The Joy of an Apple- Day 4

Today I rediscovered the simple pleasure of eating an apple. Sadly, I do not get as many fresh fruit and veg as I should. Next trip to the store, I will be buying more fresh apples. I don't know if it was an exceptionally sweet apple, or if it was just what I needed at that moment. It was a golden delicious. I have had good and bad apples like these in the past. This one was crisp, juicy and ,oh so, sweet.
I am still struggling with getting enough protein, but everything else was within parameters today. I deem today a success.

    I've been eating a lot of apples the past month. And more oranges. It's definitely a new habit for me, since my snack choices have historically been more in the candy/cookie arena, than in the fresh fruit/veggie category. Glad to hear you are making progress.

Day 3

Today seems to be more balanced out with my sugar. I am learning what foods eat up my carb quota quickly. It seems strange to be eating so often, with snacks in between meals to keep things level. I have alot to learn and love learning, so this should be an exciting journey. Eating out won't be a problem. Since the pancreas went on vacation, eating out is out of the question. I am surprised that I do not miss it. Not to mention the cash we are saving.
I bought my glucose meter today. I like that I can get software and upload data into the computer. Then I can print reports for the doctor or dietitian.

Yesterday I was able to stay within all the parameters my Dr had set for me. It felt like all I did was eat, but stayed well under the 1500 calories.
Today, I am not having as great a day. I think it has to do with my breakfast choice. I made buckwheat pancakes. I only had one but I have not yet bought any reduced sugar syrup. 2-3 hours after eating it, my heart was skipping around in my chest and I needed to sleep. I slept through lunch, which is fine by me, since my pancreas is hurting and making me nauseous. If I were to guess, I would say I dumped in too much sugar with breakfast.

  


Diabetes trying to take hold

Day One:
Today I learned from my doctor that my body is trying to lean toward developing diabetes. I have had problems with my pancreas since being hospitalized for pancreatitis. I have already dramatically altered my eating habits due to the pancreatitis, and now need to fine tune it even more. On top of that, I have a gluten sensitivity that I have to work into the mix.
I will be seeing a dietitian when my insurance kicks in. Until then, I am doing the best I can with the knowledge about nutrition I have learned in my training in Culinary School.
It is a lot to absorb, a lot to learn, a lot to change.
