January, I have lost 18 pounds which is amazing. I have not been 100 percent ETL either but on the whole way more healthy.

I would like to lose 10 more pounds by the end of June. I noticed I lose weight the fastest when I stick to ETL very strict. This means no meat and a small amount of whole grain carbs every day. I know I can lose the 10 pounds in the next 6 weeks.

I have found two amazing recipes that I will be using very frequently which my husband also liked. I will post these as separate blog entries.
