Serving sizes and making too much

Does anyone else have this problem of making too much food. I do. Wish I could figure out on how to cut recipes and make the only for 2-3 people without a ton of leftovers. I cleaned out my fridge today and it was terrible because of all of the things I had to throw out. emoticon

Went to the store today to, and trying to eat more healthy is expensive. Spent too much for so little, so I am open to ideas and suggestions.

    I find the best way to avoid waste is to make a big amount and freeze it in portions so tht you don't get stuck eating the same meals for days on end. It can work out cheaper as well. :-) It also means that if I get unexpected visitors to feed, there is always something I can defrost for a meal, and just keep a few staples and fresh veggies to have on the side. Any leftover fresh veggies that are about to go past their best go into an 'end of the week soup', along with maybe some lentils or potato to thinken it up a bit, and that can also be frozen in portions.

    I feel your pain! I went from feeding two growing boys with huge appetites to being an empty nester. I now look for smaller sizes of things like pasta sauce, beans, and meat. I do like to have leftovers for the next day's lunch, but hate eating them for a whole week. It helps to just be mindful as you are measuring ingredients.

    I'm single and love to make things in batches...soup, chili, Chinese, etc... so I just have to microwave them. I hate to cook, so it is nice to find yummy homemade meals in the freezer that take little effort to thaw when I come home worn out and grumpy.

    There is one thing though. I cannot freeze a lot of food. My son and myself are going to be moving and are in the process of cleaning out the freezer, so I'm looking for ideas on how to better make either single serve or or enough for two people every time. As, it stands now I make emoticon way too much.

    I agree everyone else here. Use coupon and discount food grocery store to shop and saving foods by froze left over. Eating healthy might be expensive so time but way better then eating processed unhealthy foods and get sick. I do not have health insurance yet. So eating healthy for me is like having health insurance for assurance for my health.

    If your area has one Aldi's is great for great food and produce at lower prices. Like MNABOY suggested coupons are a way to go. Freezing would be good, if you have a good relationship with food. If one doesn't, and I think it's why many of us are here, it's too tempting to take out a bowl and pop in the microwave. Personally, I keep just enough food on hand for each meal. If I only buy 2 pieces of chicken chances are real good I am not going to eat 4 pieces. You can't eat what isn't there. Hoping in time that changes but for now know thyself and if a food's a trigger give it away or don't buy it in the 1st place. emoticon

    I like to make large recipes of foods I like and freeze proper portions for one meal. That way I get to eat what I like for three or so meals without cooking.
There are some articles about eating healthy for less on SP and other sites.
my daughter is trying to teach better eating habits and is having to show how to do it on a fixed budget. She is also a coupon wizard.

  even if you make too much....freeze it...its good for a on the go meal...when you don't feel like cooking...its what i do...i use to cook for 9-10 people at a time so when i came back home and only had to cook for me and my kiddos we had tons of left grandma told me to freeze it....and its been an amazing thing cause some days i just dont feel like cooking.

Trying to lose weight. It seems be the only thing I do now. I found out I'm gluten intolerant, seems it makes me unpleasant to be around if you know what I mean. Anyway, what i'm wondering about is that i'm always hungry, but nothing tastes good. Probably, one reason I eat like I do, trying to find something that tastes good.

Oh why won't my weight budge it seems like I have been trying to lose the same amount of weight forever. My daughters wedding is around the corner and I'm still not where I want to be. I tell her I look like a bowling ball with legs.

I go to the gym on a regular basis and have gained muscle, although I'm not seeing much change in my clothes but have last a few inches here and there, just venting I suppose it seems a little hopeless at times.

    Oh, I don't know where to start I think I'm in pity party mode at this point. Looking at the weight loss of others is driving me nuts. They make it look so simple, but I know it isn't.

Please excuse while I go bang my head against the wall. JK.. Just frustrated I suppose emoticon .. the evil scale and the fact that if I look at something I gain an automatic emoticon five pounds.. That is how I feel.

I know how frustrating it can be (and believe me, I'm often frustrated as well). Maybe your body has gotten too used to your routine and you need to shake it up a little. New fitness routine? New eating pattern? I don't know. I just hope you find that key to your success!

    I hate when I get humbled from a scale or that wishing just doesn't make it so. How exciting to be having your daughter's wedding coming up. What a wonderful day for you both.

I hope you'll just think about the wonderful day. I don't know about you but I'm a pretty emotional eater...weddings bring out all sorts of emotions don't they? So look to all the happy ones, and not what your scale is saying to you.

Take one little step at a time and you'll soon be dancing at a wedding...and you'll be gorgeous, you'll be the one with the big smile and a few tears! emoticon

    I hate when my scale does that but water gain can do that when I ate to much sodium and or TOM can do similar things I'm sure you will be back down again

    Try not to weigh yourself every day to save yourself from the drama. 4 lbs. is just a fluke and will disappear as sneakily as it appeared.

    I. HATE. THIS. Or rather, I hate when that happens! What a disappointment. But like they say, it's water, it's natural flucuations, whatever. Doesn't matter WHAT it is, it's there and you just need to keep doing what you're doing to get it gone again.

    My weight fluctuation drives me crazy because i'm never sure of my actual weight, I need to get it down but the scale is very deceiving.

    That's happened to me twice. Four pounds of actual body mass equates to 14,000 calories, so unless you ate that much overnight, it's not possible for it to be any kind of weight that matters. It may come off again in a day, or it may stick around for a week or more before the numbers start to go down again, but whatever it does remember it's not real and try not to stress to much.

    I think you are just having some water retention. When I eat something salty I tend to keep water weight also when my monthly girls days. You'll be ok. Don't worry too much. As stress is very bad for the weight loss journey.

    Our bodies can fluctuate in weight by a few pounds every day. It all depends on water retention, etc. So don't sweat it!
