Vegan Burger With Corn

I had an amazing dinner lastnight. I found these vegan buns which is hard to do, usually there is atleast milk in them and I had a vegan all american patty made by Amys. I topped it with Soysation Cheese, Veganaise, Pickles and Onions. And I had a side of Corn On The Cobb. It was so delicious!!

Cheesy, Oozy Guacamole Bean Dip - A Vegan Recipe

Serves 8

1(16) Ounce Can Refried Beans
3 Large Avocados
3 T Fresh Lime Juice
2- 8 OZ Containers Non-Dairy Sour Cream (I use Tofutti Brand, it the one that is most like Sour Cream)
1 Packet Organic Taco Seasoning
.50 C Diced Mild Green Chilies - Drained
.50 C Black Olives
5 Tomatoes - Chopped
2 Cups Shredded Vegan Cheddar Cheese - Optional

Preheat Oven to 350 D
Spread a layer of refried beans in the bottom of an 8x8 quart glass baking dish. Pit and peel the avocados, and place in a bowl. Mash avocados with the lime juice, and spread on top of beans. Stir together the sour cream and taco seasoning, and spread over avocado.

Sprinkle the chilies over the sour cream, and top with a layer of black olives. Add the tomatoes, and sprinkle with the cheese. Heat the dip for 15 to 30 minutes or until heated through and the cheese is a bit melted.

Serve with Organic Tortilla Chips, if I dont make my own chips I buy Garden Of Eatin' brand.

Homemade Tortilla Chips

Cut up Ezekial Sprouted Grain Tortilla (I use a pizza cutter to cut) and bake them in the oven until crisp or you can dry roast them in a frying pan.

    I havent tried the Blue Chips, I love the Black Bean Chips the Pico De Gallo and the White Corn. They are yummy!!

Some Vegan Recipes That Are Easy

Crispy Tofu Slices with Orange Dipping Sauce &
Vegetable Fried Rice

I had this last night and it tasted like a Chinese Dinner.

1 Package Baked Savory Tofu
1/2 C Corn Flour
1/2 C Brown Rice Flour
Safflower Oil

Orange Sauce:

2/3 C Fresh Orange Juice (It take 3 Oranges)
1/2 C Maple Syrup

In a shallow bowl, mix the two types of flour together. Slice the Tofu in strips and coat Tofu in mixture on both sides.

Heat oil in pan on Medium Heat, when oil is hot fry Tofu Strips for about 3 minutes on both sides.

To make Orange Sauce mix both ingredients in a bowl and stir well.

Fried Rice:

Medium Grain Brown Rice (You can use Long Grain)
Onion
Mushrooms
Peas
Tomato
Shoyu
Garlic

Cook Rice according to package directions.

Dice up Tomatoes, Onion, Mushrooms and Garlic to your preference.
I steam Fresh Peas but you can use whatever kind you would like.

Heat Safflower Oil in pan, after hot toss in Onions, Mushrooms, Garlic and Tomatoes, add cooked Brown Rice and Cooked Peas and fry all together with a few drops of Shoyu.

Serve Tofu Strips with Dipping Sauce and Fried Rice while hot. The Tofu Strips taste a lot like Chicken and has the consistency of Chicken. Even if you are a bit hesitant it is worth trying, I think it will surprise you! If you try this recipe let me know what you think!
