Yup - you read that correct!

When I got on the scale this morning it read 129.4.

I can't remember the last time I weighed in the 120s... I think maybe 5th grade? Maybe 4th grade? I remember being over 100 pounds in 3rd grade.

I am not expecting to stay at this weight. I think it is nice, but I am ok with weighing in the 130s. I was at 135 and perfectly happy right there, but I have to admit, it feels pretty good!!

I have a few friends that clutter my Facebook wall with things about GMO foods, Monsanto, eat organic blah blah blah - You know what I have noticed though?

every single one of my friends that post about the danger of GMO foods and processed foods are.... (wait for it) SMOKERS!!

seriously? You are complaining about the chemicals in foods, but you are smoking? Really? Explain this to me please... I am just shaking my head.

No really, I am shaking my head.

I don't get it. I mean, I get being concerned about those things. I personally am not a fan of it either, but don't lecture me on how horrible it is for me to eat an Egg McMuffin with a cigarette in your hand. Seriously... don't.

    Smoking is an addiction and like any other addiction such as to food it is hard to break. I quit April 2/13 because I want my surgery and I had to quit before I could be recommended for the program. It irritates me that people feel smokers have no rights to be concerned about any other health issue just because they smoke. Thats like saying someone who drinks Soda can not comment on any other health issue because they are still drinking soda. Do people who have a high BMI not have the right to be concerned about health issues because they have a high BMI? one thing has nothing to do with the other. Sorry for the rant but it gets to me how smokers are now some kind of plague on society just because they have an addiction to something that is totally legal and used to be accepted.

    What about the FB posts that are of YUMMY looking food!!!! I just quit smoking last December and have not had a soda since last August. I understand what you are saying because when I switched to soy milk, I heard that it was bad. I just keep trucking along doing what I feel is best for my body.

    Oh wow. Yeah, um, that's insane! I just became aware of Monsanto when I watched Food Inc. a few weeks ago and wow....the mafia is like child's play compared to this crooked organization. But even so, I'd have to say cigarettes are worse by a long shot.

    I agree. I remember years ago, I went to the gift shop of a hospital to buy a candy bar. A doctor looked at me and said "That's not good for you." He said that but I saw the cigarettes in his pocket and shook my head. He has no business saying something isn't good for me. The quack!

Another Mud Run?

I've requested the day off of work. I am hoping I will be able to take off for this. I REALLY want to do it. I think it will be a lot of fun and an all around awesome challenge. I have a few months to train, so by the time this one rolls around I can be one bad a$$ mo-fo! Rawr!

I actually turned heads at work yesterday. I wore one of my new outfits from White House Black Market. It was a black tunic and black capri leggings. I wore black high heeled sandals and a large, gaudy silver necklace. I WISH my camera was working (it got ruined at Mud on the Mountain) I would love to have posted a pic! I felt very empowered. I just plain felt awesome about myself!

I got my hair done on Tuesday. I decided to go with Hombre highlights. It looks pretty good. It has been a long time since I have had a lighter color in my hair. I like it a lot.

I am thinking about hitting the tanning bed... My hope is that if I build up a base tan, I won't burn as bad as I usually do this summer when I am out in the Jeep and at the lake.

I hit my all time lowest weight I can ever remember today. 130 pounds... I have literally lost 1/2 of myself. I don't even know what to say to that?!?!? Half of myself... wow!!!!

Needless to say - I am feeling really good about myself right now. I like where things are going!

I am looking forward to a BBQ at my Grandparent's house this Saturday. Cook outs are a rare treat for me because I usually work most "cookout holidays" and my boyfriend is too cheap to buy me a grill.

The All You Can Eat Buffet

I touched on this on a message board, but I really want to expand on it because I don't think people quite understood what I was getting at...

About a week ago, a friend and I went out to an all you can eat Chinese buffet that had just opened up. It had a very large selection of different foods. They had a Hibachi Grille along with a full sushi bar and a bar of Traditional (as in Americanized Traditional) Chinese food.

I made my selections -- I had a chicken on a stick, some grilled veggies and chicken with teriyaki sauce, a bite of cake and some watermelon. I thought everything was fabulous! It was very fresh and very flavorful!

When the checks came, my friend apologized to me for "not getting my moneys worth" I was a little stunned? I had a lovely dinner, I was no longer hungry, I enjoyed the food and I enjoyed the company. How did I not get my moneys worth?

I then realized that he, along with so many other people, associate eating in excess (or as my grandmother would say, making a hog out of yourself) as getting your moneys worth. I too used to be one of those people. If I didn't have 10 platefuls of food, then I didn't get my moneys worth... What is that even about? Seriously? No wonder I was so fat!

So, in conclusion, I have learned that getting your moneys worth at a restaurant isn't about being a pig and devouring everything on the table, but rather about enjoying your food and the people you are with.

I'm working on re-training my brain to look at buffets and other restaurant meals with my family as opportunity to 'taste' tiny amts of a lot of different things.

And as you point out: focus on enjoying my family and friends!!!

Chocolate Peanut Butter Filled Cupcakes w/ Peanut Butter Icing - Most Requested

**Warning!! ** This is, in no way, shape or form a healthy recipe.

For my co-workers birthday, I give them the choice of cake. I will make or buy whatever cake they want. This is the most requested. Remember... a healthy lifestyle is all about moderation!

1 chocolate cake mix of your choice prepared according to package directions

*peanut butter filling *
2 tablespoons of butter softened
1/2 cup of peanut butter
2/3 cup of confectionery sugar
Place in a bowl, and blend together using a mixer. Once ingredients are combined, form 24 balls and place on wax paper

*peanut butter frosting*
1 cup of milk
5 tablespoons of flour
- place milk in a sauce pan on medium heat and slowly add flour. Stir constantly until a thick paste forms. Remove from heat and allow to cool.

1 cup of granulated white sugar
1/2 cup of crisco
2/3 cup of peanut butter

combine sugar, crisco and peanut butter. Beat together. Once mixed slowly add the flour paste. Continue to beat on high. It is at this point I usually add more peanut butter. I just keep adding globs of it until I think it tastes right. It is a matter of preference.

**preheat oven to 350**

Line a muffin tin with liners. Equally divide the cake batter among 24 muffin cups. Place one of the peanut butter balls into the middle of the cup and bake for 20 mins. Allow cupcakes to cool and add liberal amounts of frosting.

My mom and I figured out the calories one time, and it was over 400 for one cupcake!

The Birthday Girl/Boy gets the left over frosting and 2 unfrosted cupcakes. This way they can add frosting with each bite.

If anyone decides to make these, I hope they enjoy!
