Weight Update! good news, good news....

well, I 'found' my shiny new scale a few days ago (still unpacking from moving two floors down from 3rd floor to 1st floor...my knees are SOOO much happier!). Once I changed the batteries, I placed it on the floor in my bedroom...stepped on..got E on the display. Went thru this about 3-4 times, changed the positioning of the new batteries...then had a light bulb moment & realized: 'hmm, maybe I need to get it off the carpet onto a solid surface!"

Took it into the bathroom, placed it on the tile floor, stepped on: 255.4 pounds! Stepped off, stripped to my natural state, as God made me, stepped on again: 255.3 pounds!

More good news: that pair of Size 20 pants that I couldn't zip up when I started on this journey...I can wear them now, and they are just the tiniest bit loose in the waist..not so loose that I need to drop to a Size 18 (yet), but I think I'm getting there!

..that I could capture just how juicy this chicken turned out!! Tender & juicy on the inside, nicely crispy on the outside..Absolutely magnificent (if I do say so myself!!) emoticon LOL



So I made the mashed potato flake chicken instead of the Hawaiian Chicken (thought I had one more can of pineapple in my cabinets, but all I saw was, like, 4 cans of fruit cocktail). I also did something different with the potato flakes, so I'm not sure how it'll affect the nutritional info. To the best of my guesstimation, here's what I did:

1 envelope of mashed potato flakes
1/4 C Panko bread crumbs
1/2 T garlic powder, divided
1/2 T onion powder, divided
1/2 T crushed red pepper flakes
1 t ground white pepper
2 T Greek yogurt
1/4 C Egg Beaters egg whites
2 boneless & skinless chicken breasts (or thighs)

Use a small food processor to combine the first six ingredients & pulse until coarse.

In mixing bowl, combine the yogurt & the egg whites with the other part of the divided spices. Beat with a fork or whisk until creamy & smooth (had I thought about it, I would've done this last nite & let the chicken marinate in the fridge overnite). But since I didn't do that, I placed the chicken in the mixture, tossed until it was well coated, and put it in the fridge for 30 mins.

Place the dry mixture in a shallow pan. Remove the chicken from the yogurt mixture & dredge it in the dry mixture. (At this point, I still had quite a bit of the yogurt mixture, so I double-dipped one of the chicken pieces, dipping it back in the yogurt mixture, then back in the dry again).

Spray some PAM (or similar nonstick spray) on a piece of foil & place on a baking dish, Bake @ 400 degrees for 15 mins. Reduce heat to 375 degrees & continue baking for another 20 mins. Remove from oven, fold the foil over the chicken, and return to the oven for five mins. Remove & let the chicken rest for a few minutes before serving.

Makes 2 servings (in my case, enough for lunch the next day!)

    Served with 1/2 C of Chicken-Broccoli Rice*A*Roni
1/2 C green beans
1/2 C fresh spinach w/1 T lemon juice + a couple of spritzes of BRAGG's Liquid Aminos + a pinch of Dash of Flax sprinkled on top

(Oh..and 16 oz ice-cold water)

Baby Steps...right???

Well, I've been an SP newbie for almost a month now and, while my eating still yo-yos, for the most part I'm sticking to healthier consumption.

I finally broke down & bought a scale last week..one of those nifty weight-saving, BMI-tracking, water percentage thingies. I weighed myself as soon as I got home with it: 271.6 -- ugh emoticon

So then I went & made myself my favorite spinach salad:
2 parts spinach to 1 part lettuce
1/4 c of whole kernel corn
2 mushrooms, sliced
1/2 cucumber, sliced
a handful of my favorite frozen recipe starter seasoning (I think that's what it's called: it's diced onion, bell pepper, & celery)
Tossed it all together with a Braggs vinaigrette dressing.

Since I'm not the most 'regular' person in the world, before going to bed, I took two laxative tablets 'cuz I knew it would do its thing first thing the following morning! And of course..it did! Afterwards, I got on my shiny new scale again: 268.8 pounds! Call it a fluke...or maybe I was just plumb FOS! - LOL

Now, don't fuss...I know it's a no-no to be a scale-watcher..that was last weekend, and I haven't gotten on the scale again since. I figure I'll do it again at the two-week mark!

So today...I bought myself a pair of ankle/wrist weights. Hopefully, they won't join the exercise mats I bought in February..packed away in a box awaiting my move from this apartment to another one!

I'm going to add some pictures ... eventually...my family & friends know: I'm the one behind the camera..rarely in front of it, but I do have a few shots that I can share. I don't think I have anything truly recent but..we'll see...

Enough for now...I could write more, but I'm still in the middle of the whole thing I like to call the cycle of purge'n'pack, so I'm going to get back to it before I lose my motivation! emoticon

    Congratulations on your first blog post on SP! A great natural alternative to laxatives is milled flax seed (you can find it at Walmart in with the flours). I mix a tablespoon or two into regular yogurt. Greek yogurt tends to be too dry to mix well with flax seed. Isn't SparkPeople great?! emoticon

  Good for you! Baby steps! For me,before sparkpeople I'd try to do everything all at once.I always failed too.Taking baby steps works for me.Good luck!
