Home Made Yogurt

I recently made some yogurt in my crockpot. All you need is 1/2 gallon of milk and a small container of plain yogurt. It is very easy, here's how.
Pour 1/2 gallon milk (I used skim) in your crockpot and cook on low for 2 1/2 hours.
Turn off crockpot and let the milk sit for another 3 hours.
Temper the yogurt with one cup of the heated milk and add it back into the crockpot.
Cover the whole thing with towels or blankets to keep in the heat and allow to sit for 8 to 10 hours.
The end result is runnier than store-bought yogurt but that can be fixed by draining some of the whey off. So far I've made blueberry using some blueberry syrup, 2 TBS to a 1/2 cup yogurt, and I've made vanilla using 3 drops vanilla extract and 1/2 tsp Truvia.
I love the fresh taste and I can't wait to see what other flavors I can come up with.

It is the active cultures in the plain yogurt that you need so I don't think using the Greek yogurt would be a problem.

It should only take a couple of hours of straining to get the right consistency. I left mine overnight and found yogurt cheese. I had to add some of the whey back in.

Also you can save about a cup of your yogurt in the freezer to start your next batch.

I added it to sparkrecipes to find out the calories and it comes out to about 97 calories per serving.

Focusing on Me

So my DH gave me a one month membership to his gym for Christmas. I haven't used it yet because the same old excuses keep popping up. Well last night he and I talked about when to schedule my exercise. We have two children in school and I homeschool the youngest so my day is pretty much booked. My DH said he would get the kids up in the morning and get them ready for school so I can use that time to go to the gym. Normally he sleeps in while I try to herd the cats, er kids through their morning and generally getting stressed. I'm looking forward to tomorrow.

My Year in Review

I recommitted myself to getting healthier at the beginning of this year. Looking back at my progress I don't see much. I haven't lost any weight and I haven't stuck to an exercise routine. What I did accomplish isn't that tangible. I did have times where I was exercising routinely enough to know how good it makes me feel and I did lose a little weight before gaining it back.
What I see for the next year is better progress. I received a one month gym membership from my DH for Christmas which I plan to use as soon as I recover from a fall. I slipped in a spill while Christmas shopping at our local big box store. I messed up my Achilles tendon somehow and I can't stand for very long let alone exercise. So I tried Coach Nicole's Seated Cardio Workout. With some modifications because of my foot, I did get a little exercise today. Here's to a better, stronger year.

  


Took a trip

My dad had to have quadruple bypass surgery in July, on my mother's birthday no less. My DH wanted to send me to see them in August but prices were too high so we decided to wait until October. Then he decides we needed to get married before I went. They live in Arkansas and we live in Hawaii, with the 5 hour time difference that meant that I would get there the day after I left. Before I even got on the first plane there was a problem. They were having to take it out of service for a mechanical problem and it was going to take over an hour to get the replacement one ready to go. So we left Kona airport 2 hours late. Good thing I had a 2 hour layover in L.A. I had to dash to get to my next flight and was almost the last one to board.
Had a great time in Arkansas. I hadn't seen my parents in 4 years, ever since they moved away.
Mom fed me my favorite Southern dishes while I was there. Chicken and Dumplings, fried catfish and turnip greens (Mom and I picked them ourselves), soup beans. Even with all of this heavy Southern food I only gained one pound. emoticon
The trip back went okay until I got to L.A.. The plane to take me the rest of the way home had to be taken out of service (AGAIN?!). They switched us to a different plane so we all had to troop through the airport to a different gate and we left an hour late. I am soooooo happy to be home.
We went to the store today and I got some Ahi Poke. I guess I was missing Hawaiian food. emoticon
