Beans For Lunch!!!

Today I was in a hurry with lunch and made a hasty, but tasty one. At least I liked it.
Yesterday I cooked dried beans so I could have no salt added. Instead I add some onion and garlic. I mixed baby limas and northern white beans. Took a full cup, heated them partway, added salsa and heated a little more, and then topped it with 1/4 C. lowfat cottage cheese. Sounds rather atrange, but I really liked that combo. And it was filling enough to last all afternoon - to 7 PM when we had dinner.

    Ummm..love beans...just made a big crockpot full of bean soup yesterday! And, yes, I like making it from scratch because you have that "salt" control. I'll have to try topping my soup with a little cottage cheese! Really not much different than sour cream on chili, is it?? :)

    Beans are supposed to be very good for you as well. I don't think that the combination sounds strange at all - ... it's fun to experiment sometimes!!!

    I almost always cook up a pot of beans every week so I have some in the fridge when I need them..I wonder how your creation would taste with Greek yogurt instead of cottage cheese?!

    I just combined black beans, kidney beans, corn, and beets with onions for lunch. Yum! Quite filling and less than 200 calories. Just used cans and rinsed to get rid of salt.

Helped break a plateau!

I know, it is only a cyber trip to London, but I will go there any time I can.
It is more than 20 years since I was last there, and this trip is long overdue. Tower of London, Trafalgar Square, Big Ben, all waiting for me to view them once again.
I can usually lose weight on a trip like this so maybe I can get down those 4.9 lbs. to reach my 5% weight loss goal on this Summertime Challenge. I slowed down this week, but did increase my exercise and hope to continue with that pattern.
Go, Care Bears, GO!!!

    A 10-day trip to London was a graduation present from my father during my senior year at Penn State. The Theatre Department organized the trip, which included airfare, hotel with breakfast, and 10 stage theatre tickets. Other than showing up for the plays and a couple of discussion groups, we were free to do whatever we wanted...

It was a GRAND ADVENTURE! I wanted to go so much, but when I brought it up to my father, he couldn't believe what it would cost. He kept questioning, "are you sure?" I sent him proof, and he said, "I HAVE to say yes - let's call it your graduation present." Total cost? $324!

I CAN'T WAIT TO GO BACK!!! emoticon emoticon

Carol's Fruit Smoothie

Just finished my lunch with a delicious and filling smoothie for just under 136 calories. (Who needs one from McDonald's with the added sugar???)
I used 8 oz. Light Vanilla Soy milk, 6 medium sized frozen strawberries and 1/2 a frozen banana in chunks. In a few seconds my blender had it ready to drink. DeLish!!!

SATISFYING THAT SWEET TOOTH - WITH NO SUGAR!!!

Since our summertime challenge includes NO Junk Food this week, I find myself craving something sweet. I realize just how often I do eat some little thing just to cure that sweet tooth. But thanks to recipes on Spark People, I now make the frozen custard with frozen bananas and really like it better than ice cream. I actually feel guilty when eating it even though I know it is just a fruit. We used to run an ice cream stand and made many flavors of rich and creamy ice cream and my comment was, "They can take away all the desserts in the world except for ice cream". And now they can take it as long as I can have my banana frozen custard!!!
It is great for those of us who are lactose intolerant! And a tiny dab of chocolate syrup makes it really complete without adding too many calories.

Corn-on-The Cob with No Butter, Salt or Pepper

Yes, I eat Corn-on-The-Cob with no butter, no salt and no pepper It is really good that way and gives you the true flavor of the delicious corn. I watch DH dress his up so I wonder if he can really taste the corn. Once you get used to eating it plain you will never miss all those extras.

    You are making me hungry! When I was in G'boro with Kristen last week we got some wonderful silver queen corn and you are right - it was good with nothing on it!! She likes to use spray (I Can't Believe It's Not Butter) but you really don't need it. Ah, could we just figure out how to have all these great veggies in December?

    I usually add butter spray and pepper to mine. I'm going to try it plain next time. I now eat my popcorn without butter or salt. Thanks for the suggestion. emoticon
